While I was growing up, my mom would make this traditional German soup. It tasted so good on chilly fall days. Knoephla (pronounce nip-fla) Soup is still a warm and comforting meal for my family. -Lorraine Meyers, Willow City, North Dakota

Number Of Ingredients 12

1/2 cup butter, cubed
3 medium potatoes, peeled and cubed
1 small onion, grated
3 cups milk
6 cups water
6 teaspoons chicken or 3 vegetable bouillon cubes
KNOEPHLA:
1-1/2 cups all-purpose flour
1 egg, beaten
5 to 6 tablespoons milk
1/2 teaspoon salt
Minced fresh parsley, optional

Steps:

  • In a large skillet, melt butter; cook potatoes and onion for 20-25 minutes or until tender. Add milk; heat through but do not boil. Set aside. In a Dutch oven, bring water and bouillon to a boil. , Meanwhile, combine first four knoephla ingredients to form a stiff dough. Roll into a 1/2-in. rope. Cut into 1/4-in. pieces and drop into boiling broth. Reduce heat; cover and simmer for 10 minutes. Add the potato mixture; heat through. Sprinkle with parsley if desired.

Knoephla is one of those recipes that reminds me of family. It's a feel-good concoction, good as a main or a side dish and amazing for breakfast, lunch, or dinner. Serve with gravy and your favorite meatballs. I love Knoephla with a brown gravy and Swedish meatballs.

4 cups all-purpose flour
3 eggs, beaten
¼ cup melted butter
¾ cup milk
salt and ground black pepper to taste
2 potatoes, peeled and cut into chunks
2 slices French bread, toasted well

Steps:

  • Mix flour, eggs, milk, melted butter, a pinch of salt, and and pinch of pepper into a ball of dough; let sit at room temperature for 10 minutes.
  • Cut dough ball into quarters. Roll each piece into logs. Press each log flat.
  • Bring a large pot of water to a boil; add potatoes. Hold a flattened dough log over the water and use kitchen shears to diagonally snip 1/4- to 1/2-inch pieces of dough into the water; repeat until all dough is in the water. Cook potatoes and dough, stirring occasionally, until the potatoes are tender and the dough is cooked into small dumplings, 15 to 20 minutes; drain and transfer potatoes and dumplings into a large bowl.
  • Crush the toasted bread into the noodles and mix with a spoon.

Knoephla (neh-fla) are little dumplings that came to the Dakotas via German immigrants. Molly calls them the "best- kept secret in the upper Midwest!" She makes this dumpling soup for her daughter, Bernie - and it's always a hit!

3 tablespoons unsalted butter
1 large onion, chopped
2 large carrots, chopped
2 stalks celery, chopped
Kosher salt and freshly ground pepper
2 cloves garlic, minced
1/2 teaspoon grated nutmeg
10 cups chicken or vegetable stock
1/2 teaspoon dried thyme
2 sprigs dill, leaves chopped
4 sprigs parsley, leaves chopped
2 bay leaves
1 1/2 pounds red-skinned potatoes, chopped into 1/2-inch pieces
1/2 cup heavy cream
3 1/4 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons baking powder
Kosher salt and freshly ground pepper
1/8 teaspoon grated nutmeg
1 cup water
1 large egg

Steps:

  • Make the soup: In a large pot, melt the butter over medium-high heat. Add the onion, carrots, celery, a good pinch of salt and a few grinds of pepper. Cook, stirring often, until the vegetables soften, about 10 minutes. Add the garlic and nutmeg and cook, stirring, 2 more minutes, or until fragrant. Stir in the stock, thyme, dill, parsley, bay leaves and potatoes; increase the heat to high and bring to a boil. Reduce the heat to a simmer, cover and cook 40 minutes, stirring occasionally.
  • Meanwhile, begin making the knoephla when the soup reaches a boil: Whisk the flour, baking powder, 1 1/4 teaspoons salt, a few grinds of pepper and the nutmeg in a medium bowl. Stir in the water and egg and mix to form a shaggy dough. Turn it out onto a clean work surface and knead for a few minutes, adding more flour as needed, until you have a smooth and stiff dough.
  • Roll out the dough into a 1/2-inch-thick blob, then cut into 1/2- to 3/4-inch squares, dusting them with flour so they don't stick together. Drop them directly into the simmering soup for the last 20 minutes.
  • In the last few minutes of cooking, stir in the heavy cream. Taste and adjust the seasonings as desired. Remove the bay leaves before serving.

