STRAWBERRIES IN RED WINE
This is a very simple, but quite wonderful dessert, best made with sweet, ripe, fragrant berries, which complements the tannins of red wine. Let the strawberries macerate in wine for up to 1 hour, but no more or they'll be unpleasantly soggy. (It's fine to prepare and sugar them in advance.)

Steps:
- Place strawberries in a medium bowl. Sprinkle with sugar and lemon juice, and toss to coat.
- Add the wine and let macerate for 45 minutes or up to 1 hour.
- Spoon berries and wine into wide dessert glasses (or low soup plates). Serve at cool room temperature.

Steps:
- Stir together wine, lemon juice, and sugar (to taste) in a bowl. Stir in strawberries and let macerate at room temperature 1 hour, then chill until cold, up to 1 hour but no longer. (Fruit will become too soft if it steeps for more than 2 hours.)
- Serve berries in small bowls with some of their juices.

- Stir brown sugar into creme fraiche.
- Serve strawberries in bowls and pass the creme fraiche to drizzle over the top and sprinkle with mint for garnish.
VINEYARD-STYLE STRAWBERRIES WITH RED WINE AND CASSIS
In wine growing regions, berries- particulary strawberries- are typically combined with the wine from that area, and sometimes a liqueur, and served as a dessert. Here, strawberries are mixed with a fruity red wine and black currant (creme de cassis) or blackberry liqueur (Chambord or creme de mures) and served in the classic way, spooned into wine goblets. If desired top the desserts with shredded peppermint leaves and a spoonful of sour cream or creme fraiche, and serve them with cookies. Delicious, light and refreshing!

- Quarter the berries, and place them in a bowl with the sugar, liqueur, wine, and mint. Mix well. and serve immediately, or refrigerate (for up to 8 hours) until serving time.
- Spoon the berries and marinade into wine goblets for serving. If desired, top each dessert with a dollop of sour cream, and serve it with a cookie.

STRAWBERRIES AND WINE
Wonderful dessert that is light and refreshing. The strawberries marinate in the wine for hours producing a strawberry flavor wine at the bottom of the bowl that everyone will be fighting for. Adjust the amount of sugar depending on the sweetness of the berries you have. Great way to dress up not-too-sweet strawberries! Champagne may be substituted for the wine.

- Place strawberries into a medium bowl. Dust with sugar, then pour the wine over them. Cover and refrigerate for 2 to 3 hours.

- Preheat broiler.
- In 10-inch heavy skillet over moderate heat, melt butter. Add panko and cook, stirring occasionally, until golden brown, 2 to 3 minutes. Add cinnamon, pepper, and sugar, and toss to combine. Transfer to medium bowl and set aside.
- Spoon 2 tablespoons crème fraîche onto center of each ovenproof plate. Arrange 1/2 cup strawberries on top of each circle of crème fraîche. Drizzle each plate with 1 1/2 teaspoons honey and sprinkle with 1 tablespoon panko mixture. Working in batches, place plates on large rimmed baking sheet and broil until the crème fraîche starts to bubble and turn light golden brown, 3 to 4 minutes. Keep warm while broiling other batches and serve immediately.

- Pour wine into a medium-sized non-reactive saucepan and set over medium-high heat. Stir in sugar and lemon juice. Bring mixture to a vigorous simmer; mixture should be bubble energetically, but not so much that it pops and spits; edge heat down slightly as needed. Stirring often, cook mixture until it's thickened slightly and coats the back of a wooden spoon, 10 - 12 minutes. Remove from heat, add thyme sprigs, and set aside to steep for 10 minutes. Note that mixture will be rather thin – it will thicken slightly as it cools.
- Remove thyme sprigs and pour syrup over berries. Cover and chill in the fridge for 2 hours or up to 1 day.
