- Melt the butter in the saucepan; sautee the onions until soft.
- Stir in the flour.
- Add the chicken broth a little at a time, stirring constantly.
- Bring to a soft boil and add the spinach. Season with nutmeg, and salt and pepper to taste.
- Simmer for a further 5 minutes, stirring frequently.
- Pour into bowls and garnish with egg slices.

- Cook spinach in broth 10 minutes.
- Drain, reserving liquid.
- Melt butter and stir in flour.
- When blended, add broth a little at a time.
- Cover, simmer 5 minutes.
- Add spinach, salt, pepper, nutmeg.
- Mix thoroughly.
- Simmer, covered, 5 minutes.
- Serve with hard-boiled egg slices floating atop.

SPINACH SOUP

- In a large skillet, heat the olive oil over medium heat. Add the spinach and garlic and cook, stirring constantly, until the spinach is wilted, 2 to 3 minutes. Add the mixture to a blender or food processor, pour in 1/4 cup hot water and pulse until pureed. Set aside.
- In a large soup pot, cook the onions in the butter over medium heat until the onions begin to soften. Sprinkle the flour over the top and stir to combine. Cook for about 2 minutes, then pour in the milk, stirring occasionally. Add the salt, cayenne and some black pepper and stir to combine. Cook over medium heat for 5 minutes, stirring constantly. Pour in the pureed spinach, then cook until thickened, another 3 to 5 minutes.
- Check the seasonings, adding more salt, black pepper or cayenne as needed. Serve warm.

- 1. Wash, drain, and coarsely chop the fresh spinach.2. In a medium saucepan, bring the stock with the onion to boil. Stir in the spinach, lower the heat, and cook uncovered for 5 minutes. Remove from heat. Use the same burner for the next step.3. Make a roux to thicken and flavor the soup in a small saucepan, melt the margarine, add the flour, and stir over low heat for a few minutes without browning. Remove from heat and gradually add about 1 cup of the soup liquid, stirring constantly. When smooth, stir the mixture into the soup.4. Return soup to the heat and slowly bring to a boil. Stir and cook until the soup thickens slightly. COLD SPINACH SOUP

- Heat oil in a large skillet and sautee the onion until soft but not brown. Add the spinach and basil and cook for a minute or two, until the greens are wilted. Stir in the chicken stock.
- Puree this mixture in a blender or a food processor. Stir in the half and half and allow to cool to room temperature.
- Stir in the yogurt and season to taste with salt and pepper. Refrigerate until ready to serve.
- Before serving re-season soup if necessary. Decorate by floating basil leaves on the surface.

This is a wonderful cold soup. We have served it at Christmas in place of cranberries. It is a favorite with children. Note: The rice is strained out early in the recipe and only the starch is used.

- Boil rice, water, cinnamon, and salt for 15 minutes. Strain our rice so that 1-1/2 c base is left. (Add more water if necessary.).
- Add apples and sugar. Boil until apples are cooked.
- Add a bit of the mixture to the cornstarch. Then add the cornstarch mixture and the cherries to the rest of the liquid. Bring to a boil.
- Remove from the heat and add the raspberries and mace.

This recipe has been passed down in my family and has its roots in Norway. My grandma would always make this pie for Thanksgiving, and now my dad has taken over that role. Based on the ingredients, it is an interesting pie but the flavor is both unique and delicious. Enjoy!

- Wash spinach thoroughly; drain and chop coarsely. (If you're using frozen spinach, defrost it and drain thoroughly.).
- Place a sieve or strainer over a large bowl; set aside.
- In a large saucepan or soup pot, bring broth to a boil. Add spinach. Simmer 5 minutes, then pour into sieve or strainer, catching the stock in the bowl. Press the spinach with a spoon to remove as much liquid as possible. Set the stock aside. Chop the spinach very fine. (this step not necessary if using frozen spinach).
- Melt the butter in the saucepan or soup pot. Remove pan from heat and stir in the flour. Using a whisk, slowly add the hot broth, mixing well. Return pan to heat and bring broth to a boil, stirring constantly.
- Add spinach, salt, pepper, and nutmeg. Cover pan, reduce heat, and simmer 5 minutes, stirring occasionally.
- Serve soup garnished with slices of hard-boiled egg.
