BAVARIAN-STYLE SOFT PRETZELS

Bavarian-Style Soft Pretzels image

These pretzels, called laugenbrezeln, take a bit of planning and time. But they only spend a quarter-hour in the oven, filling the kitchen with a lovely smell, and then you have soft, warm, salty pretzels that you made yourself. What's that worth? A lot.

Provided by Julia Moskin

Categories     project, appetizer, side dish

Time 1h30m

Yield 12 pretzels

Number Of Ingredients 7

1 tablespoon barley malt syrup or dark brown sugar
2 tablespoons lard or softened unsalted butter
2 tablespoons instant yeast
6 cups (about 30 ounces) bread flour
1 tablespoon plus 1/2 teaspoon kosher salt
Food-grade lye, for dipping (see note)
Coarse sea salt or pretzel salt, for sprinkling (do not substitute kosher salt)

Steps:

  • In a mixing bowl (or bowl of a mixer), stir together syrup, lard or butter, yeast, 2 cups warm water and half the flour. Add kosher salt and remaining flour and stir just until mixture comes together in a shaggy mass.
  • Turn out onto counter (or attach dough hook to mixer) and knead for 8 to 10 minutes, until smooth and supple. Cut into 12 pieces and let rest 5 minutes.
  • Roll out each piece into a rope about 22 inches long. (For traditional shape, the ends should be thin and the center fat.) Lift both ends, twist them around each other once, then bring ends back and press them on either side of fat "belly," at about 4 o'clock and 8 o'clock. Then gently spread out "shoulders" of pretzel. Transfer shaped pretzels to an ungreased baking sheet. (Alternatively, form each piece into a round or oval to make laugenbrötchen, rolls.)
  • Let rest at room temperature for 30 minutes, then refrigerate at least one hour or overnight.
  • Heat oven to 425 degrees. In a deep bowl, wearing rubber or latex gloves, make a solution of 1/2 cup lye and 10 cups water (or 1 part lye to 20 parts water); pour lye carefully into water to avoid splashing. Dip each pretzel in solution, turning it over for 10 to 15 seconds, and place back on baking sheet.
  • Sprinkle pretzels with salt. Bake about 15 minutes or until deep brown. Remove to a rack and serve warm.

NEW YORK PRETZELS

Categories     Bread     Bake     Oktoberfest     Gourmet

Yield Makes 8 large pretzels

Number Of Ingredients 7

1 tablespoon sugar
1 (1/4-ounce) package active dry yeast (2 1/2 teaspoons)
3 3/4 to 4 cups all-purpose flour plus more for dusting
1 large egg, lightly beaten
2 teaspoons pretzel salt*
Special Equipment
parchment paper

Steps:

  • Stir together sugar, yeast, and 1 1/2 cups lukewarm water (105 to 110°F) in a glass measuring cup, then let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • Whisk together 3 1/2 cups flour and 1 tablespoon table salt in a large bowl. Add yeast mixture and stir with a wooden spoon until it forms a dough. Dust work surface with 1 tablespoon flour, then turn out dough and knead, gradually dusting with just enough additional flour to make a smooth sticky dough, about 8 minutes. (Dough needs to be somewhat sticky to facilitate rolling and forming into pretzels).
  • Return dough to bowl and cover bowl tightly with plastic wrap, then let dough rise in a draft-free place at warm room temperature until doubled in bulk, about 45 minutes. Turn out dough onto a clean work surface and cut into 8 equal pieces. Using your palms, roll 1 piece back and forth on a clean dry work surface into a rope about 24 inches long. If dough sticks to your hands, lightly dust them with flour. Twist dough into a pretzel shape. (Dough will retract as you form the pretzel.)
  • Transfer pretzel with your hands to an oiled baking sheet and form 7 more pretzels in same manner with remaining dough, spacing them 1 1/2 inches apart.
  • Let pretzels stand, uncovered, about 20 minutes. Meanwhile, put oven rack in upper third of oven and preheat oven to 425°F. Bring a wide 6-quart pot of water to a boil.
  • Using both hands, carefully add 3 pretzels, 1 at a time, to boiling water and cook, turning over once with tongs, until pretzels are puffed and shape is set, about 3 minutes. Transfer parboiled pretzels to a rack to cool. Repeat with remaining 5 pretzels in 2 batches.
  • Line baking sheet with parchment paper and oil paper, then arrange pretzels on sheet. Brush pretzels lightly with some of egg and sprinkle with pretzel salt. Bake until golden brown and lightly crusted, about 35 minutes. Cool 15 minutes, then serve warm.
  • *Available at King Arthur Flour (800-827-6836).

