This is a great recipe given to me by a close friend who never has enough time to cook for her family. It's quick and easy to prepare and cook, allowing you to have a yummy dinner on the table in no time. The sauce goes very well with a side of rice, too. Enjoy!

⅓ cup apricot preserves
⅓ cup fruity white wine, such as Gewurztraminer
½ teaspoon ground ginger
salt and pepper to taste
2 tablespoons olive oil
4 boneless pork chops, 1/2 inch thick

Steps:

  • Mix the apricot preserves, wine, and ground ginger together in a small bowl; set aside.
  • Season the pork chops with salt and pepper. Heat the olive oil in a skillet over medium high heat. Add the pork chops and cook until brown on each side, and no longer pink in the center, about 4 minutes per side. Remove chops from the skillet. Reduce heat to medium low. Using the same skillet, pour in the apricot preserves mixture and simmer until thickened, about 4 minutes. Return pork chops to the skillet, turning to coat each side in the sauce; cook 1 minute.

In just 20 minutes you'll have an entire meal that's sweet, spicy, and a little tangy. It's delicious!

1/2 teaspoon black pepper
6 boneless pork chops (1-1/2 pounds total)
1 tablespoon vegetable oil
3 cups chicken broth
3/4 cup apricot preserves
1 tablespoon Dijon-style mustard
2 cups uncooked instant white rice
2 tablespoons diced red bell pepepr

Steps:

  • Sprinkle salt and black pepper evenly over both sides of pork chops.
  • In a large skillet, heat oil over medium-high heat then brown pork chops about 2 to 3 minutes on each side. Remove chops to a plate.
  • Add broth, preserves, and mustard to skillet; mix well and bring to a boil. Stir in rice and bell pepper, reduce heat to low, and place pork chops back in skillet.
  • Cover and cook 8 to 10 minutes, or until pork is cooked to medium or to desired doneness, and rice is tender. Serve immediately.

2 slices multigrain sandwich bread
4 bone-in pork loin chops (about 8 ounces each, 3/4 to 1 inch thick), patted dry
Coarse salt and ground pepper
4 teaspoons apricot jam

Steps:

  • Preheat oven to 425 degrees. Lightly brush a rimmed baking sheet with oil; set aside.
  • Tear bread into large pieces; place in food processor. Pulse until large crumbs form. Drizzle with oil; pulse once or twice, just until crumbs are moistened (you should have about 1 1/2 cups crumbs).
  • Season pork chops generously with salt and pepper; spread one side of each chop with 1 teaspoon jam. Dividing evenly, sprinkle breadcrumbs over jam, and pat them on gently.

Thick pork chops are stuffed with a mixture of acini de pepe, dried apricots and celery and grilled. The pork chops are basted with a glaze made up of honey, dijon mustard and apricot preserves giving it a delectable sweet flavor. Leftover stuffing is also cooked on the grill as a side dish. I diced up a small piece of crystalized ginger instead of the ground ginger.

1 tablespoon dijon-style mustard
2 tablespoons apricot preserves
2 tablespoons vinegar
1 cup chicken broth
1/2 cup acini di pepe pasta
4 green onions, thinly sliced

1/3 cup dried apricot, diced
1/2 cup celery, finely chopped
4 pork chops, 1-1/4 inches thick

Steps:

  • For glaze, combine honey and Dijon mustard in a small saucepan.
  • Stir in apricot preserves and vinegar.

  • Remove from heat and set aside.
  • For stuffing, In a saucepan, add chicken broth, green onions and ginger.
  • Bring to a boil and add the acini de pepe.

  • Cut a pocket in each pork chop

  • Fasten pockets with toothpicks.
  • Spoon remaining stuffing onto a large sheet of heavy-duty aluminum foil.
  • Fold securely, leaving space for steam to build.
  • Set aside.
  • In a covered grill, place chops on a hot grill off to the side, NOT directly over the coals.
  • Cover and grill for approximately 25 minutes, basting often with honey glaze, turning chops after about 10 minutes.
  • Place foil packets of stuffing on grill next to the chops but not over the coals and grill along with the chops. Pork chops should have an internal temperature of the 145 degrees.

Steps:

  • In a small bowl, stir together 1/4 cup water, the preserves and the mustard. Set near the stove. Pat the pork chops dry, and season all over with salt and pepper.
  • In a large (12-inch) cast-iron skillet, heat the oil over medium-high. Add the pork chops and cook, occasionally pressing down to make good contact with the skillet, until browned, 4 to 5 minutes. 4 thin cut pork chops
2 tbsp olive oil
1/2 cup apricot preserves
2 tbsp Dijon mustard
2 tbsp apple cider vinegar
1/8 tsp garlic powder
1/4 cup water
1 pinch salt and pepper
1 tbsp Mariposa Farms Parsley (chopped)

Steps:

  • In a medium bowl whisk together the dijon mustard, apricot preserves, apple cider vinegar, garlic powder and water. Set aside.
  • In a large skillet heat 2 tbsp olive oil over medium high heat. Remove chops from package and season both sides with salt and pepper. Once the skillet is hot (but not smoking) add the chops. Do this in 2 batches to get a better sear on the chops. Once you are able to flip the chops without them sticking then sear the other side. Once both sides are seared, remove from the pan and place on the plate. Sear the remaining chops and add to the plate. Cover with foil to keep them warm.
  • Reduce the heat to medium low and pour the apricot sauce into the skillet to deglaze. Using a whisk, stir and cook the sauce for 1-2 minutes, this will incorporate the flavorful dripping from the pan.
  • Return the chops and any juices from the resting plate to the sauce, spoon to cover and simmer for a few minutes before serving. Top with chopped parsley leaves before serving.

  • Prepare the sauce by whisking together the apricot preserves, dijon mustard, apple cider vinegar, garlic powder, and water. Set the sauce aside.
