I seldom know if I'm going to have one, two or 15 people at the table for meals, so I need fast simple recipes. This one's both-plus tasty. Kids seem to really like it.-Barbara Thomas, Mankato, Kansas

4 cups uncooked egg noodles
1/2 pound ground beef
1/4 pound miniature smoked sausage links
2 cups frozen corn, thawed
1 jar (26 ounces) spaghetti sauce
1 cup 4% cottage cheese
1/4 teaspoon garlic powder
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and sausage over medium heat until beef is no longer pink; drain. Add the corn, spaghetti sauce, cottage cheese and garlic powder; heat through. Drain noodles and stir into beef mixture. Sprinkle with cheese. Cover and cook for 5 minutes or until cheese is melted.

I found this recipe in a cooking magazine. It quickly became a family favorite. Even with my picky son. It works well with beef, chicken and pork. Enjoy!

8 ounces wide egg noodles
1/4 cup butter or 1/4 cup margarine, softened
1/2 cup half-and-half (I use non-fat)
1/4 cup grated parmesan cheese
2 1/4 teaspoons Italian salad dressing mix

Steps:

  • Cook noodles to desired tenderness; drain in colander.
  • Place butter or margarine in sauce pan used to cook noodles; add noodles and toss to coat.
  • Add the remaining ingredients and mix well.
  • Serve immediately.

1/2 lb egg noodles
1/4 cup extra virgin olive oil
2 tablespoons dried Italian herb seasoning or 2 tablespoons fines herbes
1 cup freshly grated parmesan cheese
fresh ground black pepper

Steps:

  • In a large pot of boiling salted water, cook the egg noodles until tender but still firm. Depending on the brand of noodles you buy, the total cooking time will range from 3 to 6 minutes.
  • Pour into a colander to drain off the water. Place the noodles in a serving bowl and gently toss with the olive oil and herbs.
  • Serve immediately. Let everyone add cheese and freshly ground pepper to his or her own taste.
