OATMEAL REFRIGERATOR COOKIES

These cookies have an old fashioned flavor with the zest of orange. After cookies are cooled and in containers, place a slice of fresh bread in also to keep the cookies soft and fresh.

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 tablespoon grated orange zest
3 tablespoons molasses
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats

Steps:

  • In a large bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the orange zest, molasses and vanilla. Combine the flour, baking soda and salt; stir into the molasses mixture until well blended. Mix in oats.
  • Divide the dough into halves, and shape into long logs about 2 inches in diameter. Wrap in waxed paper, and refrigerate for at least 8 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Slice chilled dough into rounds about 1/4 inch thick. Place 2 inches apart onto ungreased cookie sheets.
  • Bake for 11 to 13 minutes in the preheated oven, until the bottoms are lightly browned. Cool on the baking pan for a minute before removing to wire racks to cool completely.

I love oatmeal!! It is soooo good for you and is very adaptable. The kids love these cookies and the best part is you can make them ahead to freeze and then bake at a moments notice.

3/4 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup raisins
3/4 cup Reese's pieces or 3/4 cup M&M'

Steps:

  • In a mixing bowl, cream butter and sugars.
  • Beat in eggs and vanilla.
  • Combine the oats, flour, baking soda, and salt in a large; gradually add to creamed mixture.
  • Stir in raisins and candy.
  • Drop by tablespoonfuls onto ungreased baking sheets.
  • Cover and freeze until firm.
  • Transfer frozen balls into a freezer bag.
  • To cook frozen cookies:.
  • Place balls 2 inched apart on greased bakind sheets. Bake at 350 for 18-22 minutes or until golden. Remove to wire racks to cool.
  • Cookie dough can be frozen for up to 3 months.

These oatmeal cookies are very moist with a good flavor. Add a cup of raisins or nuts if you desire.

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 1/2 cups sifted flour
1 teaspoon baking soda
1 1/2 teaspoons salt
1 cup shortening
1 cup sugar
1 cup brown sugar, firmly packed
2 eggs, well beaten
1 teaspoon vanilla
3 cups quick-cooking rolled oats

Steps:

  • Sift together flour, soda, and salt.
  • Cream shortening; add sugars gradually; beat until light; add eggs and vanilla.
  • Blend together dry ingredients and shortening mixture.
  • Add oats.
  • Sharpe dought into rolls 2 inches in diameter. Wrap tightly in waxed paper and chill thoroughly.
  • May be frozen at this point.
  • Cut into 1/8 inch slices; bake 1 1/2 inch apart on ungreased baking sheet in hot oven (400 degrees) 6-8 minutes.
  • Cool on racks.
