Steps:
- Heat oven to 200C/180C fan/gas 6. Tip the breadcrumbs, herbs, zest and Parmesan into a food processor with 1 tbsp of the oil and some seasoning. Blitz until everything is finely chopped.
- Heat the remaining oil in an ovenproof frying pan. Season the lamb, then brown it well on all sides and turn off the heat. Turn the racks so that they are fat-side up, and brush liberally with the mustard (Step 1, above). Pack over the herb crust (Step 2), drizzle with a bit more oil, and roast for 25 mins until the crust is golden and the lamb is cooked - this will produce lamb that is pink in the middle but cooked all the way through. If you like your lamb rarer, roast for only 20 mins; if you like it more done, give it 5 mins more. Put the lamb on a board to rest.
- While the lamb is cooking, blitz the beans with the garlic, anchovies, rosemary, lemon juice, some seasoning and 7 tbsp olive oil (or enough to make it a smooth purée. Tip into a saucepan to gently heat.
- Wilt the spinach in the remaining olive oil in another frying pan. Once the lamb has rested, carefully carve it into chops (Step 3), trying to keep the crust intact. Divide the warm bean purée between 4 plates, add a small mound of spinach, then arrange 3 lamb chops on top of each portion. Sprinkle with stray crumbs and drizzle with a little olive oil.

Steps:
- Preheat oven to 350 degrees F.
- Drain and rinse all liquid off beans. Combine beans in a bowl and set aside. Begin cooking bacon in a saute pan. Begin roasting yams in preheated oven until soft, and remove to let cool enough to handle.
- Heat olive oil in another large saute pan for the lamb. Season the rack of lamb with salt and pepper. Place lamb into hot pan and sear meat all around.
- Remove bacon to drain on paper toweling. In same pan lightly saute onion and garlic in bacon fat until translucent. Add red wine and reduce by half.
- Place the lamb in a roasting pan and roast in the oven until done to your liking, about 15 to 20 minutes for medium rare, an internal temperature of 125 degrees F (this means that because of the 5 to 8 minutes of carryover cooking while it rests, you pull it out at 120 degrees F so it will end up at 125 degrees F for medium rare).
- When yams are cool enough to handle, peel off skin and add butter and cream and mash. Season with salt and pepper, as needed.
- Remove the lamb to a utility platter and let rest before slicing.
- Add demi-glace and tomato paste to the pan with the onion, garlic, and bacon fat, then incorporate all beans with mixture. Lower heat and simmer. Add rosemary and chives. Season with salt and pepper, to taste.
- Place sweet potatoes in the middle of a serving platter. Surround potatoes with bean ragout. Slice rack of lamb in between bones and lay over potatoes. Spoon demi-glace sauce over and serve.
GRILLED NEW ZEALAND LAMB RACK
Steps:
- In a small dry skillet, heat the peppercorns over medium heat until fragrant, 4 to 6 minutes. Transfer to a pan large enough to hold the racks and add the mustard, soy sauce, red wine, thyme, garlic, and oil. Mix, add the racks, and turn to coat them. Marinate in the refrigerator, turning occasionally, at least 8 hours and preferably overnight. Prepare an outdoor grill or preheat the broiler. Season the lamb with the salt and pepper and grill over high heat, or broil, turning once, until brown and crisp, 12 to 15 minutes. Let rest 3 minutes before slicing.

Steps:
- Heat oven to 180C/160C fan/gas 4. Heat a small roasting tin, and coat the lamb with 1 tbsp of the oil and some sea salt. Place the lamb, skin-side down, in the tin until the fat has turned brown, then sear all over. Transfer to a plate.
- Add the onion to the tin and cook for about 10 mins until soft. Stir in the potatoes, thyme, garlic and stock, and press down with a spoon. Put the lamb on top and roast in the oven for 25-30 mins until the potatoes are tender and the lamb cooked to your liking.
- Leave to rest under some foil for about 10 mins. Slice the lamb into cutlets and scatter with the reserved thyme sprigs. Serve with a spoonful of the potatoes and some simply cooked asparagus, if you like.

SWEET POTATO MASH
A delicious, creamy low calorie alternative to the more traditional white potato mash recipes which apparently is popular at many health spas. And you don't have to peel the sweet potatoes! Now that's a plus when time is scarce! Adapted from a recipe from the Spa at Doral, which I found in Prevention Healthy Cooking's 'Eat up; Slim down: tried-and-true recipes from real weight-loss winners' by Jane Kirby and David Joachim.

- Stir in the honey and unsalted butter, milk and salt to taste, and mash the potatoes until there are no lumps and the consistency is creamy.

MASHED YAMS
I was tired of plain old mashed potatoes. Tried this as an alternative. Now, we eat more yams than white potatoes!

- Cook the sweet potato using the microwave (poke a few holes into the potato using a fork or knife, sprinkle some water on top of the sweet potato and then heat in a covered microwave-safe dish for 2 minutes at a time until it is cooked through. Test this by inserting a fork or knife into the sweet potato. It should be cooked through if the knife or fork inserts easily. Be careful when removing the potato from the microwave!). Alternatively you can cook the sweet potato on the stovetop using a steamer or in boiling water.
- Meanwhile, drain and rinse the canned beans (if you don’t have cooked beans available) and dice the onions. Cook your preferred grain or gluten-free alternative on the stovetop.
- Heat up half a tablespoon of oil in a skillet on medium heat. Once the oil is hot, sauté the diced onions in the oil until soft and translucent (at least 3-5 minutes).
- Add in the cooked or canned black beans and the salt, pepper, garlic powder and onion powder. Mix together and let cook for another 5 minutes, stirring occasionally, until the beans are heated through.
