GINGER-GARLIC PORK NOODLE SOUP (AIP, PALEO, WHOLE30)



Ginger-Garlic Pork Noodle Soup (AIP, paleo, Whole30) image

This quick and easy Ginger-Garlic Pork Noodle Soup is warming, comforting and delicious. It's the perfect weeknight meal and is AIP and paleo and can be made Whole30 compliant.

Number Of Ingredients 13

2 TBSP olive oil
6 cloves garlic, sliced
1.5 -inch piece fresh ginger, grated
1 lb ground pork
3 shallots, thinly sliced
1/2 cup cilantro, chopped (plus more for garnishing)
2 TBSP chives, chopped (plus more for garnishing)
1 tsp sea salt
2 cups cremini, button or shitake mushrooms, sliced
2 cups spinach, loosely packed
3.5 cups sodium free chicken bone broth or vegetable stock (ensure ingredients are AIP compliant)
3/4 cup coconut aminos
4oz AIP compliant pasta (I recommend this brand)

Steps:

  • Cook your pasta of choice according to directions, strain and set aside.
  • In a large stock pot or cast iron pot, heat olive oil on medium heat. Add sliced garlic and ginger and sauté 2-3 minutes, stirring frequently until the garlic begins to brown.
  • Next, add ground pork, shallots, chopped cilantro, chives and sea salt. Sauté an additional 5-7 minutes, stirring continuously.
  • Next, add in sliced mushrooms and stir to combine. Add in coconut aminos and chicken bone broth or vegetable stock, reduce heat, cover pot and simmer 10 -15 additional minutes.
  • Finally add in spinach and stir to wilt. Taste for salt and adjust accordingly.
  • Pour soup overtop cooked noodles. Garnish with additional cilantro and chives and a splash more of coconut aminos in each individual serving, if desired.
  • Enjoy!

1 tablespoon hoisin sauce
1 tablespoon sugar
1 1/2 teaspoons Chinese five-spice powder
1 tablespoon plus 1 teaspoon soy sauce
a 3/4-pound piece well trimmed boneless pork loin
8 cups chicken broth
six 1/8-inch slices peeled fresh gingerroot
3 star anise
2 large garlic cloves
1/2 pound dried soba noodles
1/2 pound bok choy (about 1/2 small head)

Steps:

  • Preheat oven to 350° F.
  • In a small bowl stir together hoisin, sugar, five-spice powder, and 1 teaspoon soy sauce. In a small glass baking dish brush pork with hoisin mixture and roast in middle of oven 40 minutes, or until a thermometer inserted in center registers 160° F. Let pork stand on a cutting board 15 minutes. Cut pork crosswise into thin slices and halve slices diagonally.
  • In a large saucepan skim any fat from surface of broth and bring broth to a boil with gingerroot, star anise, garlic, and remaining tablespoon soy sauce. Remove pan from heat and steep broth, covered, 30 minutes. Pour broth through a sieve into another large saucepan.
  • While broth is steeping, in a 5-quart kettle bring 3 1/2 quarts salted water to a boil and add noodles. When water returns to boil add 1 cup cold water and bring to boil again. Repeat procedure and simmer noodles 5 minutes, or until just tender. In a colander drain noodles and rinse under cold water. Drain noodles well and divide among 4 large soup bowls.
  • Bring broth to a boil. Cut bok choy crosswise into 1/8-inch slices and add to broth. Simmer mixture 2 minutes, or until bok choy is risp-tender. Divide pork, bok choy, and broth among bowls.

1 tablespoon reduced-sodium soy sauce

3 green onions, thinly sliced diagonally

Steps:

  • Soak noodles according to package directions., Meanwhile, in a large saucepan, saute carrots and bok choy in oil until tender. Add ginger; cook 1 minute longer. 1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon olive oil
1/2 teaspoon minced garlic
7 cups water
1-1/2 cups cut fresh asparagus (1-inch pieces)
1/2 cup chopped cabbage
1-1/2 teaspoons minced fresh parsley
3/4 teaspoon dried tarragon
Dash cayenne pepper, optional
2 packages (3 ounces each) pork ramen noodles
2 cups cubed cooked pork

Steps:

  • In a Dutch oven, saute celery and onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the water, asparagus, cabbage, parsley, tarragon and cayenne if desired. Bring to a boil., Coarsely crush the noodles. Add the noodles with the contents of the seasoning packets to the pan. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until the noodles and vegetables are tender. Add pork; heat through.

Steps:

  • Preheat oven to 350.
  • In a small bowl stir together hoisin, sugar, five-spice powder, and 1 teaspoon soy sauce.

6 ounces vermicelli or 6 ounces thin spaghetti, uncooked
1/4 cup rice wine vinegar, plus
1 tablespoon rice wine vinegar
2 tablespoons dark sesame oil, divided use
1 tablespoon vegetable oil
2 teaspoons hoisin sauce
1 teaspoon soy sauce
1 tablespoon minced fresh gingerroot
1 garlic clove, minced
3/4 lb cooked pork roast, cut into thin strips
1/2 lb fresh spinach
3 tablespoons sesame seeds, toasted
salt and pepper (to taste)

Steps:

  • Cook pasta according to package directions; drain. Place pasta in a large bowl.
  • Combine vinegar, 1 tablespoon of the sesame oil, vegetable oil, hoisin sauce, soy sauce, gingerroot, and garlic in a small bowl; stir well. Pour half of dressing over pasta, tossing to combine.
  • Heat remaining 1 tablespoon sesame oil in a large skillet over medium-high heat. Add pork; saute 3 to 5 minutes or until browned. Add pork to pasta mixture, tossing gently to combine.
  • Remove stems from spinach; wash leaves thoroughly. Cut spinach into thin strips. Cook in a large nonstick skillet over medium-high heat 3 to 4 minutes or just until spinach wilts. Add spinach to noodle mixture.
  • Sprinkle with sesame seeds, and pour remaining dressing over pasta; toss gently to combine. Add salt and pepper to taste. Serve warm.

3 tablespoons neutral oil, grapeseed, vegetable or canola
8 garlic cloves, thinly sliced
1 pound ground pork
1 1/2 teaspoons red-pepper flakes, plus more to taste
Kosher salt and black pepper
4 cups chicken broth
3 tablespoons soy sauce or tamari, plus more to taste
1 large bunch pea leaves or spinach, thick stems removed, leaves coarsely chopped
1 tablespoon finely grated fresh ginger (from about a 1 1/2-inch piece)
6 ounces rice noodles (thick- or thin-cut), cooked and drained
1/2 medium red, yellow or white onion or 3 scallions, thinly sliced
1 cup cilantro, leaves and tender stems, coarsely chopped

Steps:

  • Heat vegetable oil in a large, heavy-bottomed pot over medium.
  • Add garlic and cook, stirring occasionally, until the slices become nicely toasted and golden brown, 2 or 3 minutes. Using a slotted spoon, remove garlic and set aside.
  • Add pork and red-pepper flakes to the pot, and season with salt and pepper. Cook, using a wooden spoon or spatula to break up large pieces, until the pork is well browned and in small bite-size pieces, 5 to 8 minutes.
  • Add chicken broth, soy sauce and 4 cups water. Bring to a simmer and cook for about 5 to 8 minutes or so, until the pork is very tender and the broth tastes impossibly good. (Give it a taste and season with salt, pepper, red-pepper flakes and soy sauce, if you want.) Add pea leaves, half of the onion slices, and all of the ginger. Stir to wilt the leaves.
  • To serve, ladle soup over noodles and top with remaining onion, cilantro and toasted garlic.
