SIMPLE MARINATED BROCCOLI
My aunt used to make this delicious side dish when I would visit, and I recently discovered just how easy it is to make. A great way to encourage kids to eat their broccoli! Blanching of broccoli or any form of cooking broccoli is not recommended for this recipe; it tastes best with raw, chilled broccoli.

- Combine olive oil, red wine vinegar, and Italian dressing mix in a sealable container; shake vigorously.
- Place broccoli in a plastic storage container, cover with marinade, and refrigerate, stirring occasionally, for at least 3 hours.

- In a large bowl, combine the first five ingredients. In another bowl, combine the mayonnaise, sugar and mustard. Add to vegetable mixture; toss to coat. Cover and refrigerate. Stir in bacon just before serving.

Steps:
- In a preheated, non-stick pan over medium heat get the olive oil hot.
- Add the broccoli and carrots - saute for 3 minutes.
- Add garlic and saute another 2 minutes.
- add the water - this steams the broccoli a bit and adds some nice color.
- After a few more minutes, the broccoli and carrots should still be crisp, but slightly tender.
- Turn heat off and add the honey - mix well.
- Serve immediately.
MARINATED VEGETABLE MEDLEY
This is a wonderful, tangy recipe for marinated veggies. You may substitute small pearl onions for the chopped onion, and add bias sliced celery pieces as well.

- Place 1 in. of water in a small saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. This one is to be had raw, after having been marinated overnight. A great idea for the relish tray.

- Also remove the large outer leaves and cut into florets, reserving stalks for another use.

- Whisk together all the marinade ingredients and set aside.
- In a large saucepan, blanch the broccoli spears in boiling water for about 2 minutes.
- Stir in the carrots and continue to simmer for 5 minutes or less, until both vegies are just tender and still brightly colored.

- Combine dressing ingredients in a mason jar or small container with a lid and shake well. Refrigerate while you prepare the salad.
- Bring a large pot of water to a boil. Fill a large bowl about halfway with water and then fill with ice.
- Place broccoli and cauliflower into the pot of vigorously boiling water and allow to boil for 2 minutes. Quickly drain and transfer to the bowl of ice water. Once vegetables are completely chilled, transfer to a colander to drain well. Pour off some of the water from bowl and replace with fresh ice. Repeat process with carrots, cooking about 3 minutes.
