Oil-Free Spinach With Ginger and Garlic image

2 small garlic cloves, minced
1 half-inch piece ginger, peeled and grated, or finely chopped
1 pound spinach, washed well and drained, thick stems removed
Salt
pepper

Steps:

  • Put 1/2 inch water in a large, wide soup pot over high heat. When water boils, add garlic and ginger.
  • Add large handful spinach to the pot. Season lightly with salt and pepper, then twirl with tongs to barely wilt the spinach, about a minute or less. Using tongs, transfer to a serving bowl. Repeat until all the spinach is cooked.

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

1 pound triple washed spinach, stems removed
1/2 teaspoon ground or freshly grated nutmeg

Steps:

  • Heat a skillet over medium heat. Add oil and garlic. Saute garlic in oil 2 or 3 minutes. Add spinach to the pan in stages. Fill the pan with leaves and turn leaves in warm oil until they wilt. Add more spinach to the skillet and repeat the process until all of the spinach is incorporated. Season the wilted spinach with salt and pepper and nutmeg, then serve.

1 tablespoon unsalted butter
1 tablespoon olive oil
2 -4 cloves garlic, minced
3 tablespoons minced fresh ginger
1/3 cup orange juice
1/2 teaspoon coarse salt

Steps:

  • In a large nonstick skillet, pile the spinach and turn the heat to high.
  • Using tongs, gently and continuously toss the spinach over the heat until it's all wilted (they'll turn a darker green), 2 to 3 min.
  • Don't overcook; they should collapse but still have some body.
  • Transfer them to a colander and let any excess liquid drip away.
  • Wipe the skillet clean if necessary.
  • In the same skillet, heat the butter and oil over medium-low heat.
  • When the butter is melted, add the garlic and ginger and sauté until softened and fragrant, about 2 min.
  • Add the orange juice, turn the heat to high, and reduce the liquid to a glazy consistency, no more than 1 min.

3 lbs spinach leaves, large stems removed
4 inches fresh ginger, peeled and coarsely chopped (about 1 cup)
2 tablespoons chili oil
1/2 cup peanut oil
3 tablespoons soy sauce
1 tablespoon plain rice vinegar
1 pinch sugar

Steps:

  • In a large saucepan of boiling water, blanch the spinach for almost 1 minute. Drain and rinse well in cold water. Squeeze dry, coarsely chop and move to a large, shallow dish.
  • In a mini food processor, finely chop the ginger. Move to a small bowl and mix with the chili oil. Let stand for 10 minutes.
  • Heat the peanut oil in a medium skillet. Add the ginger and fry over moderate heat until golden, about 4 minutes. Pour through a fine sieve and drain the ginger on paper towels.
  • In a small bowl, mix the soy sauce with the vinegar and sugar. Drizzle over the spinach, stir lightly and refrigerate for 20 minutes. Sprinkle the ginger over the spinach and serve.
