2 tablespoons unsalted butter, softened
4 tablespoons freshly grated Parmesan cheese
1 (10-ounce) box frozen spinach, thawed
2 large eggs
2 egg yolks
2 cups half-and-half
4 ounces grated smoked Gouda cheese, about 1 cup
2 tablespoons all-purpose flour
Generous pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
3/4 cup chopped trimmed scallions, white and green, about 8
1 teaspoon paprika

Steps:

  • Preheat oven to 400 degrees F. Brush a 9-inch glass or ceramic pie pan with the soft butter and sprinkle half the Parmesan on top. Place the pan on a baking sheet.
  • Squeeze the spinach in batches, very firmly by hand, to remove excess water. Put spinach in a food processor, along with the eggs, egg yolks, half-and-half, Gouda, flour, nutmeg, and salt and pepper to taste. Pulsing until mixture is an even green color with bits of spinach, about 30 seconds. Add the scallions and pulse briefly to mix. Pour mixture into the prepared pan. Sprinkle the top with the remaining 2 tablespoons Parmesan and paprika.
  • Place on the lower rack of the oven bake until quiche is just set in the center, about 40 to 45 minutes. Cool completely on a rack before serving.

  • Fry bacon until almost burnt. Crush into little pieces.
  • Lightly grease pie plate with butter.

2 bunches fresh spinach (washed and trimmed from stems. )
3 oz feta
3 cloves garlic, minced
1/2 - 1 tablespoon of olive oil
1/2 small white onion, diced
5 eggs
2/3 cups 2% milk
2 tablespoons Parmesan cheese, shredded
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
butter for greasing or non stick spray

Steps:

  • Pre-heat oven to 350°.
  • Grease a pie dish with butter. Add shredded parmesan cheese to bottom of dish and spread in a very thin layer.
  • In a large saute pan, heat olive oil on medium. Add garlic and onion until translucent. Add spinach and saute, mixing often until spinach is bright and wilted. Remove from pan and put in a bowl.
  • In a separate large bowl, add 5 eggs, 2/3 cup of milk, salt, and pepper. Whisk well.
  • Add crumbed feta to bowl with spinach. Add spinach mixture to large bowl with eggs. Mix well.
  • Pour egg and spinach mixture into pie dish so that it fills dish but doesn't overflow.
  • Bake for 50 minutes until egg has set.
  • Serve and enjoy!

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9-inch deep dish pie pan (9x2-inch or equivalent) with non-stick cooking spray.

  • Pour custard over spinach mixture + Top with more cheese: Pour the egg custard over the spinach and bacon mixture in the prepared pan. Use a spatula or spoon to gently press the filling down into the eggs. Sprinkle the remaining ¼ cup of each cheese evenly over the quiche.

20g butter , plus extra for the tin
1 onion , finely chopped
100g chopped pancetta or smoked bacon
200g asparagus or broccoli, trimmed
8 large eggs
150ml double cream
80g gruyère or parmesan cheese

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line a 23cm round deep, springform cake tin so the paper comes 2-3cm up the sides of the tin.
  • Melt the butter in a frying pan. Add the onion and pancetta and cook over a low heat for 10 mins or until softened and translucent.
  • Bring a pan of lightly salted water to the boil. If using broccoli, cut into small florets, if using asparagus, keep whole. Blanch the veg for 2 mins, drain and leave to steam-dry.
  • Whisk the eggs, cream and two thirds of the cheese together in a bowl. Season with salt and black pepper. Mix through the onion and bacon mixture. Pour into the tin and top with the veg and remaining cheese. Bake for 25-30 mins or until golden brown with a slight wobble in the centre.

1 large onion, sliced
2 cloves garlic, minced
200 grams spinach
3 eggs
300 millilitres single cream
1 teaspoon lemon zest
Pinch of nutmeg
Pinch salt
Pinch pepper
150 grams feta cheese, crumbled
25 grams pine nuts

Steps:

  • In a frying pan heat 1 tablespoon of oil or butter on a medium-low heat. Add the onion and gently fry for 10 minutes until soft and beginning to caramelise. Add the garlic and cook for a further minute. Then remove from the heat and leave to cool.
  • In a second pan heat the remaining oil or butter to a medium heat, then sauté the spinach for 2 minutes until wilted. Remove from the heat and leave to cool. Once cooled use your hands to squeeze out any excess liquid.
  • In a bowl whisk together the eggs, cream, nutmeg, salt and pepper until completely combined.
  • Grease your pie dish with oil or butter. Then layer the onions, spinach and feta into the dish, leaving a third of the feta to sprinkle on top.
  • Pour the egg mixture over the spinach and onions. Then sprinkle the remaining crumbled feta on top followed by the pine nuts.
  • Bake in the oven for 30-40 minutes until the egg has completely set. If it appears to be burning, cover it with tin foil. The quiche is done when it is no longer wobbly in the centre. Leave to cool slightly then you can either serve straight from the dish or transfer to a plate. Eat hot or cold.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

6 medium eggs
1/2 cup cottage cheese
1/2 cup mozzarella cheese (grated)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups chopped spinach
1 zucchini (grated)
1 small yellow onion
1 teaspoon olive oil
1/4 teaspoon nutmeg

Steps:

  • Preheat your oven to 350º F.
  • Dice your onions.
  • Heat a nonstick skillet on medium high heat. Add the olive oil. Sautee the onions for 5 minutes. Next add the zucchini and sautee for 2 more minutes or until there is no water in the skillet. Lastly add the spinach and sautee for 3 minutes. Add the nutmeg and stir. Remove from the heat and let it cool for a few minutes.
  • In a large mixing bowl, beat the eggs with salt, black pepper, the cottage cheese and the vegetable mixture.
  • Line a 9″ inch baking tin with some parchment paper and add the mixture to it. Sprinkle the grated mozzarella on top.
  • Bake for 35 to 40 minutes or until puffed up and golden brown on top.
  • Let it cool for 5 minutes before cutting. Serve and enjoy!

