SWEET LIME ICED TEA
What's more Southern than sweet iced tea? I've lived in Florida all my life, yet I'm not a huge fan of the overly sweet iced tea that is popular here in the South. My grandma has made this version for as long as I can remember and it is the BEST!! Not too sweet, and not too bitter...and the fresh lime juice --- amazing!!!

LIME ICED TEA
A very refreshing summer drink. This recipe is from Iced Tea by Fred Thompson. It is suggested in the book that some crushed mint leaves and sour mash whisky can be added for a nice cocktail. I made it using splenda which worked out very well. Prep time includes time to bring water to a boil.

Steps:
- In a medium pot, bring water to a boil. Turn off heat, add tea, stir and let steep while cooling down completely or until lukewarm (I place mine in a shady spot on a stone patio outside on hot summer days).
- Transfer tea to a large pitcher by laddling it through a mesh strainer; discard the tea leaves.
- Add maple syrup, squeeze lemon and lime juice, add the peels (skins) to the pitcher, stir with a long wooden spoon and let tea sit for 10 minutes. Discard the citrus skins otherwise iced tea will be bitter tasting.
- Now you can store your iced tea covered with plastic wrap or lid in a fridge for quite a few days. Right before serving, add ice and a can of club soda to a pitcher, stir and enjoy. Garnish with thin lime slices, if desired.

SWEET LIME ICED TEA
During the Summer I make several gallons of this iced tea. I never thought adding lime juice to iced tea, could taste sooo good! It's a nice change from the sweetened lemon iced tea I usually make.

Steps:
- 1. In a (2-quart) heat-proof glass pitcher, add the tea bags to it. (If the tea bags have strings attached, be sure to remove them first.)
- 2. Pour boiling water over tea bags in the pitcher. Cover the pitcher, and allow tea to steep for 45 minutes. (I covered the pitcher with Saran Wrap.)
- 3. After the has steeped for 45 minutes, remove tea bags from the pitcher, and discard them.
- 4. To the pitcher, add the 3/4 cup of sugar, plus the 2-1/2 tablespoons of sugar; stir thoroughly to dissolve the sugar.
- 5. Add the juice of 2 limes to the pitcher, and stir. (For more lime flavor, add the juice from half of a lime as well.)
- 6. Let the tea cool to room temperature, then place tea in the refrigerator to chill.
- 7. Pour chilled tea into glasses filled with ice. Serve tea immediately.
- 8. *Note: For more lime flavor, add the juice of 2 and a 1/2 limes. Also, I usually double this recipe, and make the tea in a gallon size glass jar. Then I'll use 12 cups of boiling water, 14 tea bags, 1-1/2 cups of sugar, plus a 1/3 cup of sugar, and the juice of 4 limes (possibly 4-1/2 limes). This makes: 13-1/2 cups of tea (or) 105-ounces. One more thing I wanted to mention, if using a gallon size glass jar to make the tea, I'll cover the jar with an 8-1/2 inch glass dinner plate, while the tea is steeping.

- COMBINE tea, watermelon juice, lime juice and Basil Simple Syrup in an airtight container and chill for at least one hour, and up to 24 hours, in order for flavors to infuse. POUR tea into ice-filled glasses, garnish with watermelon balls, lime slices and basil sprigs and serve.
- PREPARE basil: Fill a large bowl with ice and water and set aside. Bring some water to a boil in a small sauce pan. Turn off heat and add basil leaves, blanching them for 30 seconds only, then immediately remove leaves with a slotted spoon and submerge them in the bowl of ice water. (This process, called shocking, stops them from cooking and maintains their bright green color.) COMBINE sugar and water in a small saucepan over medium heat and bring to a boil. Cook and stir until sugar dissolves and syrup has thickened. Cool sugar syrup to room temperature. PUREE sugar syrup and basil leaves in a blender, then strain through a fine sieve into a resealable container. Chill before use. Basil syrup can be stored, covered, in refrigerator for up to 3 days.
