A friend of mentioned how much she loves Swiss cheese balls, so I went on a search to find a recipe. Here's one from several different recipes I found on the web! My friend just had hip surgery done and I'm looking for ways to surprise her and keep her spirits up. I think this will do it, it's good! :)

Number Of Ingredients 10

8 ounces sharp cheddar cheese, shredded (I used a shredded cheddar or mozzarella mix)
8 ounces swiss cheese, shredded
1 (8 ounce) package cream cheese
1/3 cup sour cream
2 teaspoons Worcestershire sauce
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1/3 cup finely chopped nuts (walnuts or pecans are good, I haven't tried toasted but I bet that would be good)
1/4 cup fresh chives, chopped (optional- you may also use chopped fresh parsley, or fresh thyme)

Steps:

  • Place cheddar, Swiss, and cream cheese, sour cream, Worcestershire sauce, paprika, black pepper, and garlic salt in a medium bowl.
  • Place in a food processor and pulse until well blended.
  • In bowl, place nuts and chives, if using. Stir to mix.
  • Shape mixture into a ball, roll in the chopped nuts and chives(if using).
  • Wrap in waxed paper or plastic wrap and refrigerate until serving time.
  • Serve with raw vegetables or crackers.

1/2 cup milk
2 cups shredded sharp cheddar cheese
1/4 cup blue cheese, crumbled
1/4 cup finely minced green onion (white part only)
1 (8 ounce) jar diced pimentos, drained
3/4 cup fisher pecans, divided
10 slices bacon, cooked, drained, finely crumbled and divided
salt and pepper
1/4 cup minced parsley
1 tablespoon poppy seed

Steps:

  • Place cream cheese in mixer bowl. Attach bowl and flat beater to mixer. Turn to speed two and mix 1 minute. Stop and scrape bowl. Turn to speed Two and gradually add milk, mixing until well blended about 1 minute. Stop and scrape bowl. Add cheeses, onions, pimentos, half of the bacon and half the pecans. Turn to speed 4 and beat until well blended, about another minute. Season with salt and pepper to taste. Transfer mixture to a large piece of plastic wrap. Form into a ball and wrap tightly.
  • Repeat with the remaining mixture. Refrigerate (or freeze) at least 2 hours.
  • Combine the remaining bacon and remaining pecans, parsley and poppy seeds in a pie plate. Then, remove the plastic wrap and roll the cheese ball lightly in the bacon/nut mixture until evenly coated. Wrap it back up in a plastic wrap and refrigerate until ready to use.

1 6 1/2 oz. can crushed pineapple, drained
1 1/2 cups walnuts
1/4 cup finely chopped green pepper
1 Tbs. chopped celery

Steps:

  • You should have known that it wasn't going to go well when he arrived to pick you up for dinner on his Segway. As if it wasn't awkward enough having to walk briskly along beside him, craning your neck to make eye contact as he rolled down the sidewalk, there was the added talking point of his jaunty little straw boater. What was he thinking? What were you?
  • Now you are starving because he took you to a raw food restaurant and then announced that everything was, "Real expensive, so don't go crazy." You were totally not prepared for him to whip out the calculator to determine, to the penny, what you ate. Once safely back in your own apartment-alone!-make yourself a nutty cheese ball because that's exactly what that clown was. Mix together cream cheese and pineapple.
  • Take a quick peek out the window to make sure he's gone. What? Is that him, lurking beneath the lamppost? Oh, great, not only was he a lousy date, but now he wants to stalk you? Why is it always the losers that you can't get rid of? Wonder, "Why can't the really good-looking and successful guys be the stalkers?" as you put walnuts in a ziplock bag and crush them with a hammer, pounding on them like he kept pounding his fist on the table as he ranted endlessly about how nobody listens to him at work.
  • Add diced green pepper and celery to the cheese. Roll cheese mixture into a ball. Try not to think about how he kept adjusting his balls during dinner, saying, "Damn, boys, sit still!" And especially don't think about the several times he actually reached down inside his pants and then with the same hand reached over to your plate to fish a piece of zucchini out of your raw lasagna.
  • Roll cheese ball in walnuts and vow not to ever, ever again go out with a man you met at the ninety-nine-cent store.

  • In a blender blend all the ingredients under cheese until smooth. Blend well. Pour into a small skillet over medium-low heat. Add the other add ins like pepper flakes or chili if you like. Cook for 3 to 4 minutes. Stir frequently. The mixture will get lumpy and then smooth out into a custard-ish consistency. You can taste the mixture carefully at this point and adjust salt/tang . So not add too much mustard, the mustard taste gets very strong as the cheese sits. Continue to cook for another 1 to 2 minutes or until the chickpea flour does not taste raw.
  • Grease the containers you plan to use to store the mixture in. Pour mixture in the container/s. Use greased hands to press or even it out. Let it chill for an hour.   • To make the bread crumb coating: Pulse the bread crumbs, nutritional yeast and spices a few times. Place in a bowl.
  • Remove the cheese from the container, place over each other to form a ball. Press slightly to stick. Roll in the bowl to coat or sprinkle the coating on the ball generously on all sides. Or press finely chopped herbs of choice all over. Place on a plate. Serve as is, or warm for a few seconds in the microwave and serve.
