1/2 pound lean ground beef (90% lean)
1 can (8-3/4 ounces) whole kernel corn, drained
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup shredded cheddar cheese, divided
1/3 cup 2% milk
2 tablespoons sour cream
3/4 teaspoon onion powder
1/4 teaspoon pepper
2 cups frozen Tater Tots

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink. Stir in the corn, soup, 1/4 cup cheese, milk, sour cream, onion powder and pepper., Place 1 cup Tater Tots in a greased 3-cup baking dish. Layer with beef mixture and remaining Tater Tots; sprinkle with remaining cheese. Bake, uncovered, until bubbly, 20-25 minutes.

1 pound ground beef
½ onion, chopped
2 red bell peppers, cut into 2 inch pieces
1 (15 ounce) can baked beans
1 tablespoon dry fajita seasoning
1 (8.5 ounce) package corn bread mix
1 egg
⅓ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble the ground beef into a large cast-iron skillet over medium-high heat. Cook, stirring frequently, until beef is evenly brown. Drain the grease, and add the onion. Cook and stir until the onion is translucent. Add the red peppers, beans, and fajita seasoning; cook and stir until heated through. Spread out in an even layer on the bottom of the skillet.
  • Mix the package of cornbread mix according to the directions using the egg and milk. Spoon over the ground beef mixture, and spread evenly.
  • Place the whole skillet in the oven, and bake for 20 minutes, or until a toothpick inserted into the cornbread layer comes out clean. Cool for a few minutes before serving.

I first made this as a teenager and everyone I've made it for loves it. It's very easy and absolutely delicious! You can top it with chili as well. It is also good the next day.

2 pounds ground beef
1 small onion, chopped
2 (7 ounce) packages sweet yellow cornbread mix (such as Martha White®)
1 cup milk
2 eggs
1 (15 ounce) can creamed corn
2 cups shredded Cheddar cheese
2 tablespoons butter, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add onion; cook until soft, 5 to 10 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cornbread mix, milk, and eggs in a large bowl. Stir in creamed corn.
  • Spread beef-onion mixture in the bottom of a baking dish. Spread Cheddar cheese on top. Pour cornbread batter over cheese.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, 17 to 22 minutes. Spread butter over the top. Let cool for 5 minutes before cutting.

This Cowboy Casserole is easy to make and everyone will love it! It is meaty, cheesy, corn and tater tot goodness will leave your family wanting more!

1 lb pork sausage
15 1/4 ounces whole kernel corn
1 (10 1/4 ounce) can condensed cream of mushroom soup, undiluted
8 ounces monterey jack pepper cheese
1/3 cup milk
1/3 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3/4 medium onion, diced
2 garlic cloves, minced
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 cups frozen tater tots
1/2 cup diced Rotel Tomatoes
1 tablespoon chopped chives
1/4 cup sliced olive (optional)

Steps:

  • Turn on your oven to 425°.
  • Cover the bottom of your casserole dish with tator tots and place in the oven (while it's still cold and warming up). Leave them there until you are ready to assemble the casserole. Mine were cooked about ½ way when I pulled them out to put my casserole together. I put them on a plate while I put all of my other ingredients in the casserole dish and then added them back to the top before putting everything in the oven to finish cooking.
  • In a medium skillet cook your sausage over medium heat until browned. Remove from skillet and set aside on a plate. Drain the grease and lightly wipe most of the remaining grease out (you want to leave a little bit to cook your onions).
  • Add your onions and garlic and cook until soft, about 4 minutes.
  • Add your hamburger back to your skillet with the onions and garlic. Add Rotel tomatoes, garlic powder, onion powder, black pepper,crushed red pepper and stir well. Let cook over medium heat until most of the liquid from the Rotel tomatoes has cooked off.
  • Add your sour cream, cream of mushroom soup, drained corn, ½ of your cheese and milk. Stir well. Let cook until cheese is melted.
  • Put your cheesy meaty mixture in the bottom of the casserole dish. Add your olives if using, and ½ of the remaining cheese.
  • Add your layer of tator tots and press down a little bit to make sure they are stuck in the mixture just a little bit. Cover the top of the tator tots with your remaining cheese and chives.
  • Cook in the oven for 20-25 minutes or until the cheese is all the way melted and you can see the casserole bubbling up on the sides and the middle just a bit.
  • Serve and enjoy!

1 (15 ounce) can ranch style beans
1 green bell pepper
2 (8 ounce) packages cornbread mix
1 lb ground beef

Steps:

  • Chop bell pepper and set aside.
  • Fry ground beef in skillet until cooked add bell pepper.
  • Cook for 5 minutes and drain excess grease.
  • Prepare one package of cornbread mix according to directions.
  • Grease a 11x13 pan and pour in cornbread mix.
  • Open corn and beans and pour into meat.
  • Prepare 2nd package of mix and top meat and veggies mixture.
  • Cook in oven 20 minutes.
