½ cup butter
3 tablespoons minced garlic
3 tablespoons soy sauce
¼ teaspoon black pepper
1 tablespoon dried parsley
6 boneless chicken thighs, with skin
dried parsley, to taste

Steps:

  • Preheat the oven broiler. Lightly grease a baking pan.
  • In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.
  • Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
  • Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

1 small chicken, quartered
salt
freshly ground black pepper
4 cloves garlic, peeled and crushed
1/4 cup freshly squeezed lemon juice
3 teaspoons fruity olive oil
1 teaspoon chopped parsley

Steps:

  • Season the chicken with salt and pepper.
  • In a shallow dish filled with a mixture of garlic, lemon juice, oil, and parsley, roll the chicken quarters to coat them.
  • Allow to marinate at least 1 hour.
  • Preheat the broiler.
  • Drain the chicken, reserving the marinade.
  • Set the broiling rack about 7 inches from the heat.
  • Place the quarters, skin side down on the broiling rack, and broil 10 minutes, basting often with the cooking juices and a little of the marinade.
  • Turn the quarters over and broil the chicken 10 minutes longer.
  • Turn and brush twice more with remaining oil mixture until both sides are golden brown and crusty.
  • Serve at once.

Steps:

  • For the chicken: Combine the olive oil, garlic and herbs in a very large bowl. Add the chicken and coat with the marinade. Cover and refrigerate 2 hours or overnight. Preheat oven to 400 degrees. Truss the chickens and season to taste with salt and pepper. Brush with the marinade. In a hot skillet, sear the breast sides 3 to 5 minutes until golden. Place in the oven and roast for 10 minutes. Reduce the heat to 350 degrees and continue roasting, basting with the marinade and pan juices, until the chicken is cooked through and browned, about 30 minutes more. Remove from the oven and let rest.
  • For the sauce: In large saute pan, heat the butter and olive oil over high heat until almost smoking and saute the shallot until caramelized, about 3 minutes. Add the wine and reduce until almost dry. Add the stock and the roasted garlic and cook until reduced by half. Sprinkle with salt and pepper. Remove from the heat and strain into a saucepan. Whisk in the butter. Spoon over chicken and drizzle with truffle oil.
  • For the potato puree: Place basil, pine nuts and garlic and oil in a food processor and process until smooth. Add the cheese and salt and pepper to taste. Pass the warm cooked potatoes through a ricer into a large bowl. Add 1/4 cup of the herb puree, milk and butter. Mix until smooth, season with salt and pepper to taste.

  • Combine garlic, vinegar, oregano, parsley, honey and salt in a blender and blend until smooth. With the motor running, slowly add the oil and process until emulsified. Stir in the red chile flakes.
  • Place potatoes in a medium saucepan, cover with cold water and add 1 tablespoon of salt. Bring to a boil over high heat and cook until a paring knife inserted comes out with some resistance. Do not cook the potatoes all the way through because they will continue cooking on the grill. Drain well and when cool enough to handle, slice in half lengthwise.
  • Heat the grill to medium.
  • Brush the chicken and potatoes with oil and season with salt and pepper. Place the chicken on the grill, skin-side down and grill until golden brown and slightly charred, 6 to 7 minutes. Turn the chicken over and continue grilling until just cooked through, 5 to 6 minutes. A few minutes before the chicken has finished cooking, place the potatoes on the grill, cut-side down and cook until lightly golden brown, about 2 minutes. Turn over and continue grilling about a minute longer. Remove the chicken and potatoes to a platter and immediately drizzle with the roasted garlic-oregano vinaigrette. Let rest 5 minutes before serving. Garnish with oregano sprigs and parsley sprigs.

2 to 3 cloves garlic, finely chopped

2 half chickens (3 to 3 1/4 pounds total)

Steps:

  • Position an oven rack about 8 to 10 inches from the broiler and preheat. Grate the lemon zest and combine in a small bowl with the butter, garlic, 1/2 teaspoon salt, and pepper to taste. Mash with a fork to make a smooth paste.
  • With your fingers, gently loosen the skin on the chicken breasts, legs and thighs. Spread the flavored butter under the skin as evenly as possible. Halve the lemons and squeeze 2 halves over the chicken; season with salt and pepper.
  • Place the chicken skin-side up on a broiler pan (or a rack on a baking sheet). Position the halves about 2 inches apart with the thick parts of the legs facing the center. Arrange the remaining 2 lemon halves cut-side down next to the chicken.