Stir in 1 cup (236 grams) water and the egg and mix to form a shaggy dough. Turn it out onto a clean work surface and knead it for a few minutes, adding flour as needed, until you have a smooth and stiff dough. Roll it into a 1/2-inch-thick blob, then cut into 1/2- to 3/4-inch squares, dusting with flour so they don't stick together.
  • When the soup has 20 minutes left of simmer time, add the knoephla directly to the soup and continue to simmer.
  • Stir in the cream. Taste and adjust the seasonings as desired. Remove the bay leaves before serving. Enjoy!

This version of knefla is a tasty, easy German-Russian staple for dinner, comprised simply of dough and potatoes. Sometimes I add 2 teaspoons of chicken bouillon to the boiling water for extra flavor. Serve with sausage, brats, or alone. Some like it with sauerkraut or breadcrumbs for garnish.

  • Whisk the flour, baking powder, salt, and pepper together in a bowl. Whisk together the egg and milk in a separate bowl; stir in the flour mixture until a smooth dough is formed.

Fried knoephla with sausage, potatoes, & kraut Recipe image

Number Of Ingredients 12

knoephla dough:
1 lb of sausage or bacon cooked with a small white onion and grease until browned, save grease.
4 c self rising flour (or ap flour + 1/2 tsp baking powder
1/4 tsp salt)
2 eggs
1 c warm water
1 c whole milk
6 potatoes, peeled and cubed
salt and pepper to taste
bacon or sausage grease (lard or vegetable oil)
butter
22 ounces sauerkraut, drained

Steps:

  • Beat eggs and liquids in a medium size mixing bowl. Add in half flour mixture and mix well. Knead the dough, adding more flour until the dough in stiff and hard to work with, let the dough rest for 10 minutes. Bring a pot of well salted water to boil. Add in potatoes and cook just until tender. Remove from water using slotted spoon and drain colander, leaving boiling water simmering. Take parts of dough and roll in palms to make a 1/2 to 3/4 inch wide cylinder. While potatoes cool use scissors to cut dough in 1/2 to 3/4 inch pieces into the boiling water. The dumplings will sit on the bottom of the pot until almost done. When almost finished cooking, the knoephla will rise to the surface. Once they have risen to the surface let them cook 1-2 minutes longer. Drain well. Place grease and/or butter in a large skillet and heat over medium to high heat. Add cooked potatoes and salt and pepper to taste. Fry until potatoes are golden brown. While potatoes are frying, place grease/butter in a non-stick skillet, heat over high heat. Cook the kneophla in batches, until browned, transferring the fried dumplings into the skillet with the potatoes. When all of the knoephla and potatoes are nicely browned and combined in one skillet, add the sauerkraut to the mixture and heat through. Serve immediately

Here in North Dakota we love Knoephla Soup! I was introduced to it by my DH and loved it ever since! We have a place called Kroll's Diner run by two older Norwegian ladies! They make it the best I have ever had! The are famous for saying "SIT DOWN AND EAT!" And we do! :)

2 cups chicken broth
1 large onion, diced
1 stalk celery, diced
2 cups potatoes, diced

3 cups flour

Steps:

  • In a big soup pot add water and broth, then add onion, celery, potatoes, bouillon cubes and spices. Boil until potatoes are done, about 12-15 minutes. Add cream and knoepfla. Simmer 30-40 minutes.
  • Knoephla Dough a German dumpling:.
  • Mix flour, salt, and baking powder together to make a fairly stiff dough. Add eough water to make the dough stiff -- 3/4 cups or more depending on how much gluten is in your flour. You can use milk in place of the water -- some here do.
  • Roll into 1/2 inch ropes and cut with a pair of scissors into 1/2 inch pieces right into the simmering soup.
  • This is a very hearty soup and wonderful on a cold day! Especially here in North Dakota! Brrrrr -- So come in and "Sit Down and Eat!".
