GLUTEN-FREE OATMEAL CORNBREAD



Gluten-Free Oatmeal Cornbread image

Number Of Ingredients 7

1 1/2 cup cornmeal
1 1/2 cup oat flour (grind oats into a flour)
1 1/2 cup water
1/4 cup pure maple syrup
3 Tbsp. flaxseed meal (or 1 egg)
1 tsp. baking soda
1/2 tsp. salt

Steps:

  • Preheat oven to 400 degrees, and grease a loaf pan.
  • Whisk all ingredients together and pour into loaf pan.
  • Let cornbread dough rest for 5 minutes before putting in the oven. This allows the oats to absorb some liquid.
  • Bake for 20-25 minutes, or until gold brown around the edges and the center feels firm.
  • If you want to make these into muffins, set your oven to 350 degrees and bake for 18-20 minutes.

1-1/2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1-1/2 teaspoons salt
1 teaspoon rubbed sage
1 teaspoon dried thyme
1-1/2 cups yellow cornmeal
1-1/2 cups chopped celery
1 cup chopped onion
1 jar (2 ounces) chopped pimientos, drained
3 large eggs, room temperature, beaten
1-1/2 cups fat-free milk
1/3 cup vegetable oil

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt, sage and thyme. Combine cornmeal, celery, onion and pimientos; add to dry ingredients and mix well. Add eggs, milk and oil; stir just until moistened. Pour into a greased 10- or 11-in. ovenproof skillet. Bake at 400° for 35-45 minutes or until bread tests done. Serve warm.

My husband asked me to make beans when we first got married. He told me how and went to work looking forward to beans for dinner. Well he was very dissapointed. I was used to really thick baked beans...so...I poured out all the juice! This recipe is almost like soup. For those who like thicker beans just cut down on the water, but the beans will be thicker the next day. Ham shanks usually come in a package cut up into 2 or three portions. This is one of those recipes that you can tweak to suit your taste.

2 cups dried pinto beans, rinsed and de-rocked
1 small red onion, quartered
1 -2 portions smoked pork shanks (by Cooks if you can)
2 quarts water
1/4 cup hot sauce
1 teaspoon kosher salt

Steps:

  • Put beans, onions, shank in a 3 quart dutch oven.
  • Add water. More or less to taste.
  • Add salt and hot sauce.
  • Cover and place in a preheated 250 oven for 8 hours.
  • Check after 4 hours and add water if needed.
  • When ready to serve, take out ham shanks and remove bones.
  • Shred meat with 2 forks and add back to beans.
  • Serve with cornbread or homemade biscuits and fried taters.

A simple savory homemade cornbread to use when making old fashioned southern cornbread dressing! #TexasHomesteader

1 Cup Enriched yellow corn meal
1 Cup All-purpose flour
4 teaspoons Baking powder
1/2 teaspoon Salt
1 Cup Milk
1 Egg
1/4 Cup Vegetable oil

Steps:

  • Preheat oven to 425 degrees F. Place 9" cast iron skillet in oven as it is preheating.
  • Mix dry ingredients in a bowl and set aside.
  • In a separate bowl mix milk, egg and oil until blended.
  • Combine wet ingredients with dry ingredients and stir until moistened and fairly smooth (about 1 minute.)
  • Carefully remove hot skillet from preheating oven and grease with butter. Pour batter into skillet and bake 20 to 23 minutes or until toothpick inserted in the center comes out clean.
  • When cornbread is baked, remove from oven and set aside to cool.
  • Cut into 1/2" squares and turn onto large baking sheet and allow to air-dry overnight.

3/4 cup (1 1/2 sticks) tablespoons unsalted butter, melted, plus 4 tablespoons, softened
2 cups dry white wine, such as Sauvignon Blanc
1 fresh whole turkey (about 26 pounds), rinsed and patted dry, giblets and neck removed
Coarse salt and freshly ground pepper
Cornbread Stuffing
Fresh sage or other herbs, for garnish (optional)

Steps:

  • Preheat oven to 425 degrees, with only one rack in the lowest position. Stir together melted butter and wine in a bowl. Fold a very large piece of cheesecloth into quarters so that it is large enough to cover breast and halfway down sides of turkey. Immerse cloth in butter mixture.
  • Place turkey, breast side up, on a rack in a roasting pan. Fold wing tips under. Season inside turkey with salt and pepper. Loosely fill body and neck cavities with stuffing. Tie legs together with kitchen twine. Fold neck flap under; secure with toothpicks. Rub turkey all over with the 4 tablespoons softened butter; season with salt and pepper.
  • Remove cheesecloth from butter mixture, squeezing gently into bowl; reserve butter mixture for brushing. Lay cheesecloth over turkey. Place turkey, legs first, into oven. Roast 30 minutes. Brush cheesecloth and exposed turkey with butter mixture. Reduce temperature to 350 degrees. Roast, brushing with butter mixture every 30 minutes and rotating once, 2 1/2 hours; tent with foil if browning too quickly. Pour 1/2 cup water into pan if juices are very dark brown.
  • Discard cheesecloth; rotate pan. Baste turkey with pan juices. Roast, rotating pan halfway through, until skin is golden brown and an instant-read thermometer inserted into thickest part of thigh (and the stuffing) registers 165 degrees, 1 1/2 to 2 hours more, basting turkey every 30 minutes. Transfer to a platter. Let turkey stand at room temperature 30 minutes, tented with foil, before carving. Garnish with herbs if desired.

Steps:

  • Warm bacon grease in cast iron pan or skillet in oven at 400 degrees.
  • While grease is warming, mix dry ingredients.
  • Add egg and enough milk to make with consistency.
  • Remove pan from oven and drain grease into mixture.
  • Mix well and add back to pan.
  • Cook for approx 30 min or until toothpick comes out of center clean.
  • Bread will be nicely browned.

As soon as it’s melted, add the cornbread batter, and place into a 400° oven. If you want a thicker cornbread, you can use an 8 inch cast iron skillet, for thinner, use a 10 inch. Bake for 20 – 30 minutes depending on the cast iron size. You want a toothpick to come out clean, and the cornbread to be golden brown on top.
