Easy No-Bake Strawberry Ice Cream Cake image

It's hard to find a summer dessert easier and more refreshing than this combination of strawberry ice cream and a purchased 10-inch angel food cake! Layers of cake and ice cream, frosted with a purchased frozen whipped topping, are stored in the freezer until you are ready to garnish and slice. This should keep, covered, in the freezer for a week or two. I've never been able to find out exactly how long it will store, because it's usually gone in a few days!

1 (10 inch) prepared angel food cake
2 pints strawberry ice cream
1 (8 ounce) container thawed frozen whipped topping
6 large fresh strawberries, sliced
1 sprig fresh mint, leaves picked

Steps:

  • Using a long serrated knife or bread knife, slice angel food cake into 3 equal horizontal layers. Place the bottom layer onto a freezer-proof plate.
  • Remove packaging from the ice cream and slice about 1-inch thick. Working quickly, place ice cream slices on the bottom cake layer, filling the gaps with ice cream and leaving the center unfilled. Lightly press the ice cream pieces together to form a solid layer the same size as the cake layer. Repeat with the second cake layer and remaining ice cream. Top with the final layer of cake and freeze until the ice cream is firm again, about 1 hour.
  • Frost the entire cake with whipped topping. Garnish with fresh strawberry slices and mint. Serve immediately.

1 1/2 cups graham cracker (crumbs)
1/3 cup granulated sugar
2 teaspoons ground cinnamon
1/3 cup butter (melted)
1 package strawberry jello (3 oz.)
2/3 cup boiling water
1/2 cup cold water
1/2 cup ice cubes
1 container Cool Whip topping (8.oz)
4 cups fresh strawberries (sliced)

Steps:

  • Using a food processor, pulse graham crackers until crumbly. Mix in sugar, ground cinnamon and melted butter until crust forms.
  • Press graham cracker crust into a 9-inch pie dish. Place pie crust in refrigerator.
  • In a large bowl, add boiling water and gelatin powder. Stir gelatin powder until completely dissolved.Then, add 1/2 cup cold water and 1/2 cup ice cubes, stir until gelatin is slightly thickened. TIP: Let the gelatin mixture sit for a few minutes to thicken slightly before you add the cool whip otherwise it won't set up.
  • Add cool whip topping to gelatin mixture and whisk together until light and fluffy. Stir in sliced strawberries. Refrigerate for 30 minutes or until mixture has thickened.
  • Add strawberry pie filling to pie crust. Refrigerate for up to 6 hours or until firm. Top with cool whip and a slice strawberry.

Steps:

  • Mix crumbs and butter; press onto bottom and halfway up side of 9-inch springform pan sprayed with cooking spray. Refrigerate until ready to use.
  • Reserve 6 berries for garnish; mash remaining berries. Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add ice; stir until melted. Add COOL WHIP and mashed berries; stir with whisk until well blended. Refrigerate 10 min. or until mixture is very thick and will mound. Spoon into crust.
  • Refrigerate 3 hours or until firm. Remove side of pan. Cut reserved berries in half. Arrange berries, cut-sides down, around edge of dessert. Melt chocolate square as directed on package; drizzle over berries.

1 teaspoon pure vanilla extract
1 cup fully whipped cream or whipped topping

Steps:

  • Line an 8 inch square baking pan with parchment paper leaving some outside of the pan.
  • Next in a medium sized bowl, whisk cookie crumbs, granulated sugar and melted butter together until combined.
  • Press cookie mixture into the bottom of the pan. Refrigerate for 45-60 minutes.
  • While cookie crust chills, add cream cheese, sugar, strawberries and vanilla a bowl with a hand mixer (or you can use a Vitamix or other heavy duty blender).
  • Mix until smooth.
  • Add half of whipped cream to cheesecake filling and gently fold in using a spatula. Repeat with remaining whipped cream.
  • Remove baking pan with crust from refrigerator and pour filling into baking pan and smooth with a spatula.

