1 pkg. (12 oz.) breakfast pork sausage links
1/4 cup oil, divided
1-1/2 cups chopped onions
1 cup chopped red peppers
1 jalapeño pepper, chopped
4 cups ORE-IDA Diced Hash Brown Potatoes
1/2 cup HEINZ Ketchup Blended with Real Jalapeño
1 tsp. ground cumin
6 eggs, beaten
1 cup KRAFT Shredded Pepper Jack Cheese

Steps:

  • Cook sausage in large nonstick skillet as directed on package. Remove sausage from skillet; drain on paper towels. Remove and discard drippings from skillet.
  • Heat 3 Tbsp. oil in same skillet on medium heat. Add onions and peppers; cook and stir 2 min. Add potatoes; stir. Cover; cook 12 min., stirring occasionally.
  • Cut each sausage link into 4 pieces. Add to potatoes along with the ketchup and cumin; mix well. Cook 2 to 3 min. or until heated through, stirring frequently. Spoon onto serving plate; cover to keep warm. Carefully wipe skillet with paper towels.
  • Heat remaining oil in same skillet. Add eggs; cook 3 to 5 min. or until set, stirring occasionally. Spoon over potato mixture; top with cheese.

6 ounces turkey sausage, low-fat, sliced (kielbasa type)
1 medium potato, peeled and sliced
1/2 onion, chopped
seasoning salt, to taste
black pepper, to taste
paprika (optional)
garlic powder (optional, use less seasoned salt if using garlic salt)

Steps:

  • In a non-stick pan, saute sliced sausage for a minute.
  • Add potatoes and onions.
  • Stir until potatoes start brown and onions become translucent.
  • Keep stirring until potatoes are done.
  • Sprinkle with seasoned salt and pepper. Add other seasonings, if desired.
  • (If using cast iron pan, add a little olive oil at the beginning!).

12 ounces sausage gravy
1 (18 ounce) bag Simply Potatoes Diced Potatoes with Onion
4 eggs
2 cups sharp cheddar cheese

Steps:

  • bake biscuits according to package directions.
  • while that's baking fry potatoes and onions in a couple tablespoons of oil.
  • heat oil to medium high temperature for 6-8 minutes per side until golden brown and onions are clear.
  • warm sausage gravy according to package directions.
  • scramble eggs and remove from heat.
  • add cheese to scrambled eggs.
  • to assemble first place warm biscuit(s) on plate.
  • cover biscuit(s) with plenty of sausage gravy.
  • cover gravy with fried potatoes.
  • finally top with scrambled cheesy eggs.
  • enjoy.

2 (4 ounce) packages of cubed prosciutto
20 ounces Simply Potatoes® Shredded Hash Browns
8 ounces sour cream
1 cup dry pancake mix
8 ounces gruyere cheese, shredded and divided

Steps:

  • Preheat oven to 350 degrees.
  • Heat a non-stick skillet over high heat for one minute, add prosciutto and reduce heat to medium. Sauté for 2 minutes stirring often. Place prosciutto in large bowl and do not wash skillet. Add Simply Potatoes Shredded Hash Browns to the skillet and press down lightly until hash browns are flattened and spread out. Cook for 2 minutes without stirring over medium heat. Turn hash browns, press down again with the spatula and cook for 2 more minutes. Turn off heat and add the Simply Potatoes Shredded Hash Browns to the bowl with the prosciutto. Mix in the sour cream, pancake mix and Gruyere, saving out 1/2 cup of cheese for later. Mix together until well blended and spread evenly into a prepared 9 inch round non-stick cake pan.
  • Bake for 30 minutes, remove and let cool for 5 minutes. Preheat broiler to high heat and place rack in center of the oven. Run a knife around the edge of the potato pan to loosen and turn upside down onto a baking sheet, tap the top of the pan to loosen and carefully remove cake pan. Sprinkle top with the remaining cheese and place in oven for 2 minutes to brown. Watch carefully as not to burn.
  • Remove from oven, using a large spatula carefully place cake onto a serving platter. Slice in triangles to serve.

1/2 lb boneless skinless chicken breast
2 cups Brussels sprouts
1/4 cup fat-free low-sodium chicken broth
20 ounces Simply Potatoes Steakhouse Seasoned Diced Potatoes
1 cup asiago cheese

Steps:

  • Place potatoes in a microwave safe bowl and cook on defrost for 3 minutes, cube chicken in 1 ½ inch cubes, cut the Brussels sprouts in half and finely shred the asiago cheese.
  • In a deep nonstick oven proof pan sprayed with cooking spray on medium heat cook chicken 5 minutes turn chicken pieces and cook additional 3 minutes. Add Brussels sprouts and chicken broth cover and let simmer until Brussels sprout are fork tender add potatoes mix until well incorporated top with cheese.
  • Place skillet in oven turn oven on broil and broil until cheese has melted and has started to turn a golden color.

