Also known as Scandinavian Christmas Spice Cookies. These little cookies are sure to be a big hit in your home or at a party. I had to snap a picture quickly before my family ate them all!

3 eggs
¾ cup white sugar
¾ cup brown sugar
2 teaspoons lemon juice
⅔ cup finely chopped almonds
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground black pepper
½ teaspoon ground allspice
½ teaspoon ground cloves
3 cups all-purpose flour
1 cup confectioners' sugar
2 teaspoons water

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease several baking sheets.
  • Beat the eggs, white sugar, and brown sugar in a bowl until the sugar has dissolved, then beat in lemon juice, almonds, baking powder, cinnamon, ginger, black pepper, allspice, and cloves until thoroughly combined. Mix in flour to make a sticky dough.
  • Turn the dough out onto a well-floured work surface, and knead the dough 1 to 2 minutes, adding more flour if needed, to make a smooth, workable dough. Pinch off pieces of dough and roll them into balls about 1 1/2 inches in diameter, and place the balls on the prepared baking sheets at least 1 inch apart.
  • Bake in the preheated oven until a toothpick inserted into the center of a cookie comes out clean, about 25 minutes. Remove from sheets immediately to cooling racks to prevent cookies from getting too hard.
  • Stir together confectioners' sugar and water to make a glaze, and drizzle each cookie while slightly warm with about 1/2 teaspoon, spreading it around the top of the cookie.

2 cups unbleached all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon freshly ground nutmeg
1/2 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, room temperature
2/3 cup packed dark-brown sugar

Steps:

  • Whisk together flour, cinnamon, ginger, nutmeg, and salt in a medium bowl.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and brown sugar until light and fluffy, about 3 minutes. Gradually add flour mixture and beat to combine. Divide dough evenly into quarters.
  • Roll each quarter into a 14-inch-long rope. Transfer ropes to parchment-lined baking sheets, spaced 6 inches apart (two ropes per sheet). Flatten ropes to 2 inches wide and 1/4 inch thick. Refrigerate until firm, about 30 minutes.
  • Preheat oven to 350 degrees. Using the back of the tines of a fork, make crosswise lines across the surface of each flattened portion of dough. Bake, rotating halfway through, until golden around the edges and dry on top, 16 to 18 minutes. Transfer sheets to wire racks; let cool 5 minutes. While still warm, cut on the diagonal into 1-inch-thick slices. Let cool completely. Cookies can be stored in an airtight container at room temperature up to 1 week.

3 tablespoons sugar
3 tablespoons heavy whipping cream
1/2 teaspoon ground cardamom
1 to 1-1/4 cups all-purpose flour
Oil for deep-fat frying
Confectioners' sugar

Steps:

  • Beat egg yolks and granulated sugar until pale yellow. Add cream and cardamom; mix well. Gradually add flour until dough is firm enough to roll., On a lightly floured surface, roll into a 15-in. square. Using a pastry wheel or knife, cut into 15x1-1/2-in. strips; cut diagonally at 2-1/2-in. intervals. In the center of each diamond, make a 1-in. slit; pull one end through slit., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry bows, a few at a time, until golden brown on both sides, 20-40 seconds. Drain on paper towels. Dust with confectioners' sugar.

2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon ground cloves
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cardamom
1 cup unsalted butter, room temperature
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla
1 large egg white, mixed with
1 tablespoon water

Steps:

  • Combine flour, cinnamon, ginger, cloves, salt, nutmeg and cardamom in bowl.
  • Beat butter and sugar in large bowl until creamy.
  • Beat in eggs and vanilla until fluffy.
  • Stir in flour mixture.
  • Divide dough in half; flatten into disks.
  • Wrap in plastic.
  • Refrigerate for 1 hour.
  • Heat oven to 350°.
  • Coat 3 ½ - 4 ½-inch cookie-cutter molds with nonstick cooking spray.
  • On lightly floured surface with floured rolling pin, roll out half of dough ¼-inch thick.
  • Press cutter molds gently into dough.
  • Gently pull cookies out of molds.
  • Place on ungreased baking sheets.
  • Brush with egg white.
  • Reroll scraps.
  • Repeat with remaining dough.
  • Bake in 350° oven 10-12 minutes, until golden.
  • Remove to racks to cool.
  • Store at room temperature or freeze.

Millie my neighbor used to make these for us all the time. I loved the rich buttery taste and the cherry and almond flavor. Cooking time does not include chilling time.

1 cup butter
1 cup sugar
1 egg, beaten
2 cups flour
1 teaspoon almond extract
21 -24 maraschino cherries, halves

Steps:

  • Cream butter and sugar.
  • Add egg and mix well.
  • Stir in flour and almond extract.
  • Chill dough 1-2 hours.
  • Make balls the size of small walnuts.
  • Flatten balls on cookie sheet with the bottom of a glass dipped in flour.
  • Press a ½ of a cherry onto each cookie.
  • Bake at 350 for 15 minutes until edges are light brown.
  • Do not over bake.
  • You can sprinkle with powdered sugar if desired.
