If you love the ease of no-bake cookies, you will love this variation using coconut for added flavor and texture.

2 cups granulated sugar
1/2 cup unsalted butter
1/2 cup milk
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
2 cups old-fashioned rolled oats (uncooked)
1 cup shredded sweetened coconut

Steps:

  • Gather the ingredients.
  • Line 3 large baking sheets with waxed paper or parchment paper. Set aside.
  • In a large saucepan, combine the sugar, butter, milk, cocoa powder, and salt.
  • Bring to a boil over medium heat, stirring constantly. Continue to boil for 3 minutes.
  • Remove the pan from the heat. Stir in the oats and coconut.
  • Drop by slightly rounded tablespoonfuls on to the prepared baking sheets (about 12 per sheet). Press down lightly to form a cookie shape. The cookies will harden at room temperature after about 30 minutes, or they can be placed in the refrigerator for 10 minutes to firm.

2 cups sugar
1/2 cup milk
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
3 cups old-fashioned rolled oats
1 cup smooth peanut butter
1 tablespoon pure vanilla extract
Large pinch kosher salt

Steps:

  • Line a baking sheet with wax paper or parchment.
  • Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
  • Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

  • Bring first 4 ingredients to a boil.
  • Cook for 1 minute.
  • Remove from heat.
  • Add remaining ingredients.
  • Mix well and drop by teaspoon onto wax paper.
  • Let cool.
  • Note: After I have let them cool, I put them in the fridge.
  • They seem to harden better, plus they taste good that way.

1/4 cup sugar
1/2 tablespoon hershey unsweetened cocoa
1/2 tablespoon dry milk
1/2 tablespoon butter
1 tablespoon water
2 tablespoons peanut butter
1/3 cup quick oats

Steps:

  • Mix sugar, Hershey's cocoa and dry milk thoroughly in a small saucepan. Add water and butter. Then stir constantly over medium/high heat.
  • After butter has completely melted, continue stirring and boil one minute.
  • Remove from heat. Stir in peanut butter and then oats.
  • Drop by the spoonful onto wax paper or dinner plate.
  • Eat warm or save for later.
