1/2 teaspoon butter or margarine, softened
2 unpeeled red baking apples, sliced
2 teaspoons all-purpose flour
1 teaspoon packed brown sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon seasoned salt
4 bone-in pork loin chops, 3/4 inch thick (about 2 lb), trimmed
1 cup apple juice or apple cider
2 tablespoons butter or margarine
1 1/2 cups stuffing mix for pork or chicken (from 12-oz box or 8- or 12-oz canister)
1/4 cup sweetened dried cranberries
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 375°F. Brush 1/2 teaspoon butter in bottom of 13x9-inch (3-quart) glass baking dish. Spread apple slices in dish. In small bowl, mix flour, brown sugar and cinnamon; sprinkle over apples. Sprinkle seasoned salt on both sides of pork; place pork over apples.
  • In 2-quart saucepan, heat apple juice and 2 tablespoons butter to boiling over medium-high heat. Stir in stuffing mix and cranberries. Cover; remove from heat. Let stand 5 minutes. Fluff mixture with fork. Scoop 1/2 cup stuffing onto each pork chop.
  • Spray sheet of foil with cooking spray; place sprayed side down over baking dish. Bake 40 to 50 minutes. Uncover; bake 5 to 10 minutes longer or until pork is no longer pink in center and meat thermometer inserted in center reads 160°F. Sprinkle with parsley. To serve, lift pork chops with stuffing to serving plates; serve apples on the side.

1 tablespoon chopped onion
¼ cup butter
3 cups fresh bread crumbs
2 cups chopped apples
¼ cup chopped celery
2 teaspoons chopped fresh parsley
¼ teaspoon salt
6 (1 1/4 inch) thick pork chops
salt and pepper to taste
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet saute onion in butter or margarine until tender. Remove from heat. Add the bread crumbs, apples, celery, parsley and salt. Mix all together. Cut a large pocket in the side of each pork chop; season inside and out with salt and pepper to taste. Spoon apple mixture loosely into pockets.
  • In skillet, heat oil to medium high and brown chops on both sides. Place browned chops in an ungreased 9x13 inch baking dish. Cover with aluminum foil and bake in the preheated oven for 30 minutes. Remove cover and bake for 30 minutes longer or until juices run clear.

I have made this recipe for so many years and served it to family and guest with such good results and comments on the taste and flavor of these chops. I prefer the loin cut myself, but I'm sure any thick cut will do in this recipe.

6 - 1 1/4 cut pork chops, split in center
- ground coriander
1 tablespoon(s) vegetable oil or olive oil
- salt and pepper to taste
3 cup(s) stuffing mix, herb-seasoned with sage
1 medium onion chopped
2 - celery stalks, chopped
1/2 cup(s) butter
2 teaspoon(s) chopped parsley
2 cup(s) chopped apples, can leave skins on if desired.
2 can(s) or jars of brown gravy (if desired)
- salt and pepper to taste

Steps:

  • Ask someone in the meat department at your grocery store to split your pork chops for you or cut them yourself when you get home.
  • Place a tablespoon of vegetable or olive oil in a heavy skillet over med-high heat.Sprinkle both sides of each pork chop with the coriander and salt & pepper to taste.
  • When oil heats, add the pork chops and brown on both sides until golden brown on the outside of each pork chop. Do not fully cook chops.
  • Remove pan from stove and place chops on a platter and let cool.
  • Place another fry pan onto the stove over med-high heat;add butter, chopped celery and onions and cook until onions become clear.Remove from stove
  • Place stuffing mix in a large bowl and add onion and celery along with your chopped apples. Add your parsley, salt and pepper to taste and stir until all is mixed well.
  • Stuff each pork chop full of stuffing mixture and place stuffing pocket side up in a 9 X 13 baking pan. (If you lay the chops down; the dressing will mix with the gravy and fall out of the chops)
  • Pour gravy over all and cover with foil and place in a pre-heated oven at 350 for 30 minutes.
  • Remove pan from oven and remove foil. Place pan back into oven and let cook for another 30 minutes until bubbly and well done.
  • Remove from oven and place on a large serving tray along with the gravy.
  • Serve with your favorite side dishes and enjoy.

6 pork chops ( have your butcher cut 1/2 in. chops from a pork loin )
2 Tbsp extra virgin olive oil
garlic salt and black pepper to taste
1 Tbsp ground cardamon
6 tart apples, sliced
1 Tbsp butter
2 tsp cinnamon
1/4 c brown sugar
1/2 c port wine

Steps:

  • 1. Peel and core apples and slice into a saucepan with butter over medium heat. Add brown sugar, cinnamon and cook until tender.
  • 2. Remove from heat and set aside.
  • 3. Heat olive oil in frying pan.
  • 4. Spread both sides of each pork chop with garlic salt, pepper and cardamon and add pork chops to hot pan.
  • 5. Cook until brown on one side and turn to cook and brown the other side.
  • 6. Remove pan from burner and add apples on top of each pork chop. Pour wine into bottom of pan and light with a match watching not to burn yourself.
  • 7. Return pan to cook top when fire is out and lower heat and cover with a lid.
  • 8. Heat for 30 minutes or until wine looks like thick syrup.
  • 9. Remove pork chops from pan onto a serving platter and top with the apples and wine syrup.

These pork chops are going to be a date night favorite in your household this fall. It's a warm, hearty dish that you can make together: One of you can hold the pork chop as the other stuffs it, or vice versa.

