OUTRAGEOUS OATMEAL (FLOUR) CHOCOLATE CHIP COOKIES

OUTRAGEOUS Oatmeal (flour) Chocolate Chip Cookies image

In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

Categories     Drop Cookies

Time 43m

Yield 2 dozen, 24 serving(s)

Number Of Ingredients 12

1/2 cup butter
1 cup brown sugar
3 tablespoons granulated sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups ground oatmeal (to flour consistency)
1/4 cup unbleached all-purpose flour
1 1/4 teaspoons instant coffee, finely ground
12 ounces chocolate chips

Steps:

  • Before starting, grind enough oatmeal in the food processor to make the necessary 1 3/4 cups you will need to make these cookies! Or, if you're lucky enough to find Oat Flour, use that!
  • With electric mixer, blend butter with both sugars, egg and vanilla extract.
  • Add dry ingredients to mixture- blend well.
  • Stir in chocolate chips.
  • Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).
  • Bake at 265 degrees for 23 minutes (yes, I know this sounds strange, but trust me, it works!).
  • Enjoy!

MOM'S OAT FLOUR CUT OUT COOKIES

Mom's Oat Flour Cut out Cookies image

Mom's delicious cut out cookie recipe. The oat flour makes this almost savory and oh so special. The buttercream frosting adds a sweetness that makes these to die for! I WOULD RECOMMEND HALVING THE FROSTING RECIPE. IT EASILY MAKES TWICE WHAT YOU NEED. By far THE BEST cut out cookies I've ever had in my life. Never come out as good as mom makes 'em, tho. But still the best hands down.

  • Preheat the oven to 350ºF. In a large bowl, mix together the softened butter and coconut sugar until they look relatively creamy.
  • Add in the egg and vanilla and mix again. Then add in the dry ingredients, including the oat flour, baking soda, and salt. Mix well, until the batter looks thick and uniform. Fold in the chocolate chips.
  • Use a 1-ounce cookie scoop, or heaping tablespoon, to scoop the dough and drop it onto a large baking sheet lined with parchment paper. Arrange the mounds of dough about 2 inches apart from each other, to allow for spreading as they bake. Bake at 350ºF for 8 to 11 minutes, depending on how crispy you like your cookies. (I remove mine at 8 or 9 minutes, for soft and gooey centers.)
  • Let the cookies cool completely on the pan, as they will be fragile when warm. These cookies taste best when they are fresh from the oven, but they will also keep well at room temperature for up to 48 hours in an airtight container. I recommend storing them in the fridge for a longer shelf life, though! They will keep well in an airtight container for up to 5 days. Oat flour tends to dry out over time, so keep them tightly sealed to prevent that.
