PESTO TURKEY AND PASTA
Five ingredients and less than 20 minutes is all you'll need to whip up this pesto-perked pasta dish!

Steps:
- Cook and drain pasta as directed on package in 3-quart saucepan.
- Mix hot cooked pasta, turkey, pesto and bell peppers in same saucepan. Heat over low heat, stirring constantly, until hot.

- Preheat an outdoor grill for medium-high heat.
- Mix together ground turkey, pesto, garlic, feta cheese, 1 1/2 teaspoons seasoned salt, and breadcrumbs in a bowl until evenly blended. Form into 4 patties.
- Grill pesto burgers until no longer pink in the center, about 5 minutes per side. Sprinkle with seasoned salt halfway through cooking.

Steps:
- Gently mix turkey, pesto, bread crumbs, 1/2 teaspoon salt, and 1/4 teaspoon pepper in bowl using hands until uniform.
- Roll mixture into eighteen 1 1/2 inch meatballs.
- Lay meatballs on large plate, cover, and refrigerate until firm, about 1 hour.
- Pulse 2 cans diced tomatoes in food processor until mostly smooth, about 12 pulses; set aside.
- Heat oil in 12-inch nonstick skillet over medium heat until just smoking.
- Brown meatballs well on all sides, about 10 minutes; transfer to paper towel-lined plate.
- Add onion and 1/8 teaspoon salt to fat left in skillet and cook over medium heat until softened, 5-7 minutes.
- Stir in garlic and pepper flakes and cook 30 seconds.
- Stir in processed tomatoes and remaining 1 can diced tomatoes.
- Bring to simmer and cook for 10 minutes.
- Return meatballs to skillet, cover, and simmer gently until meatballs are cooked through, about 10 minutes.
- Meanwhile, bring 4 quarts water to boil in large pot.
- Add pasta and 1 tablespoon salt and cook, stirring often, until al dente.
- Reserve 1 cup cooking water, then drain pasta and return it to pot.
- Add several large spoonfuls of tomato sauce (without meatballs) to pasta and toss to combine.
- Season with salt and pepper to taste and add reserved cooking water as needed to adjust consistency.
- Divide pasta among individual bowls.
- Top each bowl with remaining sauce and meatballs, sprinkle with basil, and serve.

TURKEY PESTO MEATBALLS
I wanted something new to do with my ground lean turkey meat and for some reason pesto popped into my head. Who would have thought that pesto meatballs were going to be absolutely amazing? These delicious meatballs coupled with homemade sauce and wheat pasta are a great traditional dinner with a wonderful twist.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a large baking pan with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook and stir until browned, about 5 minutes. Add spinach; mix until fully cooked, 3 to 5 minutes.
- In the meantime, combine turkey, pesto, egg whites, oatmeal, Parmesan cheese, salt, and pepper in a large mixing bowl. Add onion-spinach mixture and mix well. Shape mixture into balls using an ice cream scoop. Place in the prepared pan.
- Bake in the preheated oven until no longer pink in the center, 30 to 35 minutes.

PENNE WITH SPINACH PESTO AND TURKEY SAUSAGE

- Preheat oven to 450 degrees. In a food processor, combine 4 cups spinach, basil, lemon juice, 1/2 cup peas, and olive oil; process until combined. Pulse in cheese; season with salt and pepper. Using kitchen shears, snip sausage into 1-inch pieces. Drizzle with oil; roast on a rimmed baking sheet until undersides are brown, 7 to 8 minutes. Flip and push to one side. Lightly drizzle remaining 3 cups spinach with oil; season with salt and pepper. Scatter evenly over other half of sheet; roast until sausage is cooked through and spinach is crisp, 5 to 6 minutes more.
- Meanwhile, cook pasta in a pot of salted boiling water according to package directions. Drain, reserving 1 cup pasta water. Return pasta to pot; add pesto, sausage, remaining 1 cup peas, and pasta water, 1/4 cup at a time, until evenly coated. Season with salt and pepper. Serve, topped with crisped spinach, more cheese, and a drizzle of oil.

- Pulse 2 cans diced tomatoes (reserve the 3rd can for Step 5) in food processor until mostly smooth; set aside.
- Heat oil in 12-inch nonstick skillet over medium heat until just smoking. Brown meatballs well on all sides, about 10 minutes; transfer to paper towel-lined plate.
- Add onion and 1/8 teaspoon salt to fat left in skillet and cook over medium heat until softened, 5 to 7 minutes. Stir in garlic and pepper flakes and cook until fragrant, about 30 seconds.
