1/2 cup peach nectar (recommended: Kerns)
1 liter orange flavored seltzer water
Ice cubes
1 cup light rum, optional (recommended: Bacardi)

Steps:

  • In a large pitcher, combine all ingredients and stir. Serve chilled in highball glasses.

2/3 cup fresh lime juice
1/3 cup fresh orange juice
1/3 cup light agave syrup
Kosher salt
1 cup ice cubes
1 cup chilled lime seltzer

Steps:

  • Combine the lime juice, orange juice and agave in a spouted measuring cup. Pour into a 12-compartment ice cube tray and freeze until solid, at least 4 hours and up to overnight.
  • Pour the salt into a small dish. Dip the rims of 2 glasses in water, then dip the rims in the salt to coat.
  • Combine the ice cubes, seltzer and frozen juice cubes in a blender and blend on high until smooth and pourable. Pour into the prepared glasses and serve immediately.

24 ounces passion-fruit juice (such as Ceres)
Red currants, for serving

Steps:

  • Place tea bags in a large heatproof bowl. Pour in 24 ounces just-short-of-boiling water; steep 5 minutes. Remove tea bags; let cool completely. Stir in fruit juice. Refrigerate until cold, at least 2 hours. Serve over ice with red currants.

1 1/2 ounces bourbon, such as Jim Beam Black
1 1/2 ounces good-quality black tea, such as City Harvest Black Tea, strong brewed and chilled

Orange slice
Ice cubes
Fresh mint sprig, for garnish

Steps:

  • For the mint syrup: Combine the sugar and 1/2 cup water in a small saucepan and bring to a boil. Cook until the sugar has melted. Stir in the mint and let steep 30 minutes. Strain the mint leaves. For the cocktail: Combine the bourbon, tea, lemon juice, lime juice and 2 ounces mint syrup in a cocktail shaker and shake for 5 seconds. Rub the orange slice around the rim of highball glass and fill with ice. Pour the cocktail over the ice and garnish with the mint sprig.

PEACH ICED TEA

Beat the heat on summer days with a refreshing glass of peach iced tea. Sure to be a hit with the whole family, you could also make it with raspberries

200g granulated sugar
5 ripe peaches , 4 stoned and chopped, 1 sliced to serve
4 teabags

Steps:

  • Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
  • Sieve the syrup through a fine sieve into a jug, mashing the fruit to release all the liquid. The syrup will keep in the fridge for one week.
  • Put the teabags in a large heatproof jug and pour over 2 litres boiling water. Leave to steep for 4 mins, then carefully remove the teabags. Leave to cool, then transfer to the fridge until chilled.
  • Stir the peach syrup into the iced tea with some ice, or pour a little of the syrup into tall glasses and add the tea. Top up with more water, sparkling water or ice. Add peach slices to serve.