8 chicken thighs (bone in, skin removed)
olive oil (for browning)
2 tablespoons dry sherry
1 cup chicken stock (see note)
1 teaspoon fresh thyme
4 roasted garlic, cloves
1 cup milk
8 ounces cream cheese, softened
1/2 cup parmesan cheese, grated
salt (optional)
fresh ground black pepper
1 tablespoon fresh parsley, chopped
1 lb egg noodles, cooked according to package directions

Steps:

  • Preheat oven to 350°F.
  • Squeeze roasted garlic from the papery peels and mash well.
  • Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
  • Reduce heat to medium. Deglaze pan with sherry.
  • Add chicken stock (see note), thyme, and the roasted garlic. Simmer 2 minutes.
  • Add milk. Add cream cheese in small blobs.
  • Bring to simmer, whisking in the cream cheese until smooth.
  • Add salt (if using), pepper, and parsley. Whisk in Parmesan until melted.
  • Pour sauce over chicken pieces and return to oven for about 1/2 hour or until chicken thighs are thoroughly cooked.

Oven-Roasted Chicken, With Roasted Garlic and French Bread image

This recipe is fabulous - perfectly roasted whole chicken, with roasted garlic to squeeze right onto the chicken (if you prefer), and crusty french bread, with squeezed garlic. Too-die-for! If you so choose, you can actually skip eating the roasted garlic (unless you are a true garlic-lover, and can't resist :-). Simply cooking the chicken with the garlic in the pan adds incredible flavor to the chicken!. I also sometimes throw in some quartered red potatoes to the pan, which creates amazing roasted garlic potatoes. If I do this, I always sprinkle the potatoes with salt, pepper, and rosemary, too, and sprinkle with olive oil, both at the start of the cooking time, and just before serving (toss well). Makes for a fabulous complete meal!

1 whole chicken
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon sage
4 heads garlic (in skins)

  • Preheat oven to 400.
  • Wash and dry chicken, and remove giblets.
  • Baste (or rub) whole chicken with olive oil.
  • Mix salt and pepper to taste, and all other spices, in small bowl, and then rub over entire chicken (leave a small amount of spice mixture remaining).
  • Put leftover spice mixture, and 4 indiviudal garlic cloves, inside cavity of chicken.
  • Place chicken in large roasting pan (without rack).
  • Take apart remaining garlic bulbs (leaving skins on) and place garlic cloves all around chicken.
  • Pour chicken broth over all.
  • Cover with foil and bake for 1 hour, then remove cover, and bake for 35 to 40 mins, until chicken is browned.
  • Remove chicken from oven and let cool for a few minutes.
  • Carve chicken, while heating up french bread (if you like your bread warmed).
  • Serve chicken pieces and french bread, with roasted garlic cloves.
  • Squeeze roasted garlic (which will squeeze nicely right out of the skins) onto slices of french bread and/or onto chicken pieces, as you eat it (we love to squeeze garlic right onto our chicken, as well as onto the bread).

1 lemon
3 lb chicken parts
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon minced fresh rosemary
1 teaspoon minced garlic

Steps:

  • Preheat broiler.
  • Remove 4 (3- by 1/2-inch) strips of zest from lemon with a vegetable peeler, avoiding white pith, then cut strips diagonally into thin strips. Halve lemon, then squeeze juice into a small bowl.
  • Put chicken in a large bowl with salt, pepper, and 1 tablespoon lemon juice and toss to coat. Transfer chicken, skin sides down, to rack of a broiler pan and broil 3 to 4 inches from heat, turning over every 5 minutes, 15 minutes total.
  • Remove broiler pan from oven, then transfer chicken to a plate with tongs. Carefully remove rack from broiler pan and add zest, rosemary, garlic, and remaining lemon juice to juices accumulated in bottom of broiler pan.
  • Transfer chicken to pan juices, then toss to coat and arrange chicken skin sides up. Return broiler pan to oven and broil chicken until cooked through, 3 to 5 minutes more.
  • Transfer chicken to a platter and pour any juices from broiler pan over it.

BROILED SOY, GARLIC, CITRUS CHICKEN



Broiled Soy, Garlic, Citrus Chicken image

This is a Kikkoman Soy Sauce recipe. Love the flavor blend of citrus soy & garlic. I like to add 1/2 tsp chili flakes to this recipe. I will adapt this recipe for BBQ and post instructions

2/3 cup soy sauce
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
3 cloves garlic, pressed
4 boneless chicken breasts, skin on

Steps:

  • Combine Soy, Orange juice, Lime juice& garlic in a large zip lock bag.
  • Place chicken breasts in the bag,press out the air, seal, flip to coat all sides of the chicken.
  • Marinate for apprx 20 minutes, turning the bag a few times.
  • Remove chicken from the marinade and discard the marinade.
  • Place chicken, skin side down 5" below broiler for 8 minutes, turn over and continue broiling for apprx 6 minutes longer or until the breasts are fully cooked, time depends on the size of the breasts.
