EASY PASTA WITH FETA CHEESE
This feta pasta is ultra-creamy, studded with roasted tomatoes, and baked entirely in one dish!

Steps:
- Preheat the oven to 400 F.
- Place the block of feta in the center of a 9x13 inch baking dish, then pour the dry pasta around the feta.
- Pour the broth over the uncooked pasta, then carefully stir the pasta with the broth (making sure not to stir the feta in with it), to make sure that the pasta is fully submerged in liquid.
- Sprinkle the cherry tomatoes over top of the noodles, then drizzle over the olive oil and salt and pepper.
- Cover the baking dish with foil as tight as possible, and bake at 400 F for 40 minutes.
- Once finished baking, remove the foil, add the minced garlic and fresh basil, and stir everything together until fully combined. Serve and enjoy!

BAKED FETA PASTA
Whether you're an avid TikTok user or just a casual Instagram consumer, you've probably seen the feta and tomato pasta taking the social media world by storm. It has an interesting history. In 2018, Finnish blogger Tiiu Piret (@tiiupiret) shared a recipe for a pasta containing prosecco, baked feta and tomatoes. In 2019, another Finnish blogger, Jenni Häyrinen (@liemessa), shared her simplified version of the dish on her blog and Instagram using the hashtag #uuifetapasta. (Afterward, sales of feta in Finland apparently increased by 300 percent.) American food influencer MacKenzie Smith (@grilledcheesesocial) eventually heard about the dish from a friend with a Finnish boyfriend. In January 2021, she posted a translation of the popular recipe on her blog and Instagram, which led to it going viral in the United States. It's easy to see why the recipe has achieved such fame: Cherry tomatoes and a whole block of feta are baked until soft and melty, then tossed with garlic, basil and cooked noodles for a beautifully cheesy dish. We opted to use a short tube pasta so the sauce can get trapped inside each piece and added a pinch of flaky sea salt on top to perfectly balance the dish.

- Preheat the oven to 400 degrees F.
- Toss the cherry tomatoes and olive oil with 1/4 teaspoon of salt and several grinds of black pepper in a medium bowl until combined. Transfer to a 2 1/2- to 3-quart baking dish, place the feta in the center of the tomatoes and season with a pinch of black pepper. Bake until the tomatoes have burst and the feta has softened, about 30 minutes. Raise the heat to 450 degrees F and continue to cook until the tomatoes and feta are golden brown, 10 to 15 minutes more.
- Meanwhile, bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook until al dente, about 13 minutes. Reserve 1/2 cup of the cooking water, then thoroughly drain the pasta.
- As soon as the tomatoes and feta come out of the oven, stir in the garlic and red pepper flakes (if using). Use the back of a spoon to smash the tomatoes and feta into a smooth and creamy sauce (it's okay if some of the oil isn't fully integrated). Add the pasta and half the basil and toss until evenly coated. If the sauce is too thick, stir in some pasta water a couple tablespoons at a time. Taste and adjust the seasoning with salt and pepper. Serve topped with the remaining basil and a pinch of sea salt.

- Preheat oven to 375F; cook noodles according to package directions; drain well. Return to the (still hot) pot in which they were cooked, and toss gently but thoroughly with 2T butter.
- Place eggs in medium bowl, beat slightly. Add cheeses and salt (if desired) and blend well. Divide in two equal parts; mix parsley into one half.
- Place 1/2 the noodles in a buttered 9x9x2" baking pan. Spread evenly with 1/2 the cheese& parsley mixture; cover with remaining noodles, sprinkle with remaining cheese mixture (without parsley) over the top. Dot with remaining 2T butter.
- Bake 45 minutes or until browned; may be served hot or cold.

