MEATLOAF RECIPE
Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Steps:
- Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
- Glaze: Mix together in a small bowl. Set aside.
- Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
- Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
- Transfer into loaf tin. Brush generously with glaze, using about 1/2.
- Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
- Bake for a further 30 minutes. Remove from oven.
- Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
- Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

Steps:
- Thoroughly mix ½ cup soup, beef, ½ can onions, egg and Worcestershire in a large bowl.
- Place the mixture in a 13 x 9 x 2-inch baking pan and firmly shape into an 8 x 4-inch loaf.
- Spoon the remaining soup over the meat load.
- Arrange the potatoes around the meat loaf & sprinkle with salt.
- Bake at 400 degrees F for 1 hour or until the meat load is cooked through. Stir the potatoes.
- Sprinkle the remaining onions over the meat load and bake for 3 minutes or until the onions are golden.
- OPTIONAL: Also good with 1 chopped bell pepper & 1 cup chopped mushrooms.

Steps:
- Cut three 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker. Coat strips with cooking spray. , In a large bowl, combine eggs, oats, ketchup and soup mix. Crumble beef over mixture and mix well. Shape into a loaf. Place loaf in the center of the strips. - In a small skillet, saute onion and garlic in oil until tender. Stir in the seasonings. Add broth; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in green onions and thyme. POTATO-CRUSTED MEATLOAF
I have had this recipe for a long time and do not know where I got it other than it was from a magazine.

Steps:
- Preheat the broiler.
- Place the onion, bell peppers and garlic cloves on a baking sheet. Broil 3 inches from heat for 7 minutes or until blackened, turning frequently.
- Transfer to a paper bag, close tightly and let stand 15 minutes or until soft. Scrape off outside skins.
- Chop the onion and garlic; seed and chop the peppers.
- (You will have about 2 cups of vegetables). Preheat oven to 350 and spray a 13x9x3" baking dish with nonstick cooking spray.
- In a large bowl, mix the beef, veal, vegetables, egg, chili sauce, bread crumbs, 1/2 cup of the cheese and the black pepper.
- Mix with your hand until well combined.
- Transfer to the baking dish and pat into a 12x7" loaf, mounding it slightly in the center.
- In a small bowl, with an electric mixer set on med.-high, whip the hot potatoes with the remaining 1 cup of cheese, the chives and the butter until fluffy.
- Pipe or spoon on top and sides of the loaf.
- Bake for 1 hour or until a meat thermometer inserted into the center of the meat loaf registers 145.
- Let stand for 10 minutes before serving.
