NORWEGIAN SWEET SOUP (SOT SUPPE)
Use any combination of mix dried fruit (ingredient #5, below). I used a combination of dried apricots, apples, and prunes. The starch in the tapioca helps to thicken this soup. I recommend large pearl tapioca, but a smaller tapioca would also work.

Steps:
- Soak tapioca in water overnight. In the morning, add fruit, sugar, cinnamon, and lemon zest.
- Cook over medium-high heat in a large, heavy-bottomed saucepan until tapioca is clear and the fruit is tender, about 10 minutes. Remove from heat and add lemon juice. Allow to cool. Store in refrigerator for up to 1 week.
NORWEGIAN ROMMEGROT RECIPE
This Norwegian cream pudding is cheap to make and feeds a crowd. Serve warm or chilled with melted butter on top. Once you start cooking the mixture, butter starts to seep out. Remove this from the mixture and save for a topping.

Steps:
- Heat whipping cream in a heavy-bottomed kettle over medium heat, until it comes to a simmer. Whisk in about half of the flour, one tablespoon at a time. Try to whisk out any clumps of flour. As the mixture cooks, some butter will begin to seep out. Pour this butter into a dish and use when you are ready to serve. My batch yielded just over a tablespoon of butter.
- Whisk in the remaining flour. Slowly whisk in the warm milk. Whisk out any remaining lumps of flour. Add sugar. Cook for a few minutes, until pudding is thick.
- Serve warm or chilled, topped with cinnamon, sugar, and melted butter.

- When soup is done, add grape juice. Serve with Rusks.
- May be served cold as dessert. Garnish with whipped cream and chopped nuts.

- Bring water to a steady boil in a large pot.
- Stir in dried fruit, pearl tapioca, cinnamon stick, and star anise, reduce heat to medium, and cook at a low simmer for 25 minutes.
- Stir in fruit juice and heat for 5 minutes.
- Remove cinnamon and star anise.
- Serve hot or cold (chill, covered, in refrigerator for several hours).
- Garnish with little homemade cookie cutouts, if desired.