8 oz brick cream cheese (softened)

1 cup ice cubes
1 cup fresh strawberries (chopped small)

Steps:

  • Place the cookies in a food processor and pulse until the cookies become fine crumbs.
  • Add cookie crumbs to a large bowl along with melted butter.
  • Mix until crumbs are moistened with butter.

  • Chill for 30 minutes.

  • Cut angel food cake into bite-sized (1-inch) pieces. Place half of the angel food cake pieces into the bottom of the 9x13-inch baking dish.
  • In a large bowl, whisk together strawberry Jell-O with boiling water. Stir until no longer grainy. Stir in strawberries until combined.

2 tablespoons cornstarch

3 ounce strawberry jello gelatin (WITH 1 TABLESPOON REMOVED)

  • In a medium bowl mix together graham cracker crumbs, brown sugar, and melted butter. Dump into a 9" pie pan. Spread in an even layer, then use fingers, or flat-bottomed glass, to press crumbs firmly on bottom and up sides of pan. Chill for 20 minutes.
  • ALTERNATIVE GLUTEN FREE CRUST: Preheat oven to 375ºF. Stir together crushed cereal, sugar, and butter in a bowl. TIP: For best results use a food processor to mix everything and so crumbs are very finely ground, almost like flour. Dump into a 9" pie pan. 1 1/2 cups hazelnuts or almonds
2 tbsp cacao or cocoa powder
4 tbsp maple syrup or liquid honey
1 tsp pure vanilla extract
1/4 tsp salt
1 lb (3 cups) fresh or frozen (thawed) strawberries (hulled & sliced)
1/2 cup cold water
2 tbsp 14 grams unflavored gelatin
2 x 8 oz blocks cream cheese (room temperature and cut into pieces)
2 cups plain Greek yogurt (2%+ fat)
3/4 cup maple syrup or liquid honey
1 tsp pure vanilla extract
1 lb of fresh strawberries (hulled and sliced (for topping))

Steps:

  • To roast nuts, preheat skillet on medium heat and add nuts. Cook for 4-5 minutes, stirring occasionally, until browned and fragrant. Watch them not to burn. In a food processor, add roasted nuts and process until coarse. You can laso chop them by hand or with a hand chopper.
  • Add cacao powder, maple syrup, vanilla, salt and process or stir in a bowl until well mixed. It will smell like Nutella.
  • Line 9 inch springform pan with parchment paper. You can do so by cutting out a circle a size of the pan. Or place parchment on the bottom pan, close springform on top and then cut out parchment on the outside. Add processed crust and flatten it using a spatula or your hands. Set aside.
  • In a small saucepan, add 1/2 cup cold water and sprinkle gelatin on top. Set aside and let it bloom while you are making the filling.
  • In a food processor, add strawberries and process until very smooth and well blended puree forms.
  • Place fine mesh strainer over a bowl, pour as much strawberry puree as fits in it and using a spoon push to strain through. You should end up with about 1 cup liquid.
  • In a large bowl, add cream cheese and yogurt. Beat on high speed until smooth and no lumps, about 5 minutes.
  • Add strawberry puree, maple syrup, vanilla and process until well combined, pausing and scraping the walls if necessary.
  • Place pot with bloomed gelatin (it will look thick) on low heat. Warm up stirring constantly until gelatin liquid is clear and gelatin has completely dissolved. Remove gelatin from heat and let it cool for a few minutes.
  • Add 1 cup cheesecake filling to it, stir and pour back into a bowl with filling. Beat with a mixer until well combined.
  • Pour filling into prepared pan on top of crust. Refrigerate for at least 7 hours on the bottom shelf or overnight.
  • To serve, run knife around the edge of cheesecake inside the springform pan before releasing it. This step ensures cake won't crack.
  • Then carefully release and remove springform, cut into 12 slices and serve. I would add chopped strawberries to individual plates. I added on top for pics but it is hard to cut cake with them.