Made with heavy cream and Gruyère, this rich spinach quiche is classic French.

1 9-inch deep dish frozen pie crust
1 tablespoon butter
½ cup thinly sliced shallots
4 large eggs
1¼ cups heavy cream
Pinch ground nutmeg
¾ teaspoon salt
⅛ teaspoon cayenne pepper
1 cup (4 oz) finely shredded Gruyère, packed
1 10-ounce package frozen chopped spinach, defrosted and wrung free of water

Steps:

  • Preheat the oven to 400°F and set a rack in the middle position. Remove the pie crust from freezer and thaw until just soft enough to easily prick with a fork, about 10 minutes. Prick the bottom and sides all over with a fork (pricking about an inch apart). Bake until fully cooked and lightly golden, 10 to 15 minutes. (Keep an eye on it...if it puffs up while cooking, gently prick it with a fork so it will deflate.) Don't worry if the crust cracks while baking; see my note below on how to fix it before proceeding. Set aside and turn oven down to 325°F.
  • Heat the butter in a small skillet over medium-low heat. Cook the shallots until soft and translucent, about 8 minutes. Do not brown. Set aside to cool.
  • In a medium bowl, whisk together eggs, heavy cream, nutmeg, salt and cayenne pepper.
  • Place the cooked pie crust on a baking sheet (this makes it easy to move in and out of oven). Spread the shallots over the bottom of the cooked crust, then sprinkle the shredded Gruyere over top. Scatter the spinach evenly over cheese, breaking up the clumps as best you can. Pour the egg and cream mixture over top.
  • Bake at 325°F degrees for 50 to 55 minutes until the custard is set and top is lightly golden. Serve hot or warm.
  • Note: I usually defrost the frozen spinach quickly by placing it in a fine mesh strainer and running hot water over it. I then gather the spinach into a ball and squeeze it dry. It takes a few minutes of squeezing and re-squeezing to get all the water out. Be patient...you need the spinach completely dry, otherwise your quiche will be watery.
  • Note: Don't panic if your crust cracks -- you can easily fix it. Make a smooth paste by mixing 1 tablespoon of flour with 1 tablespoon of water. Use your fingers to patch up and fill any cracks, then place the crust back in the oven for a minute or so to set. It should be good as new.
  • Make ahead: This quiche can be made up to a day ahead of time and refrigerated. To reheat: Cover the quiche with aluminum foil and bake in a preheated 300°F oven for 35 to 45 minutes, or until hot in the center.
  • Freezer-Friendly Instructions: The cooked quiche can be frozen for up to 3 months. Remove the quiche from the freezer about 24 hours prior to eating and reheat it, covered with foil, in a 300°F oven until hot in the center.

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Coat a deep 9-inch pie dish with nonstick spray.
  • Prepare any mix-ins (see recipe notes for a broccoli bacon version and the blog post above for more suggestions).
  • In a large mixing bowl, whisk together the eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
  • Scatter the mix-ins evenly across the bottom of the prepared pie dish.
  • Sprinkle the cheese on top.
  • Carefully pour the egg mixture into the dish. Place the dish on a rimmed baking sheet. Sprinkle the chives over the top.

1 small onion ((about 1/2 cup) finely diced)
2 cloves garlic (minced)
4 large eggs
1 ¼ cups Heavy Cream
¼ teaspoon dried oregano

1 cup feta cheese ((about 4 ounces) crumbled)
1 10-ounce pkg frozen spinach (defrosted, water squeezed out)

Steps:

  • Preheat oven to 325º Fahrenheit. Butter or grease a 9 inch pie dish.
  • Heat a medium skillet over medium low heat. Add butter. When butter melts, stir in the onions. Cook onions until soft and translucent and just beginning to brown on the edges. Stir in garlic. Cook gently,while stirring until garlic is fragrant--about one minute. Remove pan from the heat and set aside.
  • In a medium mixing bowl, whisk together the eggs, heavy cream, oregano, sea salt, and red pepper flakes. Set aside.
  • Tranfer the onion and garlic mixture to the pie dish. Spread evenly.
  • Sprinkle the feta cheese over the onion and garlic mixture.
  • Evenly distribute the spinach over the feta cheese, breaking up any clumps.
  • Give the egg mixture one more stir, then pour it over the ingredients in the pie dish.
  • Bake in the preheated oven for 50-55 minutes, or until the the quiche is set and starting to brown on top.

6 to 8 scallions, chopped

2 heads endive, sliced lengthwise

Steps:

  • Position a rack in the upper third of the oven, place a baking sheet on the rack and preheat to 450 degrees F. Lightly grease a 9-inch round or 8-inch square baking dish with olive oil.
  • Pulse the gouda in a food processor until finely chopped. Add the spinach, whole eggs and egg whites, ricotta, flour and nutmeg and process until well combined, about 30 seconds. Add the scallions and pulse to mix.
  • Pour the mixture into the prepared dish and sprinkle with the parmesan and paprika. Place the quiche on the preheated baking sheet and bake until the center is just set, 25 to 30 minutes.
  • Drizzle the endive and walnuts lightly with olive oil and toss. Serve the quiche hot or at room temperature with the endive.
