- In a large skillet, brown beef in oil on both sides. Transfer to a 1-1/2-qt. slow cooker. In a small bowl, combine the broth, tomato sauce, wine, onion, garlic, parsley, rosemary, salt and pepper; pour over beef. Cover and cook on low until meat is tender, about 8 hours. , Remove beef and keep warm. In a small saucepan, combine cornstarch and water until smooth; stir in cooking juices. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with beef.

CROCK POT ROAST (OAMC)
Got this recipe/tip from a friend, great for the winter time, and it leaves your crock pot clean! Please note that my crockpot is a heavy ceramic one from the 80's. In view of a reviewers comment - I can only ask that you please cook for the full length of time stated in the recipe for your first time, keeping an eye on it of course, and then adjust from there.

Steps:
- For OAMC place all ingredients in the oven bag and into a plastic freezing bag, and freeze.
- When ready to cook, take straight from the freezer - no need to thaw - add salt and pepper and place in prewarmed crock pot in oven roasting bag only.
- Make sure top of oven bag is next to crock pot lid.
- Cook on high for 4 hours, and reduce to low for another 3 -4 hours.
- Remove carefully from crock pot and place into a container that will hold juices of meat.
- Split bag, remove roast, drain juices into a saucepan, and thicken with a little cornflour to suit.
- If cooking a thawed roast, reduce cooking time by 2 hours.
- Please use your own judgement for cooking times, as every one's crock pot is different.

CROCK POT FAT FREE REFRIED BEANS FOR THE FREEZER - OAMC
It's nice to have some refried beans you can pull out of the freezer for a side with your Mexican meals without opening a can with all the extra fat. One side serving is 1/2 cup, which also makes about 4 tacos or burritos These are a great side dish, may also be used for burritos, and can be served as a main dish with plenty of shredded cheddar and salsa on top. Take the time and make these ahead. You won't be sorry!

Steps:
- Drain soaked beans and place in a crock pot along with remaining ingredients except salt. Make sure that the beans are covered with liquid by about 1".
- Stir well, cover and cook on low all day, about 8-10 hours, until tender. Keep an eye on them and make sure they don't get dry.
- Add salt.
- Use a potato masher or heat safe (canning) jar bottom to mash well and stir with a wooden spoon.
- Continue to mash and stir until desired consistency.
- To freeze, put in a freezer Ziploc and flatten into a layer to freeze, or no more than 2" deep in freezer containers.

Steps:
- In a large freezer bag combine all ingredients except pasta shells and grated cheese. Seal the bag, squeeze out as much air as possible.
- In a 1 quart freezer bag add the parmesan cheese, seal the bag.
- I choose to also add the pasta shells into a quart size baggie so I have everything in one place.
- Place the 3 filled bags and the printed recipe into a large freezer bag, seal.
- To cook; thaw.
- Pour veggie mixture into the crock pot. Cover and cook on low for 7-8 hours, or until veggies are tender.
- Add pasta to the mix during the last hour of cooking.
- Serve with grated parm cheese.

- Heat the oil in a skillet on high heat. Cut roast in half to make 2 pieces and season with salt and pepper. Sear the meat in the hot pan, browning well.
- Put the seared roast, onion, mushrooms, carrots, green beans, garlic, and rosemary sprigs in a large ziploc bag. Freeze. Yields 6 servings.
- To cook, transfer the contents of the ziploc bag to your crockpot. Add a splash of red wine. Cook on low for 10-12 hours.
- Using 2 forks, shred the meat into bite-sized pieces. Taste for seasoning, adding kosher salt if necessary. Add the chopped rosemary. Serve over buttered egg noodles. Yields 6 servings
