NO BAKE PATRIOTIC MARSHMALLOW CHEESECAKES
These No-Bake Patriotic Marshmallow Cheesecakes couldn't be simpler to whip up! Fluffy and airy, they're the perfect treat for hot summer days.

- In a large bowl, beat the cream cheese, sugar, and vanilla with a handheld electric mixer on medium speed for about 2 minutes, or until creamy and fluffy. Beat in the marshmallow crème until combined. Lastly, fold in the Cool Whip until incorporated and mixture is light and fluffy.
- Place the mixture into a piping bag or a large resealable plastic bag and snip off a corner of the bag. Fill the bottoms of miniature 4 oz jars with about a Tablespoon each of the blueberries and strawberries. Pipe the cheesecake on top, filling to the brim of the jar.
- Top the cheesecakes with an arrangement of JET-PUFFED Star Mallows for a patriotic touch. Tie wooden spoons to the front of each jar for an easy, portable dessert. Store cheesecakes in the fridge until ready to serve.

- Spray a 9″ spring form pan with non-stick cooking spray. Mix cookie crumbs and melted butter together with a fork, and press tightly into the bottom of the pan.
- Beat whipping cream until stiff peaks form. Set aside.
- Cream together cream cheese, lemon juice and marshmallow fluff with your mixer.
- Gently fold in whipping cream until it's incorporated.
- Spread over crust. Chill for a minimum of 3 hours.
- Remove from pan. To put sprinkles on the sides, gently touch the back of a spoon to the cheesecake, then dip in sprinkles, repeat around the edges.

EASY NO BAKE CHERRY CHEESECAKE
My mom got this easy and delicious recipe from her sis-in-law....I'm sure glad she shared the recipe! It's not your ordinary cheesecake, this one is light & fluffy. Hope you enjoy it as much as my family does! This recipe makes exactly 2 pies. I usually prepare these at night because they need to be refrigerated overnight.

- In med-large bowl mix together sour cream and cream cheese with mixer (if mixer is unavailable fork is easy but more time consuming) mix until smooth and set aside.
- On stove top melt stick of butter and mix in marshmallows little at a time until smooth.
- Quickly add marshmallow mix into the sour cream/cream cheese mix and quickly mix those together.
- Pour equal amount of "batter" into each of the ready pie crusts. Cover the pies with the plastic that came with the pie crusts, simply turn plastic upside down to cover. Place in fridge overnight.
- Once pie is firm you may top with cherry pie filling (our favorite) or any other fruit you may want to top pie with -- you also may play with pie crust and get Oreo pie crust for chocolate lovers!
MARSHMALLOW CHEESECAKE
I have made this as the recipe states, and also made it using low fat products...this is super easy, and if you like marshmallow, I think you will like this one...serve with chocolate drizzle, or with fresh berries as suggested in the method.

- Grease a 9 inch spring form pan.
- Crust: Melt butter and combine with crushed cookies.
- Press into prepared pan.
- Set aside.
- Filling: Combine milk or cream and marshmallows in a saucepot over low heat, and melt.
- Stirring all the while.
- Remove and cool.
- Beat cream cheese and lemon juice in a large bowl.
- Blend in the cooled marshmallow/ cream mixture until smooth.
- Fold in the whipped whipping cream.
- Spoon into crust.
- Chill 3 hours or until set.
- Melt chocolate if desired and drizzle over the top of cake in a pretty pattern.
- Serve.
- If desired you may fold in along with the whipping cream, some fresh cut strawberries, or fresh raspberries... or fresh diced peaches, or pineapple...the choice is yours.
- Then spoon into the shell and chill until set.
- Serve.
