2 cups chicken broth
1 cup white vinegar
1/4 cup sugar
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
2 pounds chicken thighs (, boneless skinless (about 6 thighs))

Steps:

  • Add all the ingredients to a slow cooker and mix well.
  • Cook on low heat for 6 hours or on high heat for 3 hours.
  • Use two forks to shred the chicken.
  • Serve on buns.

2 cups water
1 cup white vinegar
1/4 cup sugar
1 tablespoon reduced-sodium chicken base
1 teaspoon crushed red pepper flakes
3/4 teaspoon salt
1-1/2 pounds boneless skinless chicken breasts
6 whole wheat hamburger buns, split, optional

Steps:

  • In a small bowl, mix the first 6 ingredients. Place chicken in a 3-qt. slow cooker; add vinegar mixture. Cook, covered, on low 4-5 hours or until chicken is tender., Remove chicken; cool slightly. Reserve 1 cup cooking juices; discard remaining juices. Shred chicken with 2 forks. Return meat and reserved cooking juices to slow cooker; heat through. If desired, serve chicken mixture on buns.

2 cups apple cider vinegar
3/4 cup ketchup
2/3 cup granulated sugar
1 tablespoon salt
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 teaspoons crushed red pepper flakes
4 -6 boneless chicken breasts
1/4 of a small onion (optional)
2 celery leaves (optional)

Steps:

  • Place all ingredients in a saucepan and bring to a boil, stirring constantly. Reduce heat and simmer, stirring occasionally, until sugar is dissolved and all ingredients are thoroughly combined, about 10 minutes.
  • Remove from heat, cover and let sit for an hour, or refrigerate overnight before serving.
  • Simmer chicken breasts in water to cover, until cooked through and tender, about 20 to 30 minutes. Add onion and celery leaves to the coking water for enhanced flavor, if desired.
  • When chicken breasts are done, remove them to a cutting board or plate. When cool enough to handled, shred or chop the chicken and add the barbecue sauce.
  • Keep the mixture warm in a slow cooker, if serving buffet style.

1 fresh pork butt, bone-in (this is the butt, or top portion, of the shoulder)
Kosher salt
Barbecue Sauce, recipe follows
2 cups apple cider vinegar
2 tablespoons crushed red pepper
1/2 tablespoon chopped fresh garlic
1/2 tablespoon kosher salt
1 tablespoon freshly ground black pepper

Steps:

  • Add hickory, oak, and maple chunks or chips to your smoker. Refer to the directions for your smoker to determine the correct amount of chips for the meat and for lighting instructions. When the chips are ready, add the pork and smoke it for 2 to 2 1/2 hours at 250 degrees F. Remove the pork and wrap it in heavy-duty aluminum foil.
  • Preheat the oven to 225 degrees F.
  • Cook the pork for 6 to 8 hours or until the meat is tender and falls apart when the bone is removed. Chop the pork coarsely and mix in salt and barbecue sauce, to taste. Serve with more barbecue sauce on the side.
  • In a medium saucepan, combine the vinegar, red pepper, garlic, and salt over high heat. Bring to a boil and then reduce the heat to medium-high. Boil for 15 to 20 minutes and then remove from the heat. Let cool then add the black pepper.

1 (5 pound) pork butt roast
2 cups white vinegar
1 cup butter, melted
2 tablespoons salt
2 tablespoons lemon juice
2 tablespoons crushed red pepper flakes
1 tablespoon hot sauce
1 tablespoon ground black pepper
2 tablespoons white sugar

Steps:

  • Trim the fat from the roast; place in slow cooker and cook on Low overnight, at least 8 hours.
  • To make the sauce, whisk together the vinegar, melted butter, salt, lemon juice, crushed red pepper, hot sauce, black pepper, and sugar in a bowl.
  • Carefully remove the roast to a cutting board. Pull the meat from the bone with a fork. Return the pork to the slow cooker. Pour the sauce over the pulled pork. Simmer for 1 hour more.

2 lbs boneless skinless chicken breast halves
3/4 cup packed light brown sugar, divided
3/4 cup yellow mustard
1/2 cup cider vinegar
1/4 cup cayenne pepper sauce
2 tablespoons vegetable oil
2 tablespoons Worcestershire sauce

Steps:

  • Place chicken into resealable plastic storage bag. Combine 1/2 cup brown sugar, mustard, vinegar, hot sauce, oil and Worcestershire in 4-cup measure; mix well. Pour 1 cup mixture over chicken. Seal bag; marinate in refrigerator 1 hour or overnight.
  • Pour remaining mustard mixture into small saucepan. Stir in remaining 1/4 cup sugar. Bring to a boil. Reduce heat; simmer 5 minutes or until sugar is dissolved and mixture thickens slightly, stirring often. Reserve for serving sauce.
  • Grill chicken on greased rack over medium-high heat 10 to 15 minutes or until chicken is no longer pink in center, turning once. Discard marinade. Serve chicken with reserved sauce.