HOMEMADE SOFT PRETZELS

Homemade soft pretzels image

Edd Kimber demonstrates how to make perfect pretzels with a chewy crust and soft, fluffy interior. Mix honey and mustard for a fantastic dip to go with them

Provided by Edd Kimber

Categories     Brunch, Snack, Treat

Time 25m

Number Of Ingredients 9

500g strong white bread flour
7g sachet fast-action dried yeast
25g dark brown muscovado sugar
50g unsalted butter, melted
plain flour, for dusting
oil, for greasing
3 tbsp bicarbonate of soda, baked (see below)
1 large egg, lightly beaten, for glazing
flaked sea salt, to serve

Steps:

  • Put the flour, yeast, sugar and 1 tsp salt in a large bowl and mix together to combine. In a large jug, mix together 300ml lukewarm water and the butter. Make a well in the flour mixture and pour in the water, mixing together to form a rough dough.
  • Tip out onto a floured work surface and knead for 10-15 mins or until smooth and elastic. Put the dough in a lightly oiled bowl, cover with oiled cling film and set aside until doubled in size, about 1hr.
  • Once risen, knock out the air bubbles in the dough and divide into 8 equal pieces. Using your hands, roll each piece into a long rope about 60cm long.
  • To form into pretzels, lay the rope in a U-shape with the curve pointing towards you. Take the two ends and cross them over.
  • Take the ends, lift them backwards and press them into the curve of the U-shape. Repeat with the remaining dough. Heat oven to 200C/180C fan/gas 6.
  • Carefully place the pretzels on a baking tray lined with parchment and lightly greased with oil. Cover lightly with oiled cling film. Set aside for about 20 mins until puffy (not fully risen like bread dough).
  • Fill a medium-sized saucepan with water, bring to the boil, add the baked bicarbonate of soda, then reduce the heat to a low simmer. One at a time, carefully lift the pretzels into the pan and cook for 20 secs per side. The pretzels will rise to the surface; flip with a slotted spoon.
  • Use the spoon to gently lift the pretzels from the pan and return them to the baking tray. Once they have all been cooked in the water, lightly brush with the egg and sprinkle with flaked sea salt.
  • Bake in the oven for 20-25 mins or until a rich, dark brown. Allow to cool on the baking tray for 10 mins, then transfer to a wire rack to cool completely. Best served on the day made but can be frozen for up to 1 month.

NEW YORK-STYLE SOFT PRETZELS

New York-Style Soft Pretzels image

When I was in New York City, I ate soft pretzels and now I can make them at home! Dipped in a little mustard or not, you will enjoy these! Adapted from Martha Stewart via Herbivoracious. Here's what it says: "Have you ever bought something from a pretzel vendor? It's as if a drug deal is going down, but with pretzels. "I'd like (some of your finest crack) a pretzel please." And then, you take a couple bucks out of your pocket, hand it to the pretzel (dealer) vendor, and he hands you a nice warm pretzel. You pick up the yellow bottle placed in front of you, squeeze a generous amount of fluorescent yellow mustard around the entire pretzel, and make your merry way around New York City, while the pretzel kindly (because pretzels can be kind, just like humans and cats) warms your fingers, as your other hand hides in your coat pocket from the gelid winter breeze." Go to Herbivoracious to see great step by step pictures of how to shape the pretzels. Prep time includes rising time.

