CINNAMON CHIP CREAM CHEESE BREAD
This bread if fantastic. I couldn't find the cinnamon chips in the store for the past month, so was going to order some online. Low and behold last night they had them at Walmart..needless to say I stocked up, because we love this bread. I found this recipe on Making memories with your kids. Enjoy..your house will smell...

- 1. Make the cream cheese filling first. Beat all of the ingredients until smooth. Set aside.
- 2. Make the glaze. Mix all ingredients and set aside.
- 3. Preheat oven to 350 degree F. Grease and flour a loaf pan.
- 4. In a large bowl, cream the butter and sugar together until light and fluffy. Add the vanilla and mix. Add the egg yolks (the whites will be used later so save them!) and mix well. Whisk flour, salt and baking powder together. Alternate adding the flour mixture and the milk. Mix after each addition.
- 5. In another bowl, beat the egg whites until soft peaks form. Add the 1/4 cup sugar, 1 Tbsp. at a time, until egg whites are stiff.
- 6. Fold the egg whites into the batter mixture. All but about 1/2 cup of the cinnamon chips. Stir.
- 7. Add the 1/2 cup of cinnamon chips to the cream cheese mixture (if you want.) Pour half of the batter into a greased and floured loaf pan. Top with the cream cheese layer and spread to make it even. Add the rest of the batter and spread it out.
- 8. Pour the glaze over the uncooked batter. Bake for 55 - 60 minutes or until pick in the center comes out clean.
CINNAMON CHOCOLATE CHIP BANANA BREAD
A delicious adaption of traditional banana bread, decided to make it for my mom for mother's day, first time ever making it, and everyone loved it. Best bananas to use to this recipe is right before you would normally throw them away, when the skins are turning black.

- Peel the bananas, cutting out any of the bruised or brown spots on the banana themselves. Place them in a large bowl. Take a potato masher and mash the bananas until very well mushed. Take both sugars and add to the bowl. Stir the mixture to coat the mushed bananas really well with the sugar. Place in the refrigerator for 20 minutes.
- Preheat the oven to 350°F Add the applesauce and eggs to the banana sugar mixture and beat well. Add the remaining ingredients and mix well. I use an 8x8 glass dish for this recipe your welcome to use the traditional 9x5 loaf pan. Grease the pan or dish you decide to use with Olive Oil spray.
- Pour in the mixture and bake for about 35-40 mins and check with a toothpick to see if it is ready. If it is not due to different ovens, place back in the oven for 5 minute increments until done. Cool it for about 15 minutes and its ready to enjoy!

- In a medium bowl, mix the cinnamon and sugar until well combined. Set aside.
- Cut the tortillas into 6 triangle shapes each. You can use scissors, a knife, or even a pizza cutter.
- In a pan over high heat, pour in the oil. Once hot, place just enough sliced tortillas in the pan.
- Cook the chips until slightly golden then drain onto a strainer lined with paper towels.
- Sprinkle the tortilla chips immediately with the cinnamon-sugar mixture. Serve with honey and enjoy!

COPY CAT GREAT HARVEST CINNAMON BURST BREAD
A copycat recipe for Cinnamon Burst Bread. The light texture of the bread is wonderful. Cinnamon chips are hard to find, and the ones that I have found so far (Hershey's) do not duplicate the taste of the ones in the genuine GH bread. I found this recipe on a site that is now defunct so I am posting it here to share and for safe keeping.

- Combine 4 cups flour, yeast and sugar in a large mixing bowl.
- Add water, eggs and oil, beat well until it has the consistencey of cake batter.
- Stir in salt, 7 more cups of flour. to bring the dough to a smooth, "bread dough" consistency.
- Knead in stand mixer with dough hook or by hand for 10 minutes.
- Add up to 1 more cup of flour if needed.
- Fold in cinnamon chips gently to avoid melting. *Alternately you could roll the divided dough into a rectangle and press the chips into the dough. Roll the dough up from the short side and tuck the ends under before placing in a greased loaf pan.
- Place dough in greased bowl, cover and let rise for one hour, or until doubled.
- Punch dough down and shape dough into four loaves.
- Allow to rise for another hour, or until doubled.
- Bake at 375 for about 30 minutes .

- Place flour, milk, butter, honey, egg, potato flakes, yeast, milk, salt, vanilla extract, cinnamon, and baking powder in a bread machine in the order listed by the manufacturer. Run Dough cycle. Remove dough from the machine after the cycle is done, about 1 hour 45 minutes.
- Refrigerate dough until cool, about 1 hour.
- Transfer dough to a bowl of a stand mixer with a paddle attachment; mix in cinnamon chips using the dough hook.
- Place dough in a round pie plate; let rise until about doubled in volume, 1 to 2 hours.
- Preheat oven to 375 degrees F (190 degrees C). Cover dough loosely with a tent of aluminum foil.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads 175 degrees F (80 degrees C), 40 to 50 minutes.

CINNAMON CHOCOLATE CHIP BREAD
Who knew cinnamon and chocolate would pair together so fabulously? I made a loaf, but feel free to make into muffins, if desired. The cinnamon I use is from Savory Spice Shop® and is not like the cinnamon from most retailers. If you're using cinnamon from a regular grocer, use a drop or two of essential cinnamon oil in addition to your cinnamon.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
- Combine flour, sugar, milk, chocolate chips, butter, egg, baking powder, vanilla bean paste, cinnamon, and salt in the bowl of a stand mixer fitted with the paddle attachment. CINNAMON CHOCOLATE CHIP BANANA BREAD

- In a small bowl mix the sugar and cinnamon together.
- Preheat oven to 350°F. Spray a 9X5-inch loaf pan with non-stick baking spray. Line the bottom and 2 sides with parchment paper. Spray again. Sprinkle the cinnamon sugar in the pan. Shake the pan until it is coated. Pour the excess of cinnamon sugar into a bowl to use on top.
- In a medium sized bowl, sift together the flour, baking soda, salt, and cinnamon. Set aside. Mash bananas on a plate. Use a fork or a potato masher to mash them. Melt the butter in the microwave, let it cool to room temperature before using.
- In a separate large bowl, mix the melted butter, brown sugar, sour cream, mashed bananas, vanilla, and eggs. Use a whisk to mix together.
- Add the dry ingredients into the wet. Whisk until just combined. Pour in the mini chocolate chips and mix until combined.
- Pour the batter into the pan. Top with the extra cinnamon sugar and extra mini chocolate chips.
- Bake for 50-60 minutes until a toothpick inserted comes out clean.
- Let it sit for 10 minutes in the hot pan. Then, transfer the loaf to a cooling rack. Let it cool completely before cutting into it.
