NUTTY SODA CRACKER CANDY

Nutty Soda Cracker Candy image

This makes a wonderful treat to serve at the holidays or to bring as a gift. I use the non-stick foil for this but a piece of buttered parchment paper lined in the pan will work fine also --- servings is only estimated, really it should be only one serving I could eat the whole thing myself, these are very addicting :)

Provided by Kittencalrecipezazz

Categories     Candy

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 6

1 (10 ounce) package saltine crackers (make certain that you use the salted crackers and do not break)
1 1/2 cups butter (preferably butter, margaine is not as good!)
1 1/2 cups brown sugar, packed
1/2 teaspoon vanilla (optional)
1 (12 ounce) package milk chocolate chips (can use semi-sweet)
1/2 cup toasted pecans, finely chopped (or use almonds)

Steps:

  • Set oven to 400°F.
  • Line a 10 x 15-inch baking sheet with non-stick foil (or use parchment paper).
  • Place each cracker in a single layer in the baking sheet (add on more if needed to cover the sheet).
  • In a medium saucepan bring the butter and brown sugar to a boil over medium heat.
  • When the mixture comes to a FULL boil, boil for 3 minutes (set timer for 3 minutes after mixture reaches a full boil) you may reduce the heat so that the mixture does not boil over the saucepan.
  • Mix in vanilla (if using) then immediately pour the hot mixture over the top of the crackers.
  • Bake in a 400°F oven for 5 minutes.
  • Sprinkle the chocolate chips over the crackers, then spread using a back of a spoon to smooth out and cover.
  • Sprinkle the nuts evenly over the top.
  • Place in the refrigerator for about 3-4 hours or until set.
  • Break into pieces and store in a covered container in the refrigerator.
  • Delicious!

SWEET AND SALTINES

Sweet and Saltines image

Pour chocolate over salty crackers for Trisha Yearwood's Sweet and Saltines recipe from Trisha's Southern Kitchen on Food Network

Provided by Trisha Yearwood

Categories     dessert

Time 35m

Yield 20 servings

Number Of Ingredients 5

Cooking spray
35 to 40 saltine crackers
2 sticks (1 cup) butter
1 cup light brown sugar
8 ounces semisweet chocolate chips (about 1 1/3 cups)

Steps:

  • Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer. In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the jelly-roll pan into the oven and bake for 3 to 5 minutes, or until just bubbly, watching carefully. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. Transfer the pan to the freezer for 15 to 20 minutes, or until completely cold. They will form one big sheet. Break up into pieces. Store in an airtight container.

SODA CRACKER TORTE

Soda Cracker Torte image

This is basically a meringue. You can put fruit on it, or do just about anything else you would do with meringues. I like it for two reasons: It's got an interesting, nutty-crunchy taste and texture, and I love hearing people say after they taste it, "Crackers? You're kidding!"

Provided by Jo Ann L

Categories     Dessert

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 7

16 soda crackers (i.e. the small squares)
1 cup nuts, pieces (pecans or walnuts, whichever you prefer)
3 egg whites
1 teaspoon vinegar
1 cup sugar
1 teaspoon vanilla
1/2 teaspoon baking powder

Steps:

  • Process crackers and nuts in blender until finely ground.
  • Beat egg whites until soft peaks form.
  • Mix in vinegar.
  • Gradually add sugar, beating well after each addition.
  • Add vanilla and baking powder and beat until stiff.
  • Fold in cracker mixture.
  • Put into greased 8-inch square pan and bake at 300° about 25-30 minutes, or until cake tester in center comes out clean.
  • Cool in pan.
  • Cut in pieces to serve.
  • Be careful removing from pan, especially the first piece, as this is pretty crumbly.
