2 tablespoons unsalted butter, softened
3 cups plus 2 tablespoons all-purpose flour
2 cups granulated sugar
1 1/2 cups vegetable oil
3 large eggs
1/2 cup orange juice
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 to 2 1/2 cups peeled, cored and finely diced sweet apples
1 cup walnuts, finely chopped
3/4 cup granulated sugar
6 tablespoons (3/4 stick) unsalted butter
1/3 cup buttermilk
1/2 teaspoon baking soda

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Mix together the softened butter with 2 tablespoons of the flour to make a paste. In a 10-inch Bundt pan, paint on the flour and butter paste with a pastry brush until the pan is well coated.
  • Using an electric mixer, beat the sugar, oil and eggs until smooth. Add the orange juice and vanilla extract and mix well. In another bowl, sift together the baking soda, cinnamon, salt and remaining 3 cups flour. Add the flour mixture to the sugar mixture and continue to beat well. Stir in the apples and walnuts.
  • Pour the batter into the pan and bake until a toothpick inserted in the cake comes out clean, about 1 hour 30 minutes. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn the cake out onto a cake plate.
  • For the glaze: Combine the sugar, butter, buttermilk and baking soda in a large saucepan and bring to a boil. Boil the mixture until it thickens slightly and begins to turn a light brown, 5 to 10 minutes. Remove from the heat.
  • Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.

3/4 c. granulated sugar
4 whole granny smith apples, cored, halved and each half cut into six equal pieces
1 stick butter, softened
2/3 c. granulated sugar
1 1/2 tsp. vanilla extract
2 large eggs
1/2 c. sour cream, room temperature
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. ground cinnamon
1 granny smith apple, peeled, cored and chopped finely
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 375 F.
  • For the apple topping: In a 9 to 10-inch skillet, melt the butter over low heat. Add sugar to the pan and stir around, then place apple slices, cut side down, in the pan. Don't pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter, about 10 minutes.
  • In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Mix in the vanilla and eggs. Add the sour cream and mix well.
  • In a bowl, mix the flour, baking powder, salt, and cinnamon. Stir together then gradually add the flour mixture into the creamed butter mixture until just combined. Gently stir in the chopped apple.
  • Remove the skillet from the heat. Spoon the batter over the top, then spread gently so the batter is evenly distributed. Place on a sheet tray lined with foil and bake for 25 -30 minutes, or until cake is golden brown and bubbly. Allow the cake to sit in skillet for five minutes, then invert onto a serving plate. Don't worry if some of the topping isn't perfect---it'll taste perfect!
  • Serve warm with vanilla ice cream.

1 lemon, juiced
1/4 cup sugar
1 teaspoon ground cinnamon
4 large eggs
1/2 cup vegetable oil
1 stick unsalted butter, melted
2 cups sugar
1 tablespoon pure vanilla extract
1/2 cup warm water
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the apples with the lemon juice, sugar, and cinnamon in a mixing bowl and let stand while you make the batter.
  • Lightly whisk the eggs in a large mixing bowl. Add the oil, melted butter, sugar, vanilla and water and whisk until smooth. In a separate mixing bowl combine the flour, salt, and the baking powder. Use a whisk to mix the dry ingredients together. Gradually stir the flour mixture into the wet mixture and stir just until incorporated. Do not overmix.
  • Generously grease and lightly flour a Bundt pan. Pour 1/4 of the batter into the pan, and then arrange a 1/3 of the apples around the top of the batter. Make 2 more layers of apples, smoothing the batter over them after each addition. Top off with the last of the batter and smooth.
  • Bake about 1 hour 10 minutes, until risen, the top is nicely browned, and a sharp knife inserted in the middle of the cake comes out dry. Let cool in the pan until the cake starts to release from the sides before unmolding.

1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed

2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)

Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

5 large egg yolks
2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar

2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

1/3 c. apple butter
1/4 c. unsalted butter, melted

1 tsp. cinnamon
3/4 tsp. kosher salt
1/2 tsp. baking soda
2 small Granny Smith apples, peeled and chopped (about 2 cups chopped)
1/2 c. chopped toasted pecans
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 350°F. Prepare a 9-inch round baking pan with non-stick baking spray and line the bottom of the pan with parchment paper.
  • In a large bowl, whisk together the sugar, eggs, apple butter, melted butter and vanilla until well combined. Add the flour, baking powder, cinnamon, salt and baking soda. Whisk until just combined. Add the apples and pecans and fold in with a rubber spatula to incorporate. Transfer the batter to the prepared pan and spread in an even layer. Bake until a toothpick comes out clean, 28 to 32 minutes.
  • Remove the cake from the oven and cool in the pan for 10 minutes. Remove the cake from the pan, remove and discard the parchment paper and place cake on a wire rack to cool completely, about 1 hour.
  • Dust the cake lightly with powdered sugar just before serving.

  • To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon.
