Steps:

  • Break eggs in a bowl.
  • Add flour, milk and salt.
  • Mix to a ball stage.
  • Roll dough out on a floured table or board.
  • Cut noodles with pizza cutter.
  • Cook in broth 20 minutes.

This is the best lasagna ever!! The noodles are so nice and thin and there is NO PREBOILING!! I will never purchase any other lasagna other than Barilla. I've been making this now for 3 years and everyone agrees--the recipe makes the very best! The instructions are right on the back of the lasagna box. I usually make multiple batches and freeze them. Its a great housewarming or "new baby" meal for a friend!

1 (9 ounce) box barilla no-boil lasagna noodles
2 eggs
1 (15 ounce) container ricotta cheese
4 cups shredded mozzarella cheese
1/2 cup parmesan cheese (optional)
1 lb ground beef or 1 lb sausage, browned
2 (24 ounce) jars spaghetti sauce or 2 (24 ounce) jars pasta sauce
parsley (to garnish)

Steps:

  • Preheat oven to 375.
  • In bowl, combine beaten eggs, ricotta cheese and TWO cups of the mozzarella cheese and parmesan.
  • If you choose not to use the parmesan, just add more mozzarella.
  • Set aside.
  • In a 13X9X3 pan, spread 1 cup of sauce on bottom of pan.
  • Layer in the order, 4 uncooked lasagna noodles (they will overlap), then 1/3 part of the ricotta cheese mixture, half the browned meat, 1 cup mozzarella cheese, and 1 cup of spaghetti sauce.
  • Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1 1/2 Cups sauce.
  • Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture and remained meat, 1 cup of sauce.
  • For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
  • Bake covered with foil for 50-60 minutes.
  • Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
  • Let stand 15 minutes before serving.
  • If you are using a 13X9X2 pan---just make 3 layers to avoid boiling over.

1 lb part-skim ricotta cheese
8 ounces shredded mozzarella cheese, divided
3 tablespoons shredded parmesan cheese
1 teaspoon sugar
1 egg, slightly beaten
2 -3 dashes nutmeg
1 tablespoon dried parsley
3 dashes ground black pepper
14 manicotti, uncooked
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
3/4 cup water
1 tablespoon onion flakes
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon dried oregano
1 teaspoon sugar
3 dashes salt
3 dashes ground black pepper

Steps:

  • Preheat oven to 400°F.
  • Combine Ricotta, 4 oz Mozzarella, Parmesan, 1 tsp sugar, egg, nutmeg, parsley, salt and pepper.
  • Stuff uncooked manicotti generously with cheese mixture, from both ends. (Tip: I put mixture in a plastic bag and cut off a small corner to squeeze the mixture in the shells easily).
  • Arrange manicotti in a single layer in a slightly greased 13 x 9 inch baking dish.
  • Combine diced tomatoes, tomato paste, water, onion flakes, basil, rosemary, oregano, sugar, salt and pepper in a small or medium sauce pan and bring to just a boil.
  • Pour sauce over manicotti covering completely.
  • Cover baking dish with aluminum foil, crimping edges to seal tightly.
  • Bake for 40 minutes at 400°F.
  • Remove foil, sprinkle generously with remaining mozzarella.
  • Bake uncovered for 5 minutes or until cheese is melted.

1 egg-----save 1/2 of shell
1/2 egg shell of milk
2 can(s) chicken broth
dash parsley leaves...

Steps:

  • 1. Bring broth to a boil, turn to simmer. Put flour into a small bowl Add 1 egg and 1/2 egg shell of milk. Mix with a fork. add a little more milk if to dry.
  • 2. Pat out onto a flowered cutting board. Roll out wide and long... VERY, VERY thin.
  • 3. Cut into thin strips with a pizza cutter, then cut noodles in half. Can be cut into smaller pieces ..if you so desire. Move cutting board to stove, Turn heat on broth to a medium boil,
  • 4. Start putting noodles one by one into broth... stirring slowly so they do not stick together... Turn heat low to simmer..and cook for 25 -30 minutes. Stir occasionally so they do not stick. Taste to be sure they are not doughy. Cooking time will vary according to how thick you have cut the noodles!
  • 5. Ladle into a serving bowl, and enjoy. This makes a good side dish QUOTE: "When in doubt, take a covered dish. "
  • 6. ADD ON help: Pat out you're dough in the form of a hot dog bun.., longer than wider shape. Be sure to roll them as thin as you can, almost like paper!! flour your board and rolling pin well.. I move my board close to your broth, so when you pick them up(I use a spatula,) they will be close to your broth. Add them one at a time and stir, add another, stir, ...this is so they do not stick together! Always do a taste test during the cooking.. you do not want them to taste doughy! 1 1/2 cups raisins (or use any dried fruit of choice)
5 large eggs
1 cup sour cream
1/3 cup melted butter
2/3 cup sugar (if your prefer a sweeter kugel then increase amount to taste)
1 -2 teaspoon cinnamon
1/8 teaspoon salt
1 quart full-fat milk (4 cups)

Steps:

  • Butter a 13 x 9-inch baking pan.
  • Spread the UNCOOKED egg noodles and raisins or dried fruit into the pan.
  • In a bowl in whisk the eggs with sour cream until very smooth, then whisk in melted butter, sugar, cinnamon and salt; whisk vigorously until well combined and no sugar granules remain (mix in order stated starting with eggs and sour cream).
  • Whisk in the milk until combined (at this point you may add in more sugar if desired).
  • Pour the mixture over the dry noodles and mix very lightly (your pan will be very full).
  • Allow to sit out for 5-7 minutes.
  • Set oven to 350 degrees F.
  • Bake for about 50-60 minutes or until the kugel is just set in the middle.
  • Serve warm, cold or at room temperature.

When it was discontinued I discovered that the same recipe could be used with any jarred pasta sauce. My oldest son, who is away at college, asked me for some easy recipes that he can make with minimal mess and time and this recipe popped into my head... I thought I'd post it since I couldn't find any others like it on Zaar.

1 (16 ounce) box pasta (Rigatoni, Penne, Rotini or Ziti)
1 (24 ounce) jar tomato sauce
1 full jar water (24 ounces)
2 cups mozzarella cheese, shredded

Steps:

  • PREHEAT oven to 425 degrees.
  • COMBINE uncooked pasta, 1 jar of Sauce and 1 jar of water in a 13 x 9 inch baking pan. Cover with aluminum foil.
  • BAKE 30 minutes. Uncover and stir well.
  • TOP with cheese. Bake uncovered for an additional 10 minutes or until cheese melts and pasta is tender.
  • Optional: You can add garlic powder and/or italian seasoning along with the pasta/sauce/water mixture and sprinkle grated parmesan on top of the mozzarella for great flavor and easier browning.
  • Optional: You can add small frozen meatballs or browned ground beef (if you don't mind dirtying a pan) along with the pasta/sauce/water mixture for some added protein.