1 tablespoon unsalted butter
1 red onion
2 ripe avocados
1 (24 ounce) package Simply Potatoes® Shredded Hash Browns
8 ounces uncased mexican chorizo sausage

Steps:

  • Heat a non-stick skillet over medium heat. Add the chorizo and use a spoon to break it up and cook it until it is cooked through (approximately 8-10 minutes).
  • In another skillet, heat butter over medium-high heat. Form hash browns into 6 small, flat rounds and place in hot pan. Cook hash brown cakes until golden and crispy (about 5-6 minutes), flip, and repeat on the other side.
  • While hash brown cakes are cooking, prep fresh ingredients by slicing onion into 1/8 inch rounds and slicing avocado into 1/8 inch thick strips.

1 (15 ounce) can mild enchilada sauce
1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
2 tablespoons vegetable oil
6 large eggs
1 1/2 cups pico de gallo

Steps:

  • Preheat oven to 400 degrees.
  • Pour enchilada sauce into a blender. Remove 1/2 cup of the hash browns from bag and place in blender. Blend until very smooth, to thicken up the enchilada sauce. (The sauce will get warm from the heat of the blender.).
  • Heat a waffle iron to medium high heat. Brush both top and bottom of waffle iron with a little oil. Scoop a scant 1/2 cup of hash browns, and place in waffle iron. Repeat 5 times, making sure the potatoes are in separate areas. (You may need to cook in batches, depending on the size of your waffle iron.) Close the waffle iron and cook until the hash brown discs are browned and cooked through. Repeat until you have 6 hash brown discs.
  • While potatoes are cooking, break the eggs into six muffin tins that have been filled halfway with hot water. (The water is not an ingredient, just a way of cooking the eggs.) Bake for 6 minutes for eggs that have a runny yolk, longer if you desire more cooked yolks.
  • To assemble, place a hot hash brown disc on a serving plate. Top with a generous spoonful of enchilada sauce. Top with a poached egg. Sprinkle with 1.4 cup of pico-de-gallo fresh salsa.

I made this one morning camping, I usually make fried potatoes & eggs for everyone, but now I use Simply Potatoes, So much easier Plus you can use the different brands they sell. my favorite is southwest style. no chopping Onions, red, & green bell peppers up :-) I use hot sausage links cooked and browned ahead of time. usually the day before, I slice them like a 1/2 to 3/4 inch thick and save in fridge for the morning.

1 (20 ounce) package Simply Potatoes Southwest Style Hash Browns
3 hot Italian sausage links, cooked & browned
6 eggs, beaten
1 cup monterey jack pepper cheese, shredded
3 tablespoons olive oil

Steps:

  • In a 12" skillet add sausage links, poke holes in the links with a fork or toothpick to release some grease, add 2 cups of water and cook on medium heat turning often until water is gone, about 20 minutes. continue cooking & turning until the links are browned on all sides, remove from pan & slice the links 3/4" inch and save for next step.
  • In a 12" Skillet or dutch oven, heat 2 Tbls of oil on Medium heat.
  • Add Potatoes and the Pre-cooked, & browned, Hot sausage slices.
  • Mix well, flatten,add salt &pepper and cook on medium heat for about 8 minutes.
  • add 1 tbls of oil drizzled around on top of potatoes and turn with spatula.

20 ounces Simply Potatoes® Shredded Hash Browns
1 lb jimmy dean maple sausage
2 tablespoons flour
3 cups milk, I used whole milk
4 eggs

Steps:

  • Preheat oven to 400°.
  • Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
  • Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
  • Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
  • Add flour and cook, stirring often, for 2 minutes.
  • Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
  • Pour 3/4 cup gravy into each ramekin over the potatoes.
  • Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
  • Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

6 slices thick bacon
2 medium avocados
8 eggs
1/3 cup chunky salsa
2 tablespoons feta or 2 tablespoons cheddar cheese

Steps:

  • Heat Broiler in the oven on high for 5 minute.
  • Place Simply Potatoes on a baking sheet, and spray the top with cooking spray.
  • Place under the broiler for 15-25 minute Watch the hashbrowns they brown fast!
  • While the hashbrowns are cooking, cook the bacon in a non stick pan, remove and drain on paper towels.
  • Add the eggs to the pan that you cooked the bacon inches Scramble. Cook over low heat, and keep them moving, you don't want them to brown.

  • Take hashbrowns out of the oven once they have browned.
  • Place a thick layer of hashbrowns on the bottom of the plate, and top with bacon avocado egg mix.
