HUNGARIAN-STYLE NOODLES WITH CABBAGE AND POPPY SEEDS



Hungarian-Style Noodles with Cabbage and Poppy Seeds image

The preparation of this tasty Slavic-inspired dish can be greatly simplified by using pre-shredded coleslaw cabbage, but for flavor, I prefer a fresh green cabbage.

2 tablespoons olive oil
1 large onion (quartered and thinly sliced)
1 small green or 1/2 medium savoy cabbage (cut into long, thin shreds)
1/4 cup dry white wine
10 to 12 ounces flat (egg-free noodles such as spelt ribbons or rombi)
1 tablespoon vegan buttery spread (such as Earth Balance)
1 tablespoon poppy seeds (more or less as desired)
Salt and lots of freshly ground pepper to taste

Steps:

  • Heat the oil in an extra-wide skillet or stir-fry pan. Add the onion and sauté over medium heat until golden.
  • Add the cabbage and wine, then cover and cook, stirring occasionally, until the cabbage is limp just beginning to brown lightly, about 10 to 12 minutes.
  • Meanwhile, cook the noodles in plenty of rapidly simmering water until just tender. Drain and transfer to a large serving container, then stir in the Earth Balance.
  • Add the cabbage mixture and poppy seeds to the noodles and toss gently but thoroughly. Season to taste with salt and lots of pepper, and serve at once.

1 package (16 ounces) egg noodles
1 medium onion, chopped
3 tablespoons butter
2 green onions, chopped
2 tablespoons poppy seeds
Salt and pepper to taste
1 tablespoon minced fresh parsley

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large heavy skillet, saute onion in butter until onion begins to brown. Drain noodles; add to skillet. Cook and stir until noodles begin to brown. , Add the green onions, poppy seeds, salt and pepper; cook and stir 1 minute longer. Sprinkle with parsley.

Very Special Beef Stroganoff and Poppy Seed Noodles image

This is my version of Cleora Butlers Beef Stroganoff. Cleora cooked for my husbands family when his mother was a child in Tulsa Oklahoma. When I think about this very special yummy meal, my mouth waters. Use fresh ingredients. It's well worth the time and effort. Makes wonderful leftovers.

2 lbs beef tenderloin (I have used several types of beef including ground beef with very good results)
1/2 cup butter or 1/2 cup margarine, divided
4 medium onions, thinly sliced
1 1/2 lbs mushrooms, thinly sliced
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (6 ounce) can full sherry wine (use the empty tomato paste can) or 1 (6 ounce) can wine (use the empty tomato paste can)
1 pint sour cream
2 tablespoons flour
12 ounces extra broad egg noodles
salt, for water
1 tablespoon poppy seed
2 tablespoons finely chopped parsley
butter

Steps:

  • Slice beef into very thin strips.
  • Melt 1/2 of the butter in a large skillet; saute beef over high heat for only 1 minute on each side. Remove beef slices and keep warm.
  • Add onions; saute 10 minutes over medium heat. Remove onions.
  • In remaining butter, saute mushrooms 5 minutes over medium heat.
  • Return beef and onions to skillet.
  • Add tomato paste and seasonings. Cook over low heat 20 minutes.
  • Mix sour cream with 2 tablespoons flour. Blend thoroughly and stir into meat mixture to thicken. Cook until gravy is thick.
  • Serve over Poppy Seed Noddles.
  • Poppy Seed Noodles.
  • Boil noodles in salted water as directed on bag.
  • Drain, butter and sprinkle with poppy seeds.
  • Mix gently and sprinkle with 2 tablespoons parsley.
  • Serve immediately with Beef Stroganoff on top.

6 ounces wide egg noodles
1 1/2 teaspoons poppy seeds
1 1/2 tablespoons unsalted butter
1/2 teaspoon finely grated fresh lemon zest
2 tablespoons fresh chives

Steps:

  • Cook noodles as directed on package.
  • While noodles are cooking, lightly toast poppy seeds in a dry small skillet over moderately low heat, stirring, until just fragrant, about 2 minutes.
  • Reserve 1/2 cup cooking water and drain noodles in a colander.
  • Add butter and zest to warm pot and swirl until melted.
  • Add noodles and toss, adding enough of reserved cooking water to keep noodles moist, then stir in poppy seeds, chives, salt and pepper to taste.

1 (3 lb) savoy cabbage, cored, outer leaves removed, shredded (about 8 cups)
2 tablespoons olive oil (probably more than this if you don't use a non-stick pan)
1 tablespoon granulated sugar
1 yellow onions (American) or 1 brown onion, chopped (Australian)
6 garlic cloves, chopped
2 leeks, thoroughly washed, outer leaves removed, chopped
fresh ground black pepper, to taste
1 (12 ounce) package egg noodles
1 tablespoon poppy seed

Steps:

  • Heat the oil in a large non-stick pan; add the sugar and heat gently until the sugar browns.
  • Add the onions, garlic and leeks; cook until they start to wilt.
  • Stir in the cabbage; sauté, stirring frequently, until the cabbage has softened, about 20 minutes.
  • Season to taste with pepper, and transfer the cabbage mixture and pan juices to a large bowl and keep warm.
  • Cook the noodles according to the packet instructions, then drain. (Alternatively, using pre-cooked vacuum-packed noodles works well, and saves time).
  • Quickly toss the noodles with the cabbage mixture and the poppy seeds.
  • Serve immediately.
  • Notes: Traditionally, this noodle and cabbage dish is served with sour cream. It's certainly delicious with the sour cream. Opt for a lower fat dish another night!

A great side dish or a meal on its own. This is a Polish/Hungarian dish. Can use bacon but I cut back on that to make it meatless. Also can garnish with poppy seeds. Adding peas for color and nutrition. Bacon is a yummy addition for those that eat meat. Just brown drain most of the fat then add butter and oil and brown onions. Be sure to give the onions a nice brown color using a med high heat.