2 boneless pork chops (1 pound total)
2 tablespoons olive oil
1 garlic clove, minced
1/2 onion, diced
1/2 cup chopped green apple, such as Granny Smith
1/2 cup diced carrots
1/2 cup diced celery
1 cup crumbled cornbread
1/4 cup chicken broth or stock
4 sage leaves, coarsely chopped
Salt and ground black pepper

Steps:

  • Slice into the pork chops horizontally, but not all the way through. (You're essentially butterflying the pork chops and giving them a little pouch.) Set aside.
  • In a large skillet over medium-high heat, heat up 1 tablespoon olive oil. Add the garlic and onion and saute until fragrant and softened, about 3 minutes. Add the apple, carrots and celery and cook until softened, 7 to 10 minutes.
  • Add in the cornbread, chicken broth and sage leaves, and stir to incorporate. Season with salt and pepper to taste. Remove the skillet from the heat and let the filling cool for 10 minutes.
  • Carefully spoon the filling into the pork chops. If they become full and you can no longer stuff anymore, that's ok-save the filling to eat on the side. Use toothpicks to secure the chops shut. If the toothpicks poke out, use scissors to trim them flush to the pork chops.
  • In the same skillet you used earlier, heat up the remaining tablespoon olive oil. Sear the pork chops, 3 to 5 minutes per side. Turn the heat down to medium and continue cooking, flipping occasionally, until the pork chops have cooked through completely, 15 to 20 minutes. Serve warm with the additional cornbread stuffing!

2 slices bacon, roughly chopped
1 large sweet onion, 1/2 chopped and 1/2 in wedges

1 Granny Smith apple, peeled, cored and sliced thin
2 tablespoons unsalted butter, room temperature
1 1/2 cups plus 2 tablespoons pineapple-orange juice

1 lemon, zested
2 teaspoons chopped flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Gently cut pockets into chops by slicing horizontally in the side. On a plate, place salt and pepper. Dredge chops in seasoning. In a medium skillet over medium heat, saute the bacon, chopped onions, thyme, and sage until the bacon is almost crispy and the onions are beginning to caramelize around the edges, about 10 minutes. Pour mixture into a bowl. Add apples, butter, 2 tablespoons of pineapple-orange juice and cinnamon. Season with salt and pepper. Stuff each chop with apple mixture and hold together with skewers. In same skillet over medium-high heat, add enough oil to coat the pan and sear both sides of the chops until golden brown, about 4 minutes per side. Add 1 cup pineapple-orange juice and remaining onion wedges around the chops. Season with salt and pepper and bake until cooked through, about 20 to 25 minutes, depending on the thickness of the chops, basting 2 to 3 times. Remove pork chops from pan and let rest 10 minutes. Add remaining pineapple-orange juice and scrape up the brown bits that cling to the bottom of the pan. Bring the liquid to a simmer and cook until reduced by half, about 5 minutes. Add lemon zest and parsley. Pour sauce over pork chops.

1 cup apple juice
1/2 cup sun-maid dried apple (cut in chunks)
1/2 cup sun-maid seedless raisin
1/2 cup chopped walnuts
2 tablespoons fine dry breadcrumbs
1 tablespoon sugar
2 tablespoons dry white wine
1 tablespoon lemon juice
1/2 teaspoon ground ginger
6 pork loin chops, cut 1 inch thick seasoned with salt pepper thyme
2 tablespoons cooking oil

Steps:

  • In saucepan combine apple juice and apples; simmer, covered, for 25 minutes.
  • Remove from heat.
  • Add raisins and let stand 5 minutes; drain, reserving liquid.
  • Combine cooked fruit mixture, walnuts, and bread crumbs.
  • Stir together sugar, wine, lemon juice, and ginger.
  • Add to bread mixture, tossing lightly to moisten.
  • Cut pockets in fat side of seasoned chops, cutting lengthwise to bone.
  • Spoon about 1/3 cup of the stuffing mixture into each pocket.
  • If necessary, use wooden picks to hold pockets closed.
  • In large skillet brown chops in hot oil.
  • Place chops in 13x9x2-inch baking pan.
  • Sprinkle chops with a little salt and pepper.
  • Add ¼ cup reserved apple liquid to pan, adding water if necessary.

3 pork chops
extra virgin olive oil
2 shallots, chopped
1 tart apple, peeled, cored & and diced
1/4 cup frozen chopped spinach
2 slices wheat bread, cubed small (can be stale or day old)
1 tablespoon butter
sage
pepper
garlic powder
celery salt

Steps:

  • In an oven-proof skillet, cook shallots in EVOO until tender. Add apples, cook till tender. Add in spinach, bread cubes, seasonings, and butter. Cook until warmed through and well combined. Remove this apple mixture to a bowl to allow it to cool. Keep skillet warm and add a bit more olive oil if needed.
  • Preheat oven to 375°.
  • Place chops on a cutting board a press down with the palm of your hand while using a knife in your dominant hand to cut a deep pocket horizontally into the middle of the chop. Season the outside of the meat as desired, and stuff filling into the pork chops.
  • Place stuffed chops into the warm skillet (hopefully you'll hear a sizzle when you put it in the pan.) Put chops in the oven for 45 minutes or until done.

  • Preheat the oven to 400F/200C. Prepare the onion, apple, garlic and herbs for the stuffing crust, if not already prepared.
  • Pat the pork chops dry and warm half the butter in a small-medium skillet/frying pan (that's suitable for the oven) over a medium-high heat. Brown the pork chops just a minute on each side so they are sealed then remove from pan and set aside.
  • Add the rest of the butter to the pan, reduce the heat a little, and add the onion. Soften for a couple minutes then add the garlic. Cook a minute or two more, stirring now and then, then add the apple, sage and thyme. Stir and cook a minute. Add the breadcrumbs and stir well then remove from the heat.
