SOUR CREAM AND ONION DIP



Sour Cream and Onion Dip image

Take plenty of time to properly caramelize a mixture of onions and shallots and you'll be greatly rewarded with a depth of flavor that you would never get from a powdered packet. Resist the urge to cook them at a higher temperature in order to rush the process - they'll burn before they brown and soften. The addition of Greek yogurt might seem unusual, but it provides a lightness and tang that sour cream can't deliver by itself.

2 tablespoons vegetable oil
1 pound yellow onions (about 3 medium), thinly sliced
2 shallots, thinly sliced
Kosher salt, freshly ground pepper
1 cup sour cream
1 cup full fat Greek yogurt or sour cream
2 tablespoons fresh lemon juice
1 clove garlic, finely grated
Olive oil, for drizzling
1/4 cup finely chopped chives

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add onions and shallots and season with salt and pepper. Cook, stirring occasionally, until onions are softened and starting to turn a nice golden brown, 15 to 20 minutes. Reduce heat to low and continue to cook, stirring often to make sure the onions don't stick along the bottom of the skillet. Cook until onions are a deep golden brown and reduced by about half their original size, another 45 to 55 minutes. Resist the urge to turn up the heat to make them caramelize faster. It will lead to burning.
  • Transfer onions and shallots to a cutting board and finely chop. Place in a large bowl along with sour cream, yogurt, lemon juice and garlic. Season with salt and pepper.
  • Transfer to a serving bowl and drizzle with olive oil, season with pepper and sprinkle with chives.

My mom visited a few years ago during a time when my baby was actually a baby and not a four-year-old like he is now, when I still call him my baby.

1 1/2 c. Plain, Unflavored Yogurt
1 1/4 c. Heavy Cream
1/2 c. (to 3/4 Cup) Brown Sugar
Blueberries (or Other Fruit Of Your Choice)

Steps:

  • First, pour the yogurt into a bowl. Then add the cream. With a whisk carefully stir until combined. It should be nice and thick.Sprinkle the brown sugar evenly over the top of the yogurt mixture. Do not stir the mixture. Cover the bowl with foil or plastic wrap and tightly seal the edges. Place in the refrigerator for at least three or four hours.When you are ready to serve, place a small handful of berries (or other fruit) into a bowl or cup. Now, you can either not stir the mixture and have small visible bits of brown sugar in the finished product or you can whisk the mixture until smooth. This is how I like it. Stirred or not, spoon the yogurt mixture over the berries or fruit. Repeat the layers once, ending with berries on top.Now take this heavenly, creamy substance and indulge. You won't be sorry you did.

  • In the bowl of a heavy-duty mixer fitted with the whisk attachment, combine cream, yogurt, and sugar. Beat on medium-high speed until stiff.

Homemade yogurt is a snap to make. All you really need is good quality milk, a few spoonfuls of your favorite plain yogurt to use as a starter culture, and some time to let it sit. You can substitute low-fat milk here if you'd rather; 2 percent works a lot better than 1 percent. Skim milk will give you a thinner yogurt, though if you add some dry milk powder to the milk as it heats (about 1/2 cup), that will help thicken it. Creamline (non-homogenized milk) will give you a cream top on your yogurt. Homogenized milk is smooth throughout.

2 quarts whole milk, the fresher the better
1/4 cup heavy cream (optional)
3 to 4 tablespoons plain whole milk yogurt with live and active cultures

Steps:

  • Rub an ice cube over the inside bottom of a heavy pot to prevent scorching (or rinse the inside of the pot with cold water). Add milk and cream, if using, and bring to a bare simmer, until bubbles form around the edges, 180 to 200 degrees. Stir the milk occasionally as it heats.
  • Remove pot from heat and let cool until it feels pleasantly warm when you stick your pinkie in the milk for 10 seconds, 110 to 120 degrees. (If you think you'll need to use the pot for something else, transfer the milk to a glass or ceramic bowl, or else you can let it sit in the pot.) If you're in a hurry, you can fill your sink with ice water and let the pot of milk cool in the ice bath, stirring the milk frequently so it cools evenly.
  • Transfer 1/2 cup of warm milk to a small bowl and whisk in yogurt until smooth. Stir yogurt-milk mixture back into remaining pot of warm milk. Cover pot with a large lid. Keep pot warm by wrapping it in a large towel, or setting it on a heating pad, or moving to a warm place, such as your oven with the oven light turned on. Or just set it on top of your refrigerator, which tends to be both warm and out of the way.
  • Let yogurt sit for 6 to 12 hours, until the yogurt is thick and tangy; the longer it sits, the thicker and tangier it will become. (I usually let it sit for the full 12 hours.) Transfer the pot to the refrigerator and chill for at least another 4 hours; it will continue to thicken as it chills.
