No Mayo Chicken Salad image

If you're not a fan of mayonnaise and celery in your chicken salad, try this no-mayo chicken salad instead. It's made with an olive oil-based dressing, and it's delicious!

2 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon hot water
1 teaspoon minced garlic
1 teaspoon Dijon mustard
1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon sea salt )
1/4 teaspoon black pepper freshly ground
1/4 teaspoon dried thyme
2 large chicken breasts (cooked and shredded (1 lb. cooked weight))
1/4 cup red onion (minced (1 oz))
1/2 cup pitted kalamata olives (sliced (2 oz))
1/4 cup feta (crumbled (2 oz))
1/2 cup cilantro (chopped)

Steps:

  • In a jar with a tight-fitting lid, add the olive oil, vinegar, water, garlic, Dijon, kosher salt, black pepper, and dried thyme.
  • Seal the jar well and shake it until the ingredients emulsify into a dressing.
  • In a salad bowl, add the chicken, onions, olives, feta, and cilantro. Gently toss to combine.
  • Let the salad rest in the fridge for one hour (or overnight - it improves in the fridge). Mix again before serving.
  • Serve the salad as is in bowls, on a bed of shredded lettuce, or in lettuce wraps.

2 cups diced rotisserie chicken meat
¼ cup finely chopped celery
2 tablespoons finely chopped red onion

3 -4 dashes black pepper
1/2 cup diced celery

Steps:

  • Boil chicken breasts and pull chicken in a bowl once cooked. Add yogurt, celery, dill weed and pepper to taste. Let sit overnight in frig for best flavor. Makes about four sandwiches, or just eat plain!

1 (1 ounce) packet ranch dressing mix (I used Hidden Valley Harvest Dill)
1 (16 ounce) container sour cream
1 (4 ounce) can water chestnuts (drained and chopped)
1/4 cup green onion top (chopped)
1/2 cup shredded mozzarella cheese
1 teaspoon black pepper
1/2-1 teaspoon celery salt
seasoning salt (To taste)

Steps:

  • In a bowl combine chicken, seasoning salt, black pepper and celery seed, stir.
  • In a seperate bowl combine sour cream and ranch packet, mix well.
  • Combine seasoned chicken,water chestnuts, green onion,mozarella cheese and ranch mixture, mix well.
  • Adjust seasoning to taste, refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve on rolls, crackers, or toast.

Chicken Salad:
2 cups cooked, shredded chicken
2 (1/4 inch thick) slices lightly toasted French bread, cut into very small cubes
2 small tomatoes on the vine, diced
1 small onion, thinly sliced
2 tablespoons minced celery
2 tablespoons chopped cilantro
10 small pimento-stuffed olives, halved
8 mini croissants

Steps:

  • Whisk together olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a small bowl until well combined; set aside.
