1 1/2 cups all-purpose flour
1 cup quick-cooking oats
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/2 teaspoon ground cinnamon
3/4 cup sugar
2 large eggs
1 stick unsalted butter, melted and cooled
1/2 cup whole milk
1 Macintosh apple, peeled and cut into 1/4-inch dice (1 1/4 cups)
Crumb Topping for Muffins(optional)

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, oats, baking powder, salt, and cinnamon. In a separate bowl, whisk together sugar, eggs, butter, and milk. Stir wet ingredients into dry ingredients, then stir in apple.
  • Divide batter evenly between muffin cups, adding a scant 1/4 cup to each. Sprinkle with crumb topping if desired. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

Steps:

  • Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with nonstick cooking spray.
  • Whisk eggs, mashed banana, brown sugar, and vanilla until smooth. Stir in 2 teaspoons cinnamon, salt, and baking powder. Stir in oats and milk. Spread in prepared pan.
  • Stir 1 tablespoon granulated sugar and remaining 1/2 teaspoon cinnamon. Sprinkle over unbaked oatmeal. Bake for 28-34 minutes until oatmeal is browned and not jiggly in the center. Cool slightly before serving. Serve with syrup and/or fruit or vanilla yogurt.

1 cup milk (I used whole milk)
1/3 cup light oil (like avocado, vegetable, or melted coconut)
1 cup light brown sugar, packed
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F. and grease 14 to 18 muffin cups well. (I grease a whole set of 12 on one pan and then grease the middle 6 on a second pan. This recipes makes 14 to 18 muffins depending on size OR you can do 12 regular sized muffins and about 24 mini muffins.)
  • In a medium bowl, add the oatmeal and the milk, stir to combine, and set aside.
  • In a second medium bowl, add the oil and brown sugar, and mix to combine until the sugar looks smooth, about 1 minute.
  • Add the eggs and mix well to combine.
  • Add the flour, baking powder, baking soda, ground cinnamon, cloves, and salt to the egg mixture, and fold to combine.
  • Add the oat and milk mixture to the flour and egg mixture, and fold until just combined, careful to not over-stir.
  • Place the batter into the prepared pans, filling the cups 1/2 full.
  • Bake for 20 to 25 minutes or until the centers are cooked through and nothing comes out on a toothpick when you insert it into the center. (Mini muffins will bake in 14 to 16 minutes.)
  • Remove from the oven and allow to cool for 10 minutes before removing the muffins from the pan to finish cooling on a wire rack (if you leave them in the muffin tin they sweat and the bottoms get soggy).
  • Enjoy warm or at room temperature.

  • In a large bowl, combine flour, sugar, baking powder, cinnamon and salt.
  • In a separate bowl, whisk milk, oil, egg and vanilla until combined.
  • Add milk mixture to flour mixture, stirring until just moistened. Gently fold in oats and raisins.
  • Divide mixture evenly among prepared muffin cups.
  • Prepare the topping, but combining brown sugar, flour, cinnamon and oil until combined. Sprinkle over the tops of the muffin batter.

¼ teaspoon ground nutmeg
1 large egg (beaten)
1 cup buttermilk
1 teaspoon vanilla extract
½ cup mild olive oil (not extra virgin)
1 cup juicy raisins or sultanas

Steps:

  • Preheat the oven to 375°F (190°C or 170° for a fan oven).
  • Line a 12 cup muffin pan with paper baking cups.
  • In a large bowl, mix together the flour, oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  • In a medium bowl, mix together the egg, buttermilk, vanilla and oil.
  • Pour the wet ingredients into the dry ingredients and stir just until mixed.
  • Gently stir in the raisins or sultanas.
  • Scoop the batter into muffin cups - I use a quick release ice cream scoop or a ⅓ cup measure to do this.
  • Bake for 15 to 20 minutes or until a skewer inserted into the centre of a muffin comes out clean.
  • Cool in the tray for 5 minutes before transferring to a wire rack.
  • Muffins taste best slightly warm but they reheat well the next day.

Steps:

  • Combine oats and buttermilk or sour milk in a bowl, mix and let stand 1 hour.
  • Sift together flour, baking soda, baking powder and salt.
  • Cream together butter and sugar with an electric mixer.
  • Add the egg and beat until light and fluffy.
  • Add to the flour mix and stir.
  • Add the oat and sour milk mix and stir until just combined.
  • Fill a greased muffin tin (mine is for 12 small muffins, 2 and 3/4 inches in diameter in the widest part).
  • Top with a little cinnamon sugar if desired.
  • Bake at 400o Farenheit for 20 minutes.
  • The muffins are ready when a stick inside them comes out clean.

These soft healthy oatmeal muffins make a perfect easy breakfast or snack!

Number Of Ingredients 10

1 cup quick oats
1 1/3 cup milk of choice
1 tbsp white or cider vinegar
1/4 cup oil or nut butter, (or applesauce or mashed banana for fat-free)
1 tbsp baking powder
1/2 cup sugar, unrefined if desired
1 cup white, oat, or spelt flour
1/2 tsp each: baking soda and salt
optional 3/4 cup chocolate chips
optional 1/2 tsp cinnamon

Steps:

  • Whisk first 4 ingredients in a bowl. Let sit 10 minutes (important). Preheat oven to 350 F. Add all remaining ingredients, stir to form a batter, and portion into a lined muffin tin. Bake 20 minutes or until a toothpick inserted into a muffin comes out mostly clean. Let cool completely, as they are delicate when they first come out of the oven. I loosely cover leftovers and store in the fridge, or they can also be frozen. (If you have any issues with the muffins sticking to the liners, just wait a day and even the applesauce version peels away easily.) View Nutrition Facts

One of the most popular spices on earth, Cinnamon make a very regular appearance here around the Holidays and for good reason. It's warming, festive and these healthy cinnamon muffins are just the thing for on the go breakfasts, lunchboxes, after school snacks or with a simple cup of tea. Enjoy :)

Cinnamon Muffins
1 Cup Oatmeal (Processed into a flour)
½ Cup Oatmeal (Whole oats )
1/3 Cup Butter (Melted )
2 Medium Eggs (Whisked )
½ Cup Maple syrup
1 tsp Baking powder
2 tbs Cinnamon (Ground )
Cinnamon Sugar
1 tbs Coconut sugar
1 tsp Cinnamon (Ground )

Steps:

  • Heat your oven to 190°
  • Line a muffin tin with muffin paper or grease the tin
  • In a food processor whizz 1 cup of oatmeal into a flour
  • In a large bowl add the eggs, maple syrup and melted butter and using beaters mix the ingredients together until light and fluffy
  • In another bowl, add the oatmeal flour, baking powder and cinnamon and combine. Add the wet mixture and mix well with a wooden spoon. Add the whole oats and fold into the mixture
  • Divide the mixture between the muffin liners
  • Make the coconut sugar. Combine the coconut sugar and cinnamon
  • Sprinkle half the cinnamon sugar on the muffins and bake them for 18 minutes, or until cooked through and a skewer inserted comes out clean
  • When the muffins are cooked, sprinkle the rest of the cinnamon sugar on top while the muffins are still hot and allow them to cool
  • Enjoy!
