OLD FASHIONED CHICKEN SOUP FROM SCRATCH

Steps:
- Put your chicken into the stock pot and cover with water.
- Add a little salt and bring to a boil. Once it comes to a good rolling boil for a few minutes, lower the heat to between LOW and MEDIUM. Put the lid on and let it cook for about 2 hours on the stove.
- Open the pot and check to see how the chicken is doing. When the meat is more tender and JUST STARTS to come off the chicken it's time for the next step.
- Using tongs or another kitchen tool (I like to use a large roast beef fork) remove the chicken from the pot and set on a cookie sheet or large plate. The only thing that should be left in the pot is the liquid.
- While the chicken cools for a couple minutes so you can work with it easier, skim off some of the fat that's accumulated on the surface of the pot. You don't have to remove it all since it does give the soup a great flavor but if there's a lot you should try to remove some. The amount of fat you have on the top depends on the chicken itself - some are fattier than others.
- Using a fork and knife, remove as much meat as possible from the chicken and drop it into the pot. Do not cut the meat into chunks - let the meat naturally come apart as it continues the cooking process.
- Make sure that you add the leg bones to the pot along with the meat. The bones are extremely important in making the soup taste perfect.
- Once all the meat is removed from the chicken you can discard the unused parts.
- Now add the vegetables, garlic and herbs to the pot.
- Add some water to the pot until the veggies, etc are covered.
- Bring to a rolling boil once more for a couple minutes.
- Lower the heat to about between LOW and MEDIUM, cover and let it cook for 2 more hours.
- Stir the soup a couple times while it cooks.
- At the end of cooking give the soup a taste and add a little more salt and pepper to taste.
- Let it cook for a couple more minutes and remove the leg bones and bay leaves.
- Once done - Enjoy!
UN-CHICKEN NOODLE SOUP (RAW FOODS)

They say about it: "When the potato and dried mushrooms absorb the liquid, they taste just like chicken." I don't know about that, but I thought it was good. I was a little worried about raw potatoes and even asked my husband, "Can you *eat* raw potatoes?" I think he said something like, "well, sure, but who'd want to?" LOL. I did try the end piece of the first one I was grating and managed not to spit it out. I tossed the end of the other one on the compost pile. But the soup was really good! I don't think I've ever had crunchy soup before! (I did use Kikoman. This is a transition! Got to use up what I have, eat the leftovers, complete outstanding Zaar tags, etc.)

NOT-CHICKEN SOUP
This veggie chicken soup is based on a Mollie Katzen recipe. Instead of discarding the vegetable I sometimes mash them, add some eggs, oil and matzo meal and make them into a kugel.

Steps:
- Combine everything in a large pot.
- Bring to a boil, lower heat, and partially cover.
- Cook slowly for 1-2 hours.
- Turn off heat and let soup cool to room temperature.
- Strain out and discard all the vegetables.
- Heat gently just before serving.
- We cook matzoh balls separately and add them to the soup as we serve it.
- Matzoh balls cooked or reheated in the soup will turn a beautiful golden color thanks to the turmeric.
NOT CHICKEN SOUP (RAW FOODS)
The upside of juicing carrots is all that wonderfully healthy juice; the down side is all the pulp that usually goes to waste. It was chilly here today and I wanted a nice warm soup. This is the result of that experiment. My picky husband really liked it. I hope you will too!

Steps:
- Spiralize zucchini and give it a couple of chops to break the 'noodles' into shorter lengths. If you don't have a spiralizer use a vegetable peeler to cut thin strips. Set the zucchinis, carrot pulp, spinach and celery aside.
- In a Vitamix or other blender, load in the walnuts, garlic, poultry seasoning, Aminos, black pepper, onion powder, and water. Spin it until it is a a well combined, creamy looking soup. This is the broth for the soup; taste and adjust the flavorings.
- With the Vitamix or blender running on low, add the celery, carrot pulp, spinach. Spin it only until well combined.
- Put the zucchini 'noodles' in the serving bowls and add the soup. Stir to combine.
- Serve with your favorite crackers and Enjoy!
