2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
2 cups milk
1 (3 ounce) package cream cheese, diced
⅓ cup shredded Swiss cheese
1 (12 ounce) package frozen hash brown potatoes
1 (12 ounce) package frozen chopped broccoli
½ cup bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan, melt 2 tablespoons butter. Stir in flour and salt. Add milk and stir until bubbly. Add cheese, and stir until all of the cheese is melted. Stir in potatoes and heat thoroughly.
  • Pour half of the mixture into a 10x6 inch baking dish.
  • Cook broccoli according to package instructions; drain well. Layer broccoli over the potatoes in the baking dish. Pour the remaining potato mixture over the broccoli. Sprinkle the bread crumbs and 1 tablespoon melted butter over the top of the casserole.
  • Bake at 350 degrees F (175 degrees C) for 20 to 35 minutes; or until bubbly and browned lightly.

1 package (16 ounces) frozen potatoes, sweet peas and carrots
1 can (15 to 16 ounces) kidney beans, rinsed and drained

Steps:

  • Cut thin 2-inch-round slice from tops of rolls. Remove bread from inside of each roll, leaving 1/2-inch shell on side and bottom. (Reserve bread trimmings for another use.)
  • Heat soup, vegetables and beans in 3-quart saucepan over medium-high heat, stirring occasionally, 8 to 10 minutes until vegetables are tender and soup is hot.

1/2 lb potato, red, unpeeled, diced
1 onion, small, chopped
3/4 cup chicken broth
3/4 cup water
2 cups low-fat milk (1%)
1/4 cup flour
1/2 teaspoon tarragon
1/2 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon black pepper, fresnly ground
3 ounces monterey jack cheese, shredded
1/2 cup red bell pepper, minced

Steps:

  • In large saucepan, combine broccoli, potato, onion & diluted broth.
  • Cover & bring to boil over high heat, then reduce heat to medium-low & cook until tender, about 6 minutes.
  • In small bowl, whisk milk into the flour. Add milk mixture to soup, along with tarragon, thyme, salt & pepper.
  • Stirring constantly, cook until mixture comes to a boil & is thickened, about 7 minutes.
  • Ladle soup into bowls & sprinkle each with some cheese, then top with minced bell pepper.

1 cup half-and-half

Steps:

  • In a small bowl mix together well the flour and evaporated milk.
  • To the crockpot, add ham, broccoli, onion, swiss cheese, water and flour/milk mixture.
  • Set crockpot to low and cook for 7 hours.
  • Before serving, stir in half-and-half and heat thru. Serve immediately.

3 cups sliced peeled potatoes
2 1/2 cups broccoli florets
1 cup chopped onion
1 cup grated carrot
2 celery ribs, diced
1/4 cup chicken bouillon granule
3 cups water
3/4 cup butter
3/4 cup flour
4 cups milk
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1 cup cubed cooked ham
frozen bread dough

Steps:

  • In a soup kettle, combine items 1-7, simmer for 20 minutes covered or until vegetables are tender.
  • In a saucepan, melt better, stir in flour, cook& stir over medium heat 2 minutes stirring constantly.
  • Stir in milk, salt and pepper and bring to a boil.
  • Boil and stir 2 minutes.
  • Add to vegetable mix with ham.
  • Simmer 10 minutes.
  • Stir in cheese until just melted.
  • Bread Bowls: 1 loaf frozen bread (this will make 3 bowls- Rhodes is good brand to use).
  • Let thaw slightly.
  • Cut into 3 even pieces and shape into balls.
  • Let rise and bake according to package directions.
  • Once baked, cut into top of bread and take out bread to form a bowl.

1 (10 ounce) package frozen chopped broccoli
1 cup all-purpose flour
1 large potato, cubed
3 -4 green onions, chopped
8 cups water
1 1/2 teaspoons salt
3 chicken bouillon cubes
1 teaspoon ground black pepper
1 lb boneless skinless chicken breast, cut into bite size pieces
1 cup light cream
3 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream

Steps:

  • In large pot or Dutch Oven, melt butter over med. heat. Mix in flour, stirring constantly until a thick paste forms. Remove from pot, and set aside.
  • In same pot, combine water, bouillon cubes, chicken, broccoli, potato, green onions, salt and pepper. Bring to a boil over high heat. Reduce heat to medium low, and simmer for 45 minutes.
  • Stir in flour mixture a little bit at a time until soup thickens. Simmer 5 minutes. Reduce heat and stir in cream and sour cream. Mix in cheese, one cup at a time and stir until melted.
  • * 2 heads fresh broccoli, cut into florets can be used instead of the frozen broccoli.
  • Note: You can easily omit the chicken - it won't be missed. But add another potato in its place.

  • In a 6-qt. stockpot, heat butter over medium heat; saute onion and garlic until tender, 6-8 minutes. Stir in broccoli, carrot, stock, cream and seasonings; bring to a boil. Simmer, uncovered, until vegetables are tender, 10-12 minutes., Mix cornstarch and water until smooth; stir into soup.