BAKED FETA ZOODLES

- Preheat your oven to 400 degrees f.
- In a 13x9-inch baking dish, stir together the cherry tomatoes, 1 Tablespoon of olive oil, garlic, oregano, sea salt, and pepper.
- Make some space in the center and add in your feta cheese. Drizzle the remaining 1/2 Tablespoon of olive oil on top of the feta.
- Bake, until the cheese is soft and golden on top and tomatoes are roasted and bursting, about 30 minutes.
- While the feta is baking, thoroughly wash your zucchini squash and trim off the ends.
- Using a spiralizer, create zucchini noodles; aka zoodles. If you don't have a spiralizer, you can simply run a vegetable peeler down the length of the zucchini to create thin ribbons.
- Remove the baking dish from the oven and add in your chopped fresh basil.
- Using a fork, mash the feta and stir it together with the tomatoes to form a sauce as shown in the video.
- Add your zoodles immediately to the still very hot baking dish, and toss well to combine with the sauce. Your hot tomato/feta sauce should warm your zucchini noodles nicely.
- Garnish the pasta with extra fresh basil and freshly ground black pepper, if desired.
- Serve immediately and enjoy!
ONE-PAN FETA PASTA WITH CHERRY TOMATOES
In 2018, the Finnish blogger Jenni Hayrinen posted a recipe for baked feta pasta. The dish became a full-on TikTok sensation, popular to the point that supermarkets were selling out of feta. This version streamlines her recipe. Instead of cooking the pasta separately, it's added to the casserole dish with the baked feta and tomatoes, turning it into a cozy one-pan meal. (Also note that you'll need an electric kettle to boil the water. So maybe it's more like a one-and-a-half-pan meal.) Don't think of this as a pasta dish in an Italian, al-dente sense. It's more like a creamy casserole along the lines of mac and cheese. In any case, it's comforting and supremely easy.

- Heat oven to 400 degrees. In a shallow 2-quart casserole or gratin dish, or an 11-by-7-inch baking dish, combine tomatoes, garlic, thyme, rosemary and 3/4 teaspoon salt. Toss with 1/4 cup of the olive oil to coat. Place the feta in the middle of the dish, and top with the remaining 1/4 cup olive oil. Sprinkle the black pepper and red-pepper flakes over everything. This Greek-inspired casserole is easy to prepare for a week night dinner but the sauce is so rich-tasting, you'll want to serve it to company as well. It freezes and reheats very well and actually tastes better the second time around.

- Cook the pasta in a large pot of boiling, salted water.
- Rinse and drain well.
- Melt the butter in a large saucepan.
- Add the onion, garlic and green pepper and cook for 3 to 4 minutes.
- Stir in the flour and cook for 3 minutes.
- Add the milk, tomato paste, salt and pepper and bring to a boil.
- Reduce the heat and cook for 5 minutes, stirring often.

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine cherry tomatoes, bell pepper, onion, olive oil, garlic, lemon juice, lemon zest, red pepper flakes, black pepper, Italian seasoning, basil, and sea salt in a 13x9-inch baking dish.
- Make room in the middle of the pan and add block of feta cheese. Flip in oil, making sure cheese remains intact and becomes well coated.
- Bake in the preheated oven until the cherry tomatoes begin to blister and split, 40 to 45 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and reserve about 1 cup of the pasta water.

- Preheat oven to 400˚F. Add tomatoes and asparagus to a 9x13 casserole. Add 1/3 cup olive oil, 2 minced garlic cloves, 1/2 tsp black pepper, and 1/4 tsp salt. Toss to combine. Make a space in the center and place your 8 oz block of feta in the pan. Drizzle the top with 1 Tbsp olive oil and another sprinkle of black pepper. - About halfway through your baking time, bring a pot of salted water to a boil and add pasta. Cook according to package instructions, stirring a few times to keep the pasta from sticking. Drain pasta (reserving some cooking water if you decide to add it later).

- Stir in drained cooked pasta. Add reserved pasta water if desired. Serve warm. Be mindful of those tomatoes (the juicy centers can be very hot if you eat them right away). Add reserved hot pasta water as desired for saucier pasta.
