1 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups quick-cooking oats
1 cup raisins
1 cup coarsely chopped fresh or frozen cranberries
1 tablespoon grated orange zest
1 package (10 to 12 ounces) white baking chips

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture. Stir in the oats, raisins, cranberries and orange zest. Stir in baking chips. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° until the edges are lightly browned, 10-12 minutes. Cool on wire racks.

3/4 cup sugar
1/4 cup brown sugar, packed
1/2 cup butter, softened
1 large egg
1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

3/4 cup all-purpose flour
1 1/2 cups quaker quick-cooking oats (not instant)
1/2 cup chopped walnuts
3/4 cup dried cranberries (Craisins)

Steps:

  • Preheat Oven to 375°F.
  • In a large bowl with an electric mixer combine, sugar, brown sugar and butter and mix well.
  • Add in egg and vanilla and mix until combined.
  • Add in cinnamon, baking soda, salt and flour and mix well.
  • Fold in by hand the oatmeal, walnuts, and dried cranberries making sure that all ingredients are uniformly distributed.
  • Roll dough into 1-inch balls and place 3-inches apart onto a greased cookie sheet and bake for 10-12 minutes, just until the edges are lightly golden.
  • Remove from oven and let cool for 2-3 minutes on the cookie sheet.

For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

3/4 cup dark brown sugar

1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon Kosher salt
3 cups old-fashioned oats
1 cup of (organic) raisins

Steps:

  • Note: All the ingredients, including the eggs, should be at room temperature before starting this recipe. Preheat oven to 350 degrees Fahrenheit. In a large mixing bowl, beat the softened butter, brown sugar, granulated sugar, on medium speed until creamy.
  • In a small mixing bowl, combine flour, baking soda, cinnamon and salt. Mix well.
  • Add combined dry ingredients incrementally to creamed butter mixture, mix well.

2 cups all-purpose flour
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon pure vanilla extract
3 tablespoons milk
2 large eggs
1/2 lb unsalted butter
1 cup packed light-brown sugar
1/2 cup granulated sugar
3 cups old fashioned oats
1 cup dried cranberries

Steps:

  • 1. In a bowl, whisk together flour, salt, cinnamon, baking powder, and baking soda.
  • 2. In a small bowl, whisk together the eggs, milk and vanilla.
  • 3. In the bowl of a mixer, using a paddle attachment, combine the room temperature butter with the sugars. Beat on medium speed until mixture is light and fluffy.
  • 4. Set the mixer to low speed, and gradually add egg mixture to the sugar mixture- beat well.
  • 5. Add flour mixture- beat just until combined.
  • 6. Remove bowl. Stir in the oats and cranberries.
  • 7. Cover and put dough in the refrigerator until firm, at least 2-3 hours. (Can be left longer.).
  • 8. Preheat oven to 350 degrees. Line a few baking sheets with parchment paper. If you only have one baking sheet, place extra dough back in refrigerator between bakings.
  • 9. Shape pieces of dough into 2-tablespoon balls and place 3 inches apart on sheets.
  • 10. Press with the bottom of a glass to flatten dough into 2-inch-diameter.
  • 11. Bake until golden but still soft in center, 16 to 18 minutes, turning sheets halfway through for even baking.
  • 12. Remove from oven; transfer with parchment to a wire rack to cool. Store in airtight container at room temperature for up to 1 week.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, room temperature
1/4 cup vegetable shortening, room temperature
1 cup sugar
1 cup packed dark brown sugar
1/4 cup honey
2 large eggs
1 tablespoon vanilla extract
3 cups old fashioned oats
1 cup raisins
1 cup chopped pitted dates
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°F.
  • Line 2 baking sheets with parchment paper and spray with nonstick spray.
  • Mix first 5 ingredients in medium bowl.
  • Using electric mixer, cream butter, shortening, and both sugars in large bowl until fluffy.
  • Add honey, eggs, and vanilla, then gradually beat in flour mixture. Stir in oats, raisins, dates, and walnuts.
  • Drop batter by tablespoonfuls onto prepared sheets, spacing mounds 2 inches apart. Flatten cookies slightly with the bottom of a buttered glass.
  • Bake cookies 10-12 minutes at 350F or until until golden brown.
  • Cool completely on sheets.
  • When cool, store in airtight containers.

1 cup butter
1 ½ cups white sugar
3 large eggs
2 cups rolled oats
½ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the flour, baking soda, salt, and cinnamon together in a large bowl.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in the flour mixture until just incorporated. Fold in the oats and raisins; mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto ungreased baking sheets.