1 pound fresh strawberries (washed and hulled)
⅓ cup granulated sugar
2 ½ Tbsp cornstarch
3.5 ounces white chocolate (chopped)
½ cup heavy cream
2 Tbsp powdered sugar
3 packages full-fat cream cheese (room temperature)

Steps:

  • Line the bottom of a 9-inch springform pan with parchment paper.
  • Combine graham cracker crumbs and melted butter. Press the mixture into the bottom and 1 inch up the sides of the springform pan. Chill the crust for 30 minutes.
  • Blend the strawberries in a food processor or blender until smooth.
  • In a small saucepan whisk together strawberry puree and sugar. Bring to a boil and cook over medium heat for about 10 minutes until the mixture is thick and reduced.
  • Combine cornstarch and 2 Tbsp of water to make a slurry, take strawberry puree off the heat and whisk in the slurry. Bring mixture to a boil and let cook for 1-2 minutes until thickened. Let cool to room temperature.
  • Melt the white chocolate in the microwave or use a double broiler. Set aside and let cool slightly.
  • In the bowl of a stand mixer fitted with the whisk attachment, whisk together heavy cream and powdered sugar until stiff peaks form. Take out and set aside.
  • In the bowl of the stand mixer fitted with the paddle attachment, whisk cream cheese until smooth then add strawberry puree and melted white chocolate. Mix at medium speed until smooth and thick. Fold in the whipped cream with a spatula.
  • Spread the mixture on top of the graham cracker crust and smooth the top. Place in the fridge and chill overnight.
  • Just before serving, decorate with whipped cream and strawberries.

1 6-ounce box strawberry Jell-o mix
2 cups water, boiled
1 container Cool Whip
1 16-ounce container frozen strawberries in sugar (or 21 oz strawberry pie filling)

Steps:

  • First, let the strawberries and Cool Whip rest on the counter. The strawberries will mix with the Jell-o better if they're not rock hard, and the Cool Whip will incorporate better if it's a little soft.
  • Slice the angel food cake into 1/2 to 1-inch pieces using a serrated knife, and spread half of the angel food cake pieces on the bottom of the 9×13 inch dish. (Or a fun glass dish like a trifle bowl.)
  • Bring two cups of water to a boil. In a large mixing bowl, combine the water and Jell-o powder. Stir until fully combined.
  • Then, add the frozen strawberries and stir, breaking up the chunks until they have melted. Fold the Cool Whip a few dollops at a time into the strawberry mixture, stirring gently to combine without deflating the dessert. Again, you can leave it a little less than uniformly combined, but you want it well-mixed.
  • Spread half the mixture over the cake. Add the remaining cake, then cover with the remaining mix. Spread to ensure the cake is fully covered.
  • Alternatively, you can combine all the cake and mix in a large bowl. You may prefer this method if you're serving the dessert in a trifle or glass bowl.
  • Chill in the fridge four hours or overnight. If the cake feels wet or jiggles, it's not set.

14 oz Angel Food Cake ((pre-made or store bought, cut into 1 inch cubes))
1 strawberry coulis ((or strawberry syrup))
8 oz cream cheese ((softened))
1 cup confectioners sugar
1/3 cup milk
1 tsp vanilla extract
8 oz Cool Whip
1/2 lbs strawberries ((washed, hulled, and sliced))

Steps:

  • Cut up the angel food cake into 1 inch squares, arrange them on the bottom of a 9x13 pan. Set the pan aside for later.
  • In a medium bowl add the cream cheese, milk, and the powdered sugar. Whip together using a handheld mixer or whisk.
  • Add in half of the cool whip, vanilla extract, and whisk together.
  • Pour the cream cheese sugar mixture over the cut up angel food cake cubes. Using a spatula smooth out the mixture evenly.
  • Add the rest of the cool whip and spread as evenly as possible.
  • In another small bowl combine the coulis and sliced strawberries and mix together.
  • Pour over the top of the cool whip layer and spread evenly using a spatula.
  • Refrigerate for at least an hour before serving, you can refrigerate up to 3 days!
