SPEEDY OATMEAL BURGERS

I've served these meatless burgers many times to guest. My guest were always surprised to find out they're meatless. I serve them, like you'd serve meatloaf. They're great with mashed potatoes

1 cup oatmeal
1 teaspoon salt
1 teaspoon sage
1 medium onion, chopped
3 beaten eggs
1 (10 1/2 ounce) can reduced fat cream soup
10 1/2 ounces water

Steps:

  • Mix oatmeal salt, and sage. Add onion and eggs. Drop by large spoonfuls onto a hot non-stick skillet sprayed with cooking spray.
  • Brown on both sides.
  • Mix soup and water, pour over burgers. Cover, simmer on low for 20 minutes.

from Simply Vegan by Debra Wasserman. I suggest that you use a food processor if you have one. If you don't, you can try to blend the ingredients in small batches in your blender. Otherwise, it is really hard to get the oats to stay together. I always use a food processor for this, although the original recipe doesn't call for it or even suggest it.

2/3 cup rolled oats
2/3 cup chopped walnuts (or favorite nut)
1 onion, chopped
3 stalks celery, chopped
2 carrots, grated
1/4 cup whole wheat pastry flour or 1/4 cup unbleached flour
1/4 cup water

Steps:

  • Mix the ingredients together and season to taste.
  • Shape into 6 burgers (more or less depending on your tastes) and fry until brown, turning once.
  • I like to throw the dry ingredients into a food processor for a more uniform texture.
  • I also fry only what I need and keep the rest waiting for me in a tupperware for later.
  • Garlic, salt and pepper are nice seasonings to add.
  • NOTE: If you find that they are mushy inside, make your patties smaller or thinner. If you shape them too large or too thick then they won't cook right.

A chewy veggie burger that is quick and easy to make.

1 cup cooked oatmeal
1 medium raw potato
1 T vegetable broth
½ cup ground walnuts
1 cup bread crumbs
1 tsp garlic powder
1 T rubbed sage
1 tsp dried basil
1 tsp soy flour
1 tsp salt or salt substitute

Steps:

  • Grind the nuts coarsely. Using a food processor or hand grater, shred the potato. Combine these with the remaining ingredients.
  • Mix well until the mixture holds together without falling apart. If the mix seems a little dry, add some more water, a little at a time.
  • Allow the mixture to sit for about 20 minutes in the refrigerator. Form into burgers and fry on a non-stick skillet or griddle. Oatburgers are great with our ketchup-see the section on Dressings and Sauces.

1 cup textured vegetable protein
1/4 cup quick-cooking rolled oats (not instant)
1/2 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried garlic flakes
1/2 teaspoon dried onion flakes
1/4 teaspoon dry mustard
3/4 cup boiling water
2 tablespoons ketchup
2 tablespoons soy sauce
1 tablespoon smooth peanut butter
3/4 cup whole wheat flour
1 tablespoon nutritional yeast flakes (optional)

Steps:

  • Place first eight ingredients in a mixing bowl and toss them together.
  • Pour the hot water into a small mixing bowl and add the ketchup and soy sauce and stir it up. Add the liquid to the textured vegetable protein, stir until well combined and let sit for 5 minutes.
  • Add the peanut butter and mix until it is well incorporated. Then stir in the whole wheat flour (and nutritional yeast, if desired) and mix thoroughly.
  • Shape the mixture into 4 flat, equal patties and keep them on wax paper.
  • Coat a large skillet with a bit of canola oil over medium heat. When hot add patties and reduce heat to medium-low to slowly brown the patties (about 6 to eight minutes each side).

1 tablespoon extra virgin olive oil
1/2 cup onion, finely chopped
1/4 cup grated carrot
1/4 cup celery, finely chopped
1/4 cup grated zucchini or 1/4 cup summer squash
1 cup cooked brown rice
1 1/2 cups quick oats
1/2 teaspoon garlic powder
1/2 teaspoon cumin powder
1/8 teaspoon cayenne powder
1 tablespoon nutritional yeast flakes
1 (12 1/3 ounce) package firm tofu or 1 (12 1/3 ounce) package extra firm tofu
1 teaspoon all-purpose vegetable seasoning (VegeSal is good)
1/2 cup water
2 tablespoons Braggs liquid aminos or 2 tablespoons soy sauce
breadcrumbs, for coating the patties

Steps:

  • In a medium skillet, mix the onion, carrot, celery and zucchini with the 1 tablespoon extra-virgin olive oil. Sauté over medium heat until onion is clear. Remove from heat and add the brown rice, oats and seasonings. Mix well and add the tofu, With a fork, mash the tofu into fine pieces and mix well.
  • In a small bowl, combine all the liquid ingredients and stir to mix. Pour over the rice mixture and stir until moistened and evenly mixed. Shape into 8 evenly-sized patties approximately 3 1/2 to 4 inches in diameter. Dredge each patty with bread crumbs, making sure to coat both sides.
  • Place the patties on a baking sheet that has been sprayed with non-stick cooking spray, then spray the tops of each patty.
  • Bake in a 375 degree oven for 15 minutes. Turn the patties over, spray the tops with the cooking spray and bake another 20 minutes. Remove from the oven and let them sit for 5 minutes.
  • Serve with buns or by themselves with mashed potatoes and gravy. Enjoy!

Makes many, so I tend to make a big batch and freeze. Then I can pull out for a quick, delicious meal in seconds! Oatburgers lend themselves to many variations. Some further suggestions are dill, parsley, celery, green or red peppers in place of the mushrooms. Or simply use a variety of mushrooms for more complex flavor.

1 large onion, diced
1/2 lb fresh mushrooms, diced
1 tablespoon garlic, minced
1/4 cup oil
4 1/2 cups water
1/2 teaspoon dried basil
1/4 cup nutritional yeast
1/2 teaspoon sea salt
1/3 cup tamari
1/4 teaspoon oregano
1/2 teaspoon thyme
5 cups old fashioned oats

Steps:

  • Preheat oven to 350 degrees. Saute the first four ingredients in a covered saucepan. While they are sauteeing, bring to a boil all the other ingredients except the oats.
  • Lower heat, add the sauteed vegetables, and add the oats, one cup at a time, allowing each cupful to sink a little before stirring gently. Cook up to five minutes--until mixture starts to stick to bottom of pot.
  • Set aside to cool. It's much easier to form the patties if the mixture has cooled at least 10-15 minutes.
  • Form into patties, place on oiled cookie sheet, bake at 350 degrees for about 45 minutes, turning once after about 20 minutes.
