This recipe was given to me by a knitting exchange partner and I just love it! It's really easy and quite delicious!

4 chicken breasts
1 tablespoon oil
1/3 cup soy sauce
1/3 cup brown sugar
1/2 cup water
1 tablespoon catsup
1/4 cup dry sherry or 1/4 cup apple juice
1/2-3/4 teaspoon crushed red pepper flakes
1 garlic clove (pressed or minced)
1 green onion, sliced
1 tablespoon water
1 tablespoon cornstarch
2 teaspoons toasted sesame seeds (optional)

Steps:

  • Heat oil in large skillet and brown chicken.
  • Mix soy sauce, brown sugar, 1/2 cup water, catsup, sherry (or apple juice), pepper flakes, garlic and onion together.
  • Add mixture to chicken and simmer for 35-45 minutes.
  • Blend cornstarch and 1 tablespoon water and add to sauce to thicken.
  • Garnish with seeds and serve.

4 boneless, skinless chicken breast halves
2 tablespoons Oriental sesame oil
Minced clove garlic
1 teaspoon Chinese 5spice powder
1/2 cup chicken broth mixed with 1 tablespoon Hoisin sauce, and 2 tablespoons soy sauce
2 tablespoons chilled unsalted butter
1 small scallion, thinly sliced
Chopped fresh cilantro
Salt and freshly ground pepper

Steps:

  • Separate the tenderloins from the breasts. Between sheets of plastic wrap, pound the thicker side of the breast to make it more even in thickness. Season the chicken with salt. Heat the sesame oil in a large skillet over moderate heat. Add the chicken breasts and tenderloins. Saute for about 4 to 5 minutes. You'll know to turn the chicken over when the top looks opaque (tenderloins may take only 2 to 3 minutes per side.) Saute on the other side 4 to 5 minutes or until the interior is cooked through.
  • Remove the chicken to a plate. Deglaze the pan with the garlic and Chinese 5-spice powder and add the broth and hoisin mixture. Boil down covered until thick and glossy. Remove the skillet from the heat and whisk in the butter. Spoon the sauce over the chicken and sprinkle the scallions and cilantro on top.

I discovered this from Donna Hay's Classics cookbook and have made it several times. It's just a really simple, delicious dish.

2 teaspoons sesame oil
1 tablespoon shredded ginger
1/4 cup soy sauce
1 tablespoon brown sugar
1/2 cup Chinese wine or 1/2 cup dry sherry
2 star anise
1 cinnamon stick
4 chicken breast fillets

Steps:

  • Place the sesame oil, ginger, soy sauce, sugar, Chinese wine, star anise and cinamon stick in a frying pan over a medium-low heat and bring to a simmer.
  • Add the chicken and cook for 6-7 minutes each side or until cooked through.
  • Serve on plates with the sauce from the pan, with steamed greens and rice.

1 ½ pounds skinless, boneless chicken breasts, cut into bite-size pieces
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons all-purpose flour
2 tablespoons peanut oil
15 cloves garlic, peeled
3 tablespoons Shao-Hsing cooking wine or dry sherry
2 tablespoons light soy sauce
1 ⅓ cups chicken stock

Steps:

  • Season chicken with salt and black pepper. Toss with flour until coated.
  • Heat peanut oil in a wok or large skillet over high heat until it begins to smoke. Add chicken, and stir fry until the pieces are lightly browned on the outside, 3 to 5 minutes. Turn heat to medium and stir in whole garlic cloves; continue stir frying for 5 minutes.
  • Turn heat to low, and add Shao-Hsing wine, soy sauce, and chicken stock. Cover, and simmer for 20 minutes until the chicken is tender. Remove garlic cloves before serving.

This is an original recipe by Jeff Smith, from the cookbook "The Frugal Gourmet". Use for Chicken with Leeks and Cream recipe, as well as other recipes that call for cooked chicken. Have also used method for boneless chicken thighs with great results. In this recipe we do not actually boil the bird at all but rather place it in boiling water and then leave it alone. Please read the instructions carefully. This dish is so simple and so delicious that you will think the instructions are incorrect.

1 roasting chicken (can use whole chicken or chicken breasts or thighs)
boiling water

Steps:

  • Fill a large kettle with water, and bring to a boil. (An 8 quart pot two-thirds filled with water works great for a 2 1/2 - 3 pound bird). When the water boils, place the whole cleaned chicken into it. When the water stops boiling, take the chicken out. Cover the pot, and when the water again boils, place the chicken back in the pot. Cover the pot, and turn off the heat. Leave the chicken in the pot and the pot on the burner. After 1 hour the chicken is done. Remove and cool.
  • You can debone this chicken in very little time. If you are on a low-salt/low-fat diet, be sure to remove the skin. Save the juices that flow from the bird when deboning because this liquid contains a great deal of natural gelatin and will help keep the bird moist if you should decide to store the meat in the refridgerator. The chicken is ready to serve or use.

4 skinless chicken breasts, cut into chunks (or use thighs or drumsticks)
2 tsp cornflour
1 onion, diced
2 tbsp rapeseed oil
1 garlic clove, crushed
2 tsp curry powder
1 tsp turmeric
½ tsp ground ginger
pinch sugar
400ml chicken stock
1 tsp soy sauce
handful frozen peas
rice to serve

Steps:

  • Toss the chicken pieces in the cornflour and season well. Set them aside.
  • Fry the onion in half of the oil in a wok on a low to medium heat, until it softens - about 5-6 minutes - then add the garlic and cook for a minute. Stir in the spices and sugar and cook for another minute, then add the stock and soy sauce, bring to a simmer and cook for 20 minutes. Tip everything into a blender and blitz until smooth.
  • Wipe out the pan and fry the chicken in the remaining oil until it is browned all over. Tip the sauce back into the pan and bring everything to a simmer, stir in the peas and cook for 5 minutes. Add a little water if you need to thin the sauce. Serve with rice.

This is a super easy to make "all in one-pot" dinner. The flavors are wonderful. The recipe calls for a whole chicken but I have also made it with boneless breasts and thighs.

1 (4 lb) whole chickens
1 tablespoon vegetable oil
1/3 cup soy sauce
1/3 cup brown sugar
1/2 cup water
1 tablespoon catsup
1/4 cup dry sherry or 1/4 cup apple juice
1/2 teaspoon crushed red pepper flakes
1 clove garlic (crushed)
1 green onion (sliced diagonally, small pieces)
2 tablespoons cornstarch
1 tablespoon water

Steps:

  • Rinse the chicken and remove"the goodies" from the inside, pat dry with papertowels.
  • Heat the oil in a large dutch oven or soup pan.
  • Brown the chicken on all sides.
  • Mix soy sauce, brown sugar, 1/2 c water, catsup, sherry, red pepper, garlic and green onion together.
  • Pour mixture over chicken.
  • Cover and simmer 45 minutes.
  • Remove the chicken to a serving platter.
  • Dissolve the 2 T of cornstarch in 1 T of water.
  • Add to the sauce in the pan, over low heat, to thicken.
  • Pour sauce over chicken.
  • We serve this with rice and pour the sauce over the rice as well.

Steps:

  • In large skillet heat oil, salt, and garlic;.

  • Add broth; cover and simmer for 5 minutes.
  • Mix cornstarch, sugar and water in a separate bowl; add mixture to skillet and cook until thick, stirring frequently.
  • Add pineapple.
  • Serve over rice.
