1 Whole-wheat pizza crust (store-bought, preferably organic)
1 cup of grilled chicken slices
1/2 cup of Pizza Sauce
1/2 cup of arugula + spinach (loosely packed)
3/4 cup pepper jack or mozzarella cheese
2 tbsp. grated or shredded parmesan cheese
1 tsp olive oil for brushing

Steps:

  • Preheat oven to 400F.
  • Grease a pizza stone or large cookie sheet lightly with oil. Lay the whole-wheat pizza crust on it. Brush it with olive oil generously (or the crust will become soggy from the sauce).
  • Spread the pizza sauce on the prepped crust and sprinkle the cheese.
  • Arrange the grilled chicken slices and throw in the spinach+arugula.
  • Bake for 5 to 6 minutes (or according to package instructions) till the cheese melts.
  • Sprinkle the parmesan cheese on top, slice and serve.

Steps:

  • Basic Pizza Dough In a bowl or mix master add the flour, oil, salt, dissolve the yeast in the water and then add to the bowl. Once everything is combined, form the dough into a ball and put it in a bowl, cover with a towel and let rise for about an hour or two. Chicken and Arugula Topping Step 1: Season the chicken breasts with a little oil, salt, and pepper. Grill the chicken for about 5 minutes on each side. Remove from the grill and let it rest, once it is cool shred the chicken and set aside. Step 2: Wash and dry a bunch of arugula. In a bowl add your favorite bbq sauce, a little tomato sauce, oregano, and salt and pepper. Step 3: Roll out the dough into personal pies, or one large round pie -which ever you prefer. Dust both sides with a little flour, and then transfer to a tray. Take a paper towel and dip it in oil, then oil the bbq grates. Put the pizza dough on the fire; grill each side for about 1-2 minutes. The pizza dough cooks really fast on the grill, if you like your dough soft don't leave it on for too long because it gets crispy very fast. Take the pizza dough off the fire and add the sauce and some shredded chicken on top. Put the pizza back on the grill and turn the heat down to low, close the bbq and let heat for another 2 minutes. Top with arugula! Add a drizzle of truffle oil, or even basil or garlic oil!

1 red onion, sliced
3 cups arugula, washed, dried and coarsely chopped

4 whole-wheat tortillas, 6-inches in diameter
2 ounces reduced-fat goat cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the oil and onions in a medium skillet and cook over very low heat, stirring occasionally, until onions are soft and caramelized, about 15 minutes. Turn the heat up to medium and add the arugula. Cook until the arugula is wilted, about 1 minute. Season with salt and pepper.
  • Place the tortillas on a baking sheet and top each with some of the arugula/onion mixture. Crumble some goat cheese on top of each, and bake for 10 minutes. Allow to cool for a few minutes and cut each pizza into 4 triangles.

1 tablespoon balsamic vinegar
1 tablespoon chopped shallot
1 teaspoon Dijon mustard
½ teaspoon salt, or more to taste
4 peaches, halved and pitted
4 skinless, boneless chicken breast halves
8 cups baby arugula

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk 1/4 cup olive oil, balsamic vinegar, shallot, Dijon mustard, and 1/2 teaspoon salt together in a bowl until dressing is well mixed.
  • Brush 1 teaspoon oil onto cut-side of peaches.
  • Place peaches, cut-side down, onto grill and cook until heated through, about 4 minutes. Transfer peaches to a plate.
  • Brush remaining oil onto both sides of chicken breasts and season with salt.

1/4 cup finely chopped shallots
1/4 cup champagne vinegar or white wine vinegar

1/2 pound sliced fresh mushrooms
4 boneless skinless chicken breast halves (6 ounces each)
6 cups fresh baby arugula or baby spinach

  • In a small bowl, whisk 2/3 cup oil, shallots, vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper until blended. Reserve 3 tablespoons for dressing. 1 prepared pizza crust
2 grilled chicken breasts
1 cup baby arugula
1 sweet onion, sliced
1/3 cup blue cheese
4 tablespoons olive oil
1/4 teaspoon oregano
1/4 teaspoon garlic powder
1/4 cup cornmeal
fresh ground pepper, to taste
2 teaspoons balsamic vinegar
2 teaspoons lemon juice

Steps:

  • Place pizza crust in medium bowl and allow to come to room temperature. Preheat oven to 400 degrees. Drizzle with 1 Tbsp olive oil and turn to coat. Add oregano and garlic powder and continue turning. Coat a cookie sheet in corn meal and press pizza dough into a circle on cookie sheet.
  • Bake pizza crust at 400 degrees until lightly brown. Poke with fork as it bakes if dough bubbles form. In the meantime, sautee onions in 1 Tbsp olive oil until soft and golden.
  • Remove crust from oven and drizzle with 1 Tbsp of olive oil. Cover with sauteed onions. Cover with arugula. Drizzle top with 1 Tbsp olive oil and lemon juice. Slice chicken and place on arugula. If chicken is still warm from the grill, it is even better as it slightly wilts the arugula. Crumble bleu cheese over top. Then add freshly ground pepper. Right before serving, drizzle with balsamic vinegar.
  • As an alternative, drizzle with low fat caesar dressing instead of balsamic vinegar.
  • Slice and enjoy!

1 cup packed fresh arugula leaves
1/2 cup packed fresh basil leaves
1/2 lemon, juiced
1 clove garlic, grated or minced

1/3 cup extra-virgin olive oil
4 small pieces boneless, skinless chicken breast (tenders removed)

Steps:

  • Heat a grill pan to high.
  • Toast the nuts lightly in small skillet over low heat, then add them to a food processor.
  • Add the arugula, basil, lemon juice, garlic, and salt and pepper, to taste, and pulse to combine.
  • With the processor on, stream in the extra-virgin olive oil to form thick pesto.
  • Lightly pound out the chicken, then rub all sides with the pesto. Spray the grill pan with cooking spray or rub with a little oil and grill the chicken 2 to 4 minutes on each side.
