These pancakes are requested regularly by my family for breakfast. The recipe is easy to throw together and the taste is yummy!

¾ cup all-purpose flour
¾ cup cornmeal
2 tablespoons white sugar
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ¼ cups buttermilk
2 large eggs
3 tablespoons butter, melted and cooled

Steps:

  • Whisk flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl. Whisk buttermilk, eggs and butter in a separate large bowl. Stir the liquid mixture into the dry mixture until blended and smooth.
  • Heat a lightly oiled griddle or skillet over medium-high heat. For each pancake, pour 1/4 cup batter on griddle and cook until browned, about 1 1/2 minutes. Flip and cook until browned on the other side, about 1 minute. Continue with remaining batter.

This is my grandmother's cornbread recipe and it's the best - sweet and moist!

½ cup butter
⅔ cup white sugar
2 large eggs
1 cup buttermilk
½ teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
  • Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

2 lbs fish fillets (of your choice)
1/2 cup all-purpose flour
1/2 cup milk
1 egg
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon oregano leaves
1/2 cup yellow cornmeal
1/2 cup vegetable oil

Steps:

  • in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
  • on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
  • in 10" skittle heat oil until hot.
  • place 3 or 4 fish fillets in hot oil.
  • cook over med heat until golden brown.
  • turn and continue cooking until golden brown and fish flakes with a fork.
  • repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
  • Serve with potatoes or rice.

1 cup flour
1 cup yellow cornmeal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 eggs
1 cup milk or 1 cup buttermilk
1/4 cup Crisco shortening, melted and cooled (or cooking oil)
1 (2 cup) can cream-style corn
1/4 cup green jalapeno
1/4 cup red jalapeno
1/4 cup red pepper
1 lb hamburger
1 teaspoon chili powder
1/2 teaspoon salt
1 teaspoon pepper
1 large onion, diced
2 cups grated cheddar cheese

Steps:

  • Heat oven to 400.
  • Mix flour, cornmeal, sugar, baking powder and salt together.
  • Make a well and add eggs, milk, cooled Crisco shortening, creamed corn, jalapenos and peppers.
  • Beat until just smooth, do not overbeat.
  • Saute the onion in a medium pan.
  • In a cast iron pan (10"-12") brown the hamburger, drain and add chili powder, salt and pepper.
  • Place hamburger in a bowl until needed.
  • Place the cast iron pan into the oven to heat throughly.
  • Take it out of the oven and grease the bottom and sides well with Crisco shortening (or oil).
  • Otherwise, the cornbread will stick in the pan when it is finished.
  • Pour half the cornbread batter into the skillet, next layer the hamburger, then the onions, and grated cheddar cheese.
  • Top with the remaining half cornbread batter.
  • Bake at 400 for 25- 30 minutes.
