MARY'S BAKED BEANS

6 strips thick-cut bacon
Three 16-ounce cans regular pork and beans
1/2 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
2 tablespoons dry mustard
1/2 medium onion, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
  • Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.

My GREAT GREAT Aunt Vera brought her "famous" baked beans to every family function we had for over 40 years. My whole family has adopted her recipe.

3 (16 ounce) cans pork and beans
1 lb bacon
1/2 cup ketchup
1/4 cup yellow mustard
3 tablespoons Worcestershire sauce
1 cup onion, chopped
1 cup brown sugar

Steps:

  • Fry bacon until crisp; cool and crumble.
  • Sauté onion in the bacon drippings.
  • In a large bowl, combine the pork and beans, bacon, ketchup, mustard, Worcestershire sauce, sautéed onion and brown sugar and mix well.
  • Pour into a large casserole dish and bake for 1 hour at 300°F.

A wonderfully rich and flavorful dish that leaves people coming back asking for more! I usually make this for family functions in honor of my Aunt Nancy (it was her recipe) and people always ask for the recipe.

1 pound ground beef
½ pound bacon, cut into bite-sized pieces
2 (28 ounce) cans baked beans, undrained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans, drained
1 medium onion, chopped
½ cup dark brown sugar
½ cup white sugar
½ cup ketchup
2 tablespoons dark molasses
1 ½ teaspoons dry mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl with a slotted spoon. Drain and discard grease.
  • Place bacon in the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Discard all drippings.
  • Add baked beans, kidney beans, butter beans, onion, brown sugar, white sugar, ketchup, molasses, and dry mustard to the beef. Add bacon and mix all ingredients together. Transfer to a 9x13-inch aluminum pan and cover with aluminum foil.
  • Bake in the preheated oven for 50 minutes. Remove foil and bake for 10 more minutes.

1 pound green beans, trimmed
Kosher salt and freshly ground black pepper
1/4 cup hazelnut oil
1/4 cup white wine vinegar
1 teaspoon honey
1 cup chopped and toasted hazelnuts
Lemon zest, for garnish

Steps:

  • Fill a bowl with ice water. Cook the green beans in salted boiling water until tender but still bright green, about 5 minutes, then drain and chill in the ice water to stop the cooking. Remove from the ice water and pat dry.
  • In a large bowl, whisk together the hazelnut oil, vinegar and honey, and season to taste with salt and pepper. Add the green beans to the bowl with the dressing and toss to coat, adding more salt and pepper if needed. Transfer to a serving bowl or platter and top with the toasted nuts and lemon zest.

I don't know where my aunt got this recipe- but all I can say is it's nourishing, quick and awfully good!

3 garlic cloves, minced
1 red onion, chopped
3/4 cup chopped tomato
1 small green peppers or 1 small red pepper, diced
3/4 cup frozen corn kernels
1 large bay leaf
1/4 cup fresh parsley, chopped
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4-1/2 teaspoon black pepper
1 cup water
1 (19 1/2 ounce) can kidney beans, drained and rinsed (2 cups)
1 1/2 cups brown rice
2 2/3 cups water or 2 2/3 cups vegetable broth
1/4 cup green onion, finely chopped (optional)

Steps:

  • Put the rice and 2 2/3 cups water or broth in a pot, and bring to a boil. Reduce heat to low, cover and simmer about 30 minutes.
  • Meanwhile, prepare the other ingredients. After rice has been cooking 15-20 minutes, continue as follows.
  • In a skillet, soften the onion and garlic in a little water.
  • Stir the next 8 ingredients into the skillet (tomato to pepper). Add the water and bring to a boil. Reduce heat and simmer 5 minutes.
  • When no water is left on the rice and it's just beginning to stick, remove from the heat and let it stand covered. This is important, to allow it to dry and fluff up a bit before serving.
  • Slightly mash half of the beans. Stir them all into the skillet. Cook partially covered, stirring often, for 10 minutes. Discard bay leaf.
  • Serve over rice, garnished with green onions if desired.

1 cup butter
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
2 (11 1/2 ounce) bags peanut butter morsels
18 ounces peanut butter
1 (13 ounce) jar marshmallow cream

Steps:

  • Mix in bowl- peanut butter and marshmellow cream and set to side.
  • Mix sugar, butter, milk in saucepan and bring to a boil.
  • Boil for 5 minutes.
  • Remove from heat.
  • Mix everything together. (easier if you use a mixer on stir).
  • Put in cookie sheet. (lined with a wax paper).
  • Let cool and harden.

2 1/4 cups flour
1 teaspoon salt
3/4 cup shortening, plus
2 teaspoons shortening (solid vegetable or lard)
1/3 cup cold water

Steps:

  • Cut shortening into flour with a pastry blender or with two butter knives until it resembles a coarse meal.
  • Add cold water gradually and mix until the flour/shortening comes together to form a ball that holds its shape and is not sticky. If necessary, add more water or flour.
  • Divide ball in two, and roll each separately into a circle large enough to fit your pie pan.
  • For a double crust filled pie, place one shell into pie pan. Add pie filling and top with other crust. Bake as directed on pie filling recipe.
  • For 2 single crust pies, place each shell into 2 pie pans, add filling and bake as directed on pie filling recipe.

3/4 cup brown sugar
1/2 cup chopped onion
1 teaspoon mustard
1/2 cup catsup
1 can kidney bean
2 teaspoons vinegar
1 can pork and beans

Steps:

  • Brown hamburger.
  • Add onion and cook until onions are transparent.
  • Drain.
  • Mix hamburger mixture and everything else together.
  • Pour into baking dish and bake uncovered at 350 for 1 ½ hour.

1 garlic clove, minced
1/2 cup brown sugar

2 (12 ounce) cans kidney beans, drained
2 (12 ounce) cans great northern beans, drained

Steps:

  • Brown ground beef. Set on paper towel lined plate to drain.
  • Brown bacon pieces.
  • Sautee the onion and garlic in bacon drippings.
  • Mix together the brown sugar, ketchup, molasses, and dry mustard in a big aluminum pan.
  • Add the beans, ground beef and bacon pieces.
  • Bake at 350 degrees for 1 hour.
  • You can adjust the amount of ketchup to your taste. I use between 3/4 and 1 cup.

1 teaspoon spicy brown mustard
1 cup packed brown sugar
3/4 cup ketchup, plus

  • Combine all ingredients and place in greased 3 quart baking dish.