Time 1h54m

Yield 12 pretzels

Number Of Ingredients 13

1 (1/4 ounce) envelope active dry yeast (2 1/4 tsp.)
1/8 teaspoon fine grain sea salt
2 teaspoons granulated sugar
1 cup warm water (100 to 110 degrees F)
1 cup bread flour
2 cups all-purpose flour (you may sub 1/2 cup ww flour to make more nutritious)
2 tablespoons salted butter, softened
vegetable oil, for bowl and baking sheets
1/4 cup baking soda
1 1/2 tablespoons granulated sugar
1 tablespoon pretzel salt or 1 tablespoon course grain sea salt
1 egg, beaten
1 teaspoon water

Steps:

  • Mix yeast, sea salt, sugar, and warm water in a small bowl, whisking until sugar dissolves. Let stand until foamy, about 5 to 10 minutes (about 8 minutes is right).
  • Place flour into a large bowl. Using two butter knives, a pastry cutter, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
  • Slowly pour yeast mixture over flour mixture, stirring with a wooden spoon or your hands to combine. Using your hands, gather dough together. Turn dough onto a lightly floured surface, and knead until it is no longer sticky, about 5 minutes.
  • Lightly brush a large bowl with oil and turn the dough to coat. Cover with plastic, and let rise in a warm place, until the dough has doubled in size. About 1 hour. (If you want, you can place the bowl of dough in the refrigerator over night).
  • Cut dough into 12 equal pieces, and roll each into an 18-inch rope. Form a U shape with 1 rope, and twist ends together twice. Fold twisted portions backward along center of U shape to form a circle, then gently press ends of rope onto dough to seal. Transfer to an oiled baking sheet, and repeat. Let rise for 20 minutes.
  • Preheat oven to 475ºF.
  • Bring a large pot of water to a boil, and add baking soda and 1 ½ tablespoons granulated sugar. Boil pretzels in batches until puffed and slightly shiny, 1 to 2 minutes per side. Transfer to wire racks to drain.Place pretzels on an oiled baking sheet. Mix the 1 teaspoon water and egg in a small bowl. Brush each pretzel with the egg wash. Sprinkle the with the pretzel salt or course grain sea salt.
  • Bake until golden brown and cooked through, about 15 minutes. Pretzels will keep, uncovered at room temperature for up to 12 hours.
  • Re-warm in a 250 degree oven if desired, or toast the pretzels in a toaster, and serve with mustard. Enjoy!

ALMOST-FAMOUS SOFT PRETZELS

Almost-Famous Soft Pretzels image

Provided by Food Network Kitchen

Time 1h

Yield 6 pretzels and 1/2 cup sauce

Number Of Ingredients 12

1 cup milk
1 package active dry yeast
3 tablespoons packed light brown sugar
2 1/4 cups all-purpose flour, plus more for kneading
10 tablespoons unsalted butter, plus more for greasing
1 teaspoon fine salt
1/3 cup baking soda
2 tablespoons coarse salt
1/4 cup mayonnaise
1/4 cup dijon mustard
3 tablespoons packed light brown sugar
1/2 teaspoon cider vinegar

Steps:

  • Make the pretzels: Warm the milk in a saucepan until it's about 110 degrees; pour into a medium bowl and sprinkle in the yeast. Let the yeast soften, about 2 minutes; stir in the brown sugar and 1 cup flour with a wooden spoon. Dice 2 tablespoons butter and soften; stir into the mix. Add the remaining 1 1/4 cups flour and the fine salt to make a sticky dough. Turn the dough out onto a lightly floured surface and knead, adding more flour if needed, until smooth but still slightly tacky, about 5 minutes. Shape into a ball, place in a lightly greased bowl and cover with plastic wrap. Let rise in a warm spot until doubled in size, about 1 hour.
  • Preheat the oven to 450 degrees and grease a large baking sheet. Punch the dough to deflate it, then turn out onto a lightly floured surface. (If the dough seems tight, cover and let rest until it relaxes.) Divide the dough into 6 pieces. Roll and stretch each piece with the palms of your hands into a 30-inch rope, holding the ends and slapping the middle of the rope on the counter as you stretch. Form each rope into a pretzel shape.
  • Dissolve the baking soda in 3 cups warm water in a shallow baking dish. Gently dip each pretzel in the soda solution, then arrange on the prepared baking sheet and sprinkle with the coarse salt. Bake until golden, 10 to 12 minutes.
  • Prepare the sauce: Combine the mayonnaise, mustard, brown sugar and vinegar in a bowl. Cover and refrigerate.
  • Melt the remaining 8 tablespoons butter in a shallow dish. Dip the hot pretzels in the butter, turning to coat; place on a wire rack to let excess butter drip off. Serve the pretzels warm with the sweet mustard sauce.

