Easy and fast. Rich but not too rich, using Greek yogurt. Sweet, but not too sweet. Using coconut sugar is a lower-glycemic alternative to sugar. Or so I've read. Deep-dark and satisfying for the choc-o-holics in all of us. A recipe I have worked over and over to perfect. This being the best thus far. Best when cooled down and chips have firmed again. Depends on your likes.

2 cups gluten-free all-purpose baking flour (such as Bob's Red Mill®)
1 cup coconut sugar
⅔ cup cocoa powder
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon xanthan gum
½ teaspoon sea salt
1 cup miniature semisweet chocolate chips
¾ cup buttermilk
1 (6 ounce) container plain fat-free Greek yogurt
¾ cup vegetable oil
2 eggs
2 teaspoons apple cider vinegar
2 teaspoons vanilla extract
1 tablespoon sliced almonds, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Combine flour, sugar, cocoa powder, baking soda, baking powder, xanthan gum, and salt together in a bowl. Fold in chocolate chips.
  • Combine buttermilk, yogurt, oil, eggs, vinegar, and vanilla extract in a separate bowl. Add the flour mixture and mix well. Batter should be thick; scoop into the prepared muffin cups using a tablespoon until about 3/4-full. Sprinkle sliced almonds on top.
  • Bake in the preheated oven until tops spring back when lightly pressed and centers are still moist and gooey, 17 to 20 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

3/4 cup plain Greek yogurt

1 tsp vanilla extract
1 1/2 cups oat flour
1/2 cup brown sugar or coconut sugar
1 teaspoon pumpkin pie spice
1 tsp baking soda
1/2 tsp baking powder
1/2 cup chocolate chips
pinch of sea salt

Steps:

  • Preheat oven to 350 degrees.
  • Add the pumpkin purée, Greek yogurt, eggs, and vanilla extract to a mixing bowl and stir until well combined.
  • Next, add in the brown sugar and stir until well mixed.
  • Add in the oat flour, baking soda, and pumpkin pie spice and stir until well combined. Next, fold in the chocolate chips.
  • Transfer the batter to a greased muffin tin. Fill each muffin well two-thirds of the way full.
  • Bake the muffins at 350 degrees for 15 to 20 minutes or until a toothpick, placed in the center, comes out clean.
  • Serve the muffins warm, straight out of the oven, or enjoy them the next day!

  • In a medium bowl, stir together the flours, baking powder, baking soda, and salt.
  • In another bowl, stir together the yogurt, maple syrup, eggs, butter, and vanilla.
  • Gently stir the yogurt mixture into the flour mixture.
  • Add your desired add-in. (You can also add 1 tablespoon of any add-in to each muffin cup, using 1/4 cup batter, to make a batch with a few different flavors. Or you can bake them plain). Stir gently to combine.
  • Divide batter among the prepared muffin tin, using about 1/4 cup batter in each cup.

1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 180C/350F. Grease a 12-count muffin tin and fill them with muffin liners. Set them aside.
  • In a large mixing bowl, whisk together the bananas, butter, maple syrup, eggs, and vanilla extract, until smooth. Add the dry ingredients and mix until combined. Fold through the walnuts and chocolate chips, if using them.

¾ cup (180mL) nonfat milk, divided
2 tsp vanilla extract
¾ cup (60g) unsweetened cocoa powder

2 tsp baking powder
1 ½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground allspice
¼ tsp salt
½ tbsp (7g) coconut oil or unsalted butter, melted and cooled slightly
2 large egg whites ((room temperature))
¼ cup (60mL) molasses
¼ cup (60mL) pure maple syrup

Steps:

  • Preheat the oven to 350°F, and lightly coat 12 muffin cups with nonstick spray.
  • In a medium bowl, stir together the oat bran, Greek yogurt, ½ cup of milk, and vanilla extract. Let the mixture rest for at least 10 minutes while preparing the remaining ingredients.
  • In a separate bowl, whisk together the cocoa powder, flour, baking powder, cinnamon, nutmeg, allspice, and salt. In a third bowl, whisk together the coconut oil and egg whites. Stir in the molasses and maple syrup. Add the oat bran mixture, stirring until fully incorporated. Alternate between adding the flour mixture and remaining ¼ cup of milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.) Fold in the zucchini and 2 ½ tablespoons of miniature chocolate chips.
  • Evenly divide the batter between the prepared muffin cups, and press the remaining miniature chocolate chips into the tops. Bake at 350°F for 20-23 minutes or until the tops feel firm to the touch. Cool in the muffin cups for 5 minutes before carefully transferring to a wire rack.
