EASY APPLES FOSTER RECIPE

Easy Apples Foster Recipe image

This recipe is a play on the classic bananas foster, with a apple twist. I used Cortland apples, but any cooking apple should work. These apples cook up quickly and make for a great dessert. I didn't do the flame trick most people think of when they think bananas foster, but I suppose that could be entertaining if you had guests over. Perhaps google some bananas foster recipes to find out a safe way to do that. Enjoy on its own or serve over ice cream. *Vegetarian, Vegan options listed*

Time 15m

Yield 2

Number Of Ingredients 7

1 tablespoon butter (or sub vegan substitute, like Earth Balance)
1 apple, cored, chopped small (peel optional)
1 tablespoon rum, optional (but definitely gives that unique taste to the dish)
1 tablespoon brown sugar
1/4 teaspoon vanilla
dash cinnamon
ice cream, optional (use ice cream of choice - I went with a vanilla dairy-based ice cream, but there are delicious vegan ice creams out there made with coconut milk that would be wonderful)

Steps:

  • Melt butter over medium low heat in a large pan.
  • Add apples and cook until softened, about 6-8 minutes.
  • Remove pan from heat, add rum, brown sugar, vanilla, and cinnamon. Return to heat, turn heat up a little (I turned mine to between medium-low and medium). Cook until most liquid absorbed, about 2-3 minutes.
  • Enjoy plain or serve over ice cream.

NO-SUGAR BAKED APPLES

These baked apples are a favorite that my mom made every time fresh apples were in season; my favorite for this recipe are McIntosh. Great with pears too!

Coconut extract
1 store-bought red velvet cake (unfrosted)

NO RECIPE RECIPE: COMPOUND BUTTER

Categories     condiment

Number Of Ingredients 4

Sticks unsalted butter, softened
Chopped garlic
Chopped fresh herbs - parsley, basil, thyme, rosemary
Salt and freshly ground black pepper

Steps:

  • In a bowl, mix all the ingredients together. Lay a large piece of plastic wrap on your counter. Spoon the butter into the middle of the wrap, in a long rope-shape. Roll the plastic wrap over the butter, gently forming it into a log, tucking the ends under. Pop it into the refrigerator or the freezer and chill until hard and set.
  • When ready to use, just slice a coin off the butter and put it on top of grilled steaks, fish, or poultry.

NO RECIPE RECIPE: SIMPLE GRAVY

No Recipe Recipe: Simple Gravy image

Provided by Aida Mollenkamp

Time 20m

Yield depends on amounts used

Number Of Ingredients 7

6 tablespoons butter
6 tablespoons all-purpose flour
Chicken broth
A few fresh sage leaves
Apple juice
Salt and freshly ground black pepper
Nutmeg

Steps:

  • Melt the butter in a medium saucepan over medium heat. When it foams, whisk in the flour until combined. Cook until the flour loses its raw flavor and turns peanut color, about 3 to 5 minutes. Whisk in the chicken broth until the mixture is smooth. Bring to a simmer, then reduce the heat to low and cook until it becomes a light tan color.
  • Meanwhile, remove the turkey from roasting pan and set aside to rest. Discard all but 1 tablespoon of the drippings from roasting pan. Put the pan on the stovetop over medium heat. When pan juices are hot, add the sage leaves and fry until fragrant, about 1 minute. Remove the neck bone. Add a big splash of apple juice and scrape up the browned bits at the bottom of the pan.
  • Strain this liquid into the thickened chicken broth mixture and season with salt, pepper and nutmeg. Whisk to combine. Bring to a simmer and cook for a few minutes until thick and creamy, about 3 to 5 minutes. Serve with your turkey and sides.

APPLES FOSTER AKA APPLE PIE MINUS THE CRUST

Apples Foster Aka Apple Pie Minus the Crust image

"There are few aromas more comforting than that of apple pie. This is as easy and old-school a dessert as bananas Foster and, thanks to a generous dousing with Calvados or Apple Jack, equally boozy." From the WSJ, January 25, 2013 *posting for safe keeping.

Time 15m

Yield 4 , 4 serving(s)

Number Of Ingredients 6

1/4 cup butter
1/2 cup demerara sugar
1 star anise, substitute 1/2 teaspoon cinnamon
4 large crisp apples, peeled and sliced, one per person
1/4 cup calvados or 1/4 cup apple jack
4 scoops vanilla ice cream or 4 scoops creme fraiche, for serving

Steps:

  • 1. In a large skillet over medium-high heat, melt butter and cook until it foams. Once foaming subsides, stir in sugar and spice and cook 1 minute to allow flavors to meld.
  • 2. Lay apples into pan in a single layer and cook until fruit begins to caramelize, about 5 minutes.
  • 3. Pour Calvados into pan. Use a long match or candle lighter to ignite alcohol. Boil until flames subside, 1 minute. Remove from heat and serve with premium ice cream or crème fraîche. I recommend Recipe #144139.
  • *Demerara sugar is a type of unrefined sugar with a large grain and a pale to golden yellow color.
