NO GUILT 'SECOND HELPING' SLAW
RECIPES When I make my crock-pot CHORK, I always make a batch of my delicious (and figure friendly) creamy slaw to go with it. I use it as a side salad or we put it on top of the sliders to add a tang and crunch to an already yummy little sandwich. I just mix it up as soon as I have my CHORK recipe cooking in the crock-pot and both are done at the same time!

Steps:
- in a large mixing bowl, add slaw mix, pepper, onion powder, celery seeds, red wine vinegar, white balsamic vinegar and the Marzetti's dressing.
- mix the slaw very well. It will seem like you do not have enough dressing, but you do (once it sets for several hours and you mix it up, it is plenty).
- refrigerate for at least 4 hours (all day or overnight is great).
- mix & serve.

SPINACH MUSHROOM AND ARTICHOKE SOUP- FAST AND FIGURE FRIENDLY
This is something I whipped up last night in my attempt to eat healthier! This makes a soup that very thick with vegetables and leaves you feeling full and satisfied. If you want a soup that is thinner just add more broth. This would be a great soup for a brunch or dinner party as it can be completed and left to simmer until you are ready to serve.

Steps:
- Halve or quarter mushrooms as desired and saute in a dutch oven sprayed with nonstick spray. When mushrooms are about half done add onion. Stir often.
- When mushrooms and onion are getting soft add garlic and saute for 1 minute. Chop artichoke hearts and spinach (if not already chopped) and add to pot. Stir to combine and cook just until heated through.
- Add chicken broth, wild rice and parsley and bring to a boil. Reduce heat to a simmer and cook until everything is hot. Can keep on a low simmer for quite a while before serving. Would be good in a crock pot too! Top each bowl with a sprinkle of parmesan cheese.

Steps:
- Place roast in crock pot (score beef).
- In bowl mix remaining ingredients and add to crock pot.
- Cook for 8-10 hours.
- To thicken: add crock pot broth to pot. In a cup, add cornstarch (about 1 tsp) to broth and mix thoroughly and add to saucepan. Variation: Add potatoes, carrots or celery to crock pot.

COD WITH MEDITERRANEAN SALSA
This is a delicious and figure-friendly entree. It is quick and easy enough for weeknight meals, but it is also perfect for guests, as the presentation is lovely. I usually serve this over couscous with a green vegetable and/or salad. Enjoy!

- Mix all salsa ingredients together and adjust salt and pepper to taste.
- Pat fish dry and season with salt and lemon pepper.
- Spray a non-stick skillet with cooking spray and heat over medium high heat.
- Add olive oil to pan and heat until hot.
- Cook fillets 4 minutes on each side or until done. Do not overcook.
- Serve with salsa spooned over top.

- Wash and hull the strawberries. Pick out the over ripe or very ripe ones.
- Cut strawberries in half and sprinkle the Splenda.
- To make the sauce, roughly chop the remaining strawberries in a blender and blend for about 15 seconds, tossing in the Contreau and 1/2 tbpn of the Splenda. Chill and serve with the choice of light cream or ice cream.