  • To prepare the best soft pretzels, you’ll need to begin a day, or at least 8 hours, in advance and let the dough slowly rise in the refrigerator. (While we offer an option for making quick pretzels, we highly recommend the overnight method because the dough’s flavor really develops during the slow fermentation, becoming nuanced with a yeasty tang that’s worth every moment of anticipation.) The day before you want to bake the pretzels, sprinkle the yeast over the warm water in the bowl of a stand mixer or in a large bowl. Add the barley malt syrup or brown sugar and stir until it’s dissolved. Set aside until the yeast is foamy, 5 to 7 minutes.
  • Stir in the flour, beer, butter, and salt and continue stirring until a shaggy mass forms. Attach the bowl and the dough hook to the stand mixer and begin kneading on medium-low speed. After about 1 minute the dough will form a smooth ball that’s quite firm and maybe slightly tacky but not sticky. (If the dough is sticky, add a little more flour, about 1 tablespoon at a time, and knead it in until the dough is smooth. Conversely, if the dough is too dry to come together, add more warm water, 1 teaspoon at a time.)
  • Continue kneading on medium-low speed until the dough is elastic, 5 to 7 minutes. Alternatively, turn the shaggy dough out onto an unfloured work surface and knead it by hand.
  • Lightly butter a bowl that will be large enough to contain the dough after it has doubled in size. Transfer the dough to the bowl. For slow-rise pretzels, cover the bowl tightly with plastic wrap and place the dough in the refrigerator to rise for at least 8 hours and, for optimal flavor, up to 24 hours. For quick pretzels, set the bowl aside at room temperature (in a warmish spot) and let the dough rise until doubled in size, about 1 1/2 hours.

12 TRADITIONAL FOOD IN NEW YORK CITY, USA - TRIP101

From trip101.com
  • New York-style pizza. Almost everyone loves pizza. Pizza has been crafted in unique ways around the world, allowing different locations to lay claim to specific styles.
  • Bagel. Bagels were introduced in the early 1800s, being brought as a traditional food from Poland by Ashkenazi Jews. A kind of food that has influenced the entire American culture, the influence of bagels as a staple food item spread rapidly especially after the 1950s.
  • Pastrami and corned beef sandwich. Both pastrami and corned beef tend to come from the same cut of meat, usually a brisket, though their methods of preparation are quite different.
  • Matzo ball soup. This soup is one of the best foods to try while you’re in New York City. Having an Ashkenazi Jewish origin, the soup’s dumplings are made of matzah meal, eggs, water, and some form of fat.
  • Hot dog. You’d be hard pressed to find a more American entree than the hot dog. The traditional hot dog is comprised of a sausage situated in a length-wise bun, topped with various condiments, including mustard, ketchup, horseradish, and cheese.
  • Manhattan clam chowder. Manhattan clam chowder is a tomato-based soup (as opposed to a cream based Boston clam chowder) that will keep you warm on a cold New England night.
  • Fried chicken and waffles. While fried chicken and waffles may sound like a relatively new concoction of sweet and delicious foods, the paired entrees actually have a much longer history than you might expect.
  • Black and white cookie. A cookie known by many names, including half and half cookies or half moon cookies, these tasty treats are unapologetically delicious and can trace their roots to Bavarian immigrants to New York City itself.
  • New York-style cheesecake. While most cheesecakes rely on cream cheese and eggs as the primary ingredients, the New York style cheesecake uses heavy cream or sour cream, giving it a dense and creamy consistency.
  • Hamburger. While the true origins of the hamburger remain in dispute (many say it comes from Germany), one thing about the hamburger is not disputable: how delicious they are.
